Today's issue is from guest publisher Linda in Michigan:

Hi from Linda in Michigan. McKenzie Memorial Hospital. My second home for the last 16 years. I started working there in the Cardio-Pulmonary department soon after we moved to this area. I loved working in this small, rural, progressive, friendly hospital. I made many good friends there. Living in a very small community, you are very likely to see both co-workers and patients in K-Mart or in one of the few restaurants in town. Your patients are not numbers. They are Sue's mom or uncle or child, or even Sue herself. Everyone gets the personal care that certainly promotes healing. After 4 years, I went to work for one of physicians in his office. I still had loads of contact with my buddies, because we saw patients at the hospital clinic two days a week. In January, 2000, I became very ill, and had to medically retire. I can't even tell you how many times I was a patient at McKenzie. I was always cared for with professionalism and kindness, but no differently than any other patient. I have been a patient in three major teaching hospitals in Michigan, but never did I get any better care than at McKenzie. The recipes that I bring to you today are from my friends and care-givers. Take them with the love that they are written.

I love pasta recipes. My kids enjoy eating and preparing them. Since most folks enjoy pasta, I thought it would be great to share some of those recipes right here as a theme topic. How about it, folks? Is there a recipe using pasta that makes your family swoon when you prepare it? Even simple pasta dishes are great for sharing. The sky's the limit!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

New Hospital Cost-Cutting Measures

To: All university hospital nursing staff
From: Administration/Grounds keeping
Subject: New Cost Cutting Measures
Date: May 21,1997

Effective August 1, this hospital will no longer provide security. Each Charge Nurse will be issued a .38 caliber revolver and 12 rounds of ammunition. An additional 12 rounds will be stored in the pharmacy. In addition to routine nursing duties, Charge Nurses will rotate the patrolling of the hospital grounds. A bicycle and helmet will be provided for patrolling the parking areas. In light of the similarity of monitoring equipment, ICU will now take over the security surveillance duties. The unit secretary will be responsible for watching cardiac and security monitors as well as continuing previous secretarial duties. Food service will be discontinued. Patients wishing to be fed will need to let their families know to bring something, or make arrangements with Subway, KFC, Dominos, etc. before meal time. Coin operated telephones will be available in the patients rooms for this purpose as well as for other calls the patients may wish to make.

Housekeeping and Physical Therapy are being combined. Mops will be issued to those patients who are ambulatory, thus providing range-of-motion exercise as well as a clean environment. Families and ambulatory patients may also sign up to clean the rooms of non-ambulatory patients for special discounts from their final bill. Time cards will be provided. As you can see on the "From" line above, administration is assuming grounds keeping duties. If an administrator cannot be reached by calling his/her office, it is suggested that you walk outside and listen for the sound of a lawnmower, weed-whacker, etc.

Engineering is being eliminated. This hospital has subscribed to the Time-Life "HOW TO..." series of maintenance books. These books can be checked out from administration and a toolbox will be standard equipment on all nursing units. We will be receiving the series at a rate of one volume every other month. We already have the volume on Basic Wiring, but if a non-electrical problem occurs, please try to handle it as best as you can until the appropriate volume arrives.

Cutbacks in the phlebotomy staff will be accommodated by only performing blood-related lab tests on patients who are already bleeding. Physicians will be informed that they may order no more than 2 X-rays per patient per stay. This is due to the turn-around time required by Eckerd's photo lab. Two prints will be provided for the price of one and physicians are being advised to clip coupons from the Sunday paper if they want extra copies. Eckerd's will also honor competitors' coupons for one-hour processing in emergency situations, so if you come across any coupons, please clip them and send them to the ER.

In light of the extremely hot summer temperatures forecast, T.U. Electric has been asked to install individual meters in each patient's room, office, etc. so that electrical consumption can be monitored and appropriately billed. Fans will be available for sale or lease in the hospital gift shop.

In addition to the current recycling programs, a bin for the collection of unused fruit and bread will soon be provided on each floor. Families, patients and the few remaining employees are encouraged to contribute discarded produce. The resulting moldy compost will be utilized by the pharmacy for nosocomical production of antibiotics. These antibiotics will also be available for purchase through the hospital pharmacy, and will, coincidentally, soon be the only antibiotics listed on the HMO's formulary.

VEGETABLE LENTIL SOUP

Marilyn A., cookbook committee, auxiliary member

1 cup dry lentils, rinse and sort
3 cups water
1 (16 oz.) can tomatoes, pureed
1 cup pared, diced carrots
?? cup diced potatoes
1/2 cup diced potatoes
?? cup diced celery
?? cup diced onions
1 clove garlic, minced
1 small bay leaf
1/8 teaspoon oregano
1/8 teaspoon Tabasco sauce
4 tablespoons red wine or red vinegar
Shredded cheese

Rinse lentils. In a large saucepan, cook lentils according to directions on lentils bag. Combine lentils, water, tomatoes, carrots, potatoes, celery, onion, garlic, salt, bay leaf, oregano, Tabasco sauce and two tablespoons of wine or vinegar. Cover, simmer for 1 hour or until lentils and vegetables are tender. Remove bay leaf and stir in 2 tablespoons of wine or vinegar. Ladle into bowls and garnish with cheddar cheese.



BROCCOLI CHEESE CASSEROLE

?? cup margarine
1 cup cheez whiz
1 cup minute rice, uncooked
1 can cream of mushroom soup
1 can cream of chicken soup
20 ounce frozen broccoli, thawed

Melt margarine and cheez whiz together. Mix uncooked rice, cream of mushroom soup, cream of chicken soup, and broccoli. Then add cheez whiz and margarine mixture. Pour into a 9 x 13 baking dish and bake at 350 degrees for one hour.



MEDITERRANEAN CHICKEN BARCELONA

Dr Mark E, Internal Medicine

2 pounds boneless chicken breasts
3 green peppers, chopped
2 small onions, chopped
8 ounce canned whole tomatoes, drained
16 ounce canned whole tomatoes
4 cups fresh, washed mushrooms
1 whole clove garlic
?? cup olive oil
1 tablespoon cracked black pepper
2 tablespoons dried basil, chopped
1 tablespoon salt
Grated Romano cheese

Cut chicken into 2 x 2 inch squares. Saut?© onions, garlic and salt in olive oil on medium heat in a large oblong roasting dish on top of stove for 5 to 10 minutes. Increase heat to medium high and brown chicken in this mixture 5 to 10 minutes until cooked through. Add green peppers, mushrooms, all tomatoes, with juice from 16 ounce can only. Crush tomatoes as you cook them. Stir slowly with wooden spoon. While mixture simmers and thickens, add in basil, oregano, black pepper, and salt. Simmer approximately 30 minutes on medium heat as not to burn mixture. Serve on angel hair pasta. Sprinkle with Romano cheese.



CHEESY PENNE WITH SAUSAGE AND PEAS

1 pound hot Italian sausage, casings removed
1 pound sweet Italian sausage, casings removed
1 ?? cup whipping cream
?? canned low salt chicken broth
1 cup chopped onion
1 pound penne pasta
2 cups frozen peas
2/3 cup mascarpone (cheese)
?? cup freshly grated Parmesan cheese

Saut?© sausages in Dutch oven until brown, breaking into small pieces, about 12 minutes. Using a slotted spoon, transfer sausage to a bowl. Pour off all but 1 tablespoon drippings. Add onion; saut?© about 6 minutes until brown. Add cream; boil 5 minutes. Add broth; boil until reduced to sausage consistency, stirring occasionally, about 8 minutes. Return sausage to pot. Cook penne in a large pot of boiling water (salted) until just tender but firm to bite. Meanwhile, bring sauce to simmer over medium heat. Add peas and mascarpone and simmer about 6 minutes. Drain pasta, add to sauce, toss to coat. Mix in Parmesan cheese. Season with salt and pepper.



AUNT ESTHER??™S 6-WEEK MUFFINS

15 ounce package raisin bran
5 cups flour
3 cups sugar
5 teaspoons baking soda
2 teaspoons salt
1 quart buttermilk
1 cup Crisco oil
4 eggs, beaten

Grease muffin pan. Mix raisin bran, flour, sugar, baking soda and salt. Add buttermilk, oil and eggs. Stir until all is blended. Fill muffin pans. Bake at 425 degrees for 25 minutes. May store batter in refrigerator in a covered bowl up to 6 weeks. Bake as desired.



PINEAPPLE SHEET CAKE

Cindy D., laboratory technician, my friend, who lost her heroic battle with lung cancer this past year.

2 eggs
2 cups sugar
2 cups flour
1 teaspoon baking soda
1 (20 ounce) can crushed pineapple
Dash salt

FROSTING

1 pound box powdered sugar
8 ounces cream cheese
?? cup margarine

Mix eggs, sugar, flour, soda, pineapple with juice and a dash of salt. Pour into a greased jelly roll or 9 x 13 pan. Bake at 350 degrees for thirty minutes.

FROSTING: Blend margarine, cream cheese and add powdered sugar. Spread on cooled cake.

Heart Healthy...




LOW CALORIE CHEESE DIP

Sue N., RN

1 cup cottage cheese
1 teaspoon lemon juice
3 tablespoons dill pickles, minced
1 tablespoon pickle juice
?? tablespoon paprika
?? teaspoon salt

Blend cottage cheese in blender. Add lemon juice, minced dill pickles, pickle juice, paprika and salt. Blend well. Refrigerate until you wish to serve.

For Two...



DIET PINA COLADA

1 cup skim milk

?? cup unsweetened crushed pineapple
2 packets sweetener (like Equal)
?? teaspoon rum, vanilla or coconut flavoring
3 or 4 ice cubes

Put all ingredients in a blender. Mix until frothy and ice cubes are well crushed.

Note: This makes a tall, delicious low calorie drink for one.

DOUBLE DELICIOUS CHOCOLATE CHIP COOKIES

The recipe is my favorite, and Vicky is my favorite. She is the one who would call me at 2 in the morning to come in for an emergency. She is a one-woman whirlwind. She just about runs the hospital. We??™ve worked together, cried together, shopped together. She saw me through some pretty dark days. She is the Publisher??™s Choice. She is my friend.

1 cup butter, softened
?? cup granulated sugar
?? cup brown sugar, packed
1 (4 serving size) package vanilla instant pudding
2 eggs
1 teaspoon vanilla
2 ?? cups flour
1 teaspoon baking soda
1 ?? chopped walnuts
2 cups milk chocolate chips
1 ?? cups mini semi-sweet chocolate chips

Preheat oven to 375 degrees. Before putting cookies in the oven, turn down to 325 degrees. Beat butter, sugar, eggs and vanilla until light and fluffy. Mix in flour, pudding mix and baking soda. Stir in chips and walnuts, mixing well. Roll into 2 inch balls and place 1 ?? inches apart on an ungreased cookie sheet. Bake for 8 minutes; remove from cookie sheet and allow to cool. Makes 3 dozen.
