Good morning to everyone. I hope this finds you doing well. In Texas, everything is "hunky-dory". I recall the definition of that word is "perfectly satisfactory". I use it a lot. Younger folk usually pause for a moment when I say it, then scratch their head and carry on. Older folk will smile as it evokes a pleasantry long forgotten. Words are wonderful little tools, don't you think? I love the good things accomplished by using just the "right" word. I am not always successful, but I do know words can keep you in touch with folks, and a lack of them can cause rifts. So, even when I may be wrong, I speak. A to Z Recipes has become a way for me to keep in touch. It has become a hunky-dory method for me to say I care about you, too!

Recipes are also a great way of communicating. I believe you will find many in today's issue that will communicate very well. Each submitter took the time to "speak to you" in a very special way. I hope you will join in the discussion by sending along some recipes for sharing with others in our little a2z family. Recipes are what gave a2z its start, but all the other little niceties you will find in each issue speak loud and clear: we are family!

On Sunday, you will receive a HUGE monthly theme issue. I am delighted so many contributed. Please help make the current theme a success by sending in your favorite pasta recipes. There are many "Pastabilities!" Use the email link located in the Next Monthly Theme section.

Then sit back and watch the power of God work in your life for doing the thing that you know He loves.

Did You Know?...

Tomatoes Reduce Prostate Cancer Risk

Men can significantly reduce their risk of developing prostate cancer by eating tomatoes or tomato-based foods a couple of times a week, according to results of a recent study of nearly 48,000 men. The health benefits of tomatoes are attributed to their high levels of the antioxidant lycopene. Results of this study found that men who consumed 18,780 micrograms (mg) of lycopene each day were 16% less likely to develop prostate cancer than men who consumed just 3,415 mg of the antioxidant. However, it isn't just fresh tomatoes that deliver the benefits of lycopene, as men who ate two or more servings of tomato sauce each week were found to be 23% less likely to develop the disease, compared with men who ate ketchup once a month or less. Study leader Dr. Edward Giovannucci, recommends that men should increase their intake of fresh tomatoes and tomato-based foods instead of opting for lycopene dietary supplements.

Next Monthly Theme...

Pastabilities!

Here's the scoop on the current theme:

I love pasta recipes. My kids enjoy eating and preparing them. Since most folks enjoy pasta, I thought it would be great to share some of those recipes right here as a theme topic. How about it, folks? Is there a recipe that makes your family swoon when you prepare it? Even simple pasta dishes are great for sharing. The sky's the limit!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. LITTLE WHITE LIES

Have you ever told a white lie? You are going to love this -- especially all the ladies who bake for church events.

Alice was to bake a cake for the church ladies' group bake sale, but she forgot to do it until the last minute. She baked an angel food cake and when she took it from the oven, the center had dropped flat.

She said, "Oh dear, there's no time to bake another cake." So, she looked around the house for something to build up the center of the cake. Alice found it in the bathroom ... a roll of toilet paper. She plunked it in and covered it with icing. The finished product looked beautiful, so she rushed it to the church.

Before she left the house, Alice had given her daughter some money and specific instructions to be at the bake sale the minute it opened, and to buy that cake and bring it home. When the daughter arrived at the sale, the attractive cake had already been sold. Alice was beside herself.

The next day, Alice was invited to a friend's home where two tables of bridge were to be played that afternoon. After the game, a fancy lunch was served, and to top it off, the cake in question was presented for dessert. Alice saw the cake, she started to get out of her chair to rush into the kitchen to tell her hostess all about it, but before she could get to her feet, one of the other ladies said, "What a beautiful cake!"

Alice sat back in her chair when she heard the hostess (who was a prominent church member) say ."Thank you, I baked it myself."



Short Story

Many of us are quite confused about how we should present ourselves. We're unsure about the kind of image we are projecting and whether or not we are correct as we try to be nice and conform to the fashions that the designers in NYC, California, and/or Paris inflict upon the world.

So I made a sincere study of the situation and here are the results.

I don't want to burst your bubble, but despite what you may have seen on the streets, the following combinations DO NOT go together and thus should be avoided:

1. A nose ring and bifocals

2. Spiked hair and bald spots

3. A pierced tongue and dentures

4. Miniskirts and support hose

5. Ankle bracelets and corn pads

6. Speedo's and cellulite

7. A belly button ring and a gall bladder surgery scar

8. Unbuttoned disco shirts and a heart monitor

9. Midriff shirts and a midriff bulge

10. Bikinis and liver spots

11. Short shorts and varicose veins

12. In-line skates and a walker

13. Thongs and Depends

Please keep these basic guidelines foremost in your mind when shopping.

CRUNCHY BACON COLESLAW

1/2 cup MIRACLE WHIP Light Dressing
1 Tbsp. sugar
1 tsp. cider vinegar
4 cups shredded green cabbage
1 cup shredded red cabbage
1/2 cup PLANTERS Salted Peanuts, chopped
4 slices OSCAR MAYER Bacon, crisply cooked, crumbled

MIX dressing, sugar and vinegar in large bowl.

ADD remaining ingredients; mix lightly. Refrigerate 1 hour or until ready to serve.



QUICK SKILLET CHICKEN SUPPER

Yield: 4 Servings

1 tb Vegetable oil
4 Chicken breasts
1/2 lb Italian sausage - hot
3 md Carrots, sliced
1 md Onion, sliced
1 Garlic clove, minced
1/2 c Dry red wine
1 Bay leaf
1 ts Thyme - dried
1/4 ts Pepper
14 oz Beans with pork in tomato
Parsley, chopped

Prep Time: 30 min, Cook Time: 30 min

Chicken breasts should be skinned and de-boned. Red wine may be replaced by 1/2 cup chicken broth with 1 tb red wine vinegar.

In a large frying pan, heat the oil over medium-high heat. Brown the chicken and sausage. Add carrots, onion and garlic; saute for 2 minutes. Drain off the fat. Stir in the wine, bay leaf, thyme and pepper. Cover and simmer over low heat for about 15 minutes or until chicken is no longer pink. Stir in the beans and heat through. Sprinkle parsley on top.



SHRIMP PIE
1964 (NOT TNT)

1 pound raw shrimp, shelled, boiled and cleaned
1/2 cup onion, minced
1/2 cup celery, minced
1/2 cup sharp cheese, grated
2 hard-cooked eggs, chopped
Juice of 2 lemons
1 stick butter, melted
1 teaspoon salt
1/2 cup flour
2 cups milk
Toasted bread crumbs

Saute onion and celery in 2 or 3 Tablespoons butter until tender and transparent. Set aside.

Using remaining butter, stir in flour, salt and milk to make rich, thick cream sauce. To this, add shrimp, cheese, lemon juice, onion mixture and hard-cooked eggs. Spoon mixture into individual baking shells, cover with crumbs and dot with butter. Bake in 350 F oven 15 minutes and serves piping hot!

Serves 6-8.

SESAME-CRUSTED SALMON WITH ORANGE GINGER SAUCE

1 pound salmon fillets
2 tablespoons teriyaki sauce
3 tablespoons sesame seeds
1 teaspoon garlic powder

Sauce:
?? cup orange juice
2 tablespoons pickled ginger, chopped
1 tablespoons juice from pickled ginger
1 teaspoon honey
1 teaspoon cornstarch dissolved in ?? cup water

Brush fillets with teriyaki sauce. In shallow bowl, combine sesame seeds and garlic powder; place fish, flesh-side down, in dish to coat. Place on baking sheet lined with aluminum foil; roast skin side down in preheated 350?°F oven 20 minutes or until fish is opaque throughout and sesame seeds are toasted.

Meanwhile, in saucepan, combine orange juice, pickled ginger, ginger juice and honey. Bring to boil; stir in cornstarch mixture and cook about 1 minute or until thickened. Serve salmon drizzled with sauce.

Makes 4 servings.

Suggestion: Serve with jasmine rice and green beans.



GREEK STUFFED MEATLOAF

1 1/2 lbs. ground lamb
1 1/2 lbs. ground beef
2 eggs
1/4 cup milk
2 cups quick oats
2 tablespoons oil
1 large onion, finely diced
2 cloves garlic, minced
1 cup fresh parsley, minced
2 teaspoons salt
1 teaspoon cumin
1/8 teaspoon pepper

1 large bunch fresh spinach, chopped or 2 boxes frozen chopped spinach, thawed
1 egg beaten
1 1/2 cups feta cheese, crumbled
1/4 cup black Greek olives, pitted and coarsely chopped

1/2 cup ketchup
1 teaspoon cinnamon
3 tablespoons Parmesan cheese

Preheat oven to 350 degrees. Mix meats. Combine with eggs, milk, and oats. Set aside. Saute onions in oil over moderate-low or low heat until for 20-30 minutes until translucent and golden. Estimate the cooking time for the onions and approximately 3-4 minutes before the end of the cooking, add the garlic. Combine meat mixture with onions, garlic, parsley, salt, cumin, and pepper. In a 9" X 13" baking dish, shape 2/3 of meat mixture into a hollow shell. Combine egg, spinach and feta cheese from filling ingredient list. Pack this filling into the hollow cavity of the meat loaf. Sprinkle with chopped olives. Cover filling with remaining meat mixture. Combine topping ingredients and spread over meatloaf. Bake for 70-80 minutes.

Heart Healthy...




BANANA BREAD

Ingredients:
3 large very ripe bananas
1 egg
1 cup sugar
2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1/2 cup chopped walnuts

Peel and mash bananas. Add egg and sugar and beat until very liquid. Stir in dry ingredients. Pour batter into a 9x5 greased loaf pan. Bake for 1 hour 20 minutes in a 300 degree oven. Allow to cool in pan for 10 minutes, then remove from pan and wrap tightly in aluminum foil. Allow to cool completely in the foil.

Makes 12 servings.
Nutritional Analysis:
Calories: 98
Total fat: .9 g.
Saturated fat: .2 g.
Sodium: 250 mg.
Cholesterol: 18 mg.

For Two...



GLAZED PORK CHOPS

Source: SMUCKER'S?®

Ketchup, steak sauce, garlic, mustard and SMUCKER'S?® Blackberry Jam magically blend into a sweet tangy glaze for broiled pork chops.

Makes 6 servings

Ingredients:

6 pork loin or rib chops, 3/4-inch thick
1 cup SMUCKER'S?® Blackberry Jam
3/4 cup ketchup
1/4 cup steak sauce
1 teaspoon dry mustard
1 clove garlic, minced

Directions:

1. Preheat broiler to High.

2. Broil pork chops 3 to 5 inches from heat for 5 minutes. Turn; broil 5 minutes longer.

3. Meanwhile, in small saucepan, combine remaining ingredients. Heat to boiling; simmer over low heat for 10 minutes.

4. Brush pork with sauce. Continue broiling, turning and brushing with sauce, 5 to 10 minutes longer, or until pork is no longer pink in center. Bring remaining sauce to a boil; serve with pork chops.

BAKED SCALLOPED POTATOES

Makes 8 servings

INGREDIENTS:

6 large peeled, cubed potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 onion, diced
1/2 teaspoon ground black pepper

DIRECTIONS:

Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.

Layer potatoes and onions into the casserole dish. Combine soup, milk and pepper in a bowl, then pour soup mixture over the potatoes and onions. The soup mixture should almost cover the potatoes and onion, if it does not add extra milk.

Cover dish and bake in preheated 375 degrees F (190 degrees C) oven for 60 minutes or until the potatoes are cooked through. At 30 minutes, remove the casserole from the oven and stir once before returning the dish to the oven. Remove from oven and serve.
