Publisher's Desk

Good morning. You will notice a new look and feel here at A to Z Recipes. I am trying this for many reasons. The first is to help improve the delivery to AOL users. Reworking my format may help. We'll see! Another change is the removal of ads from the issues. They take hours weekly to research and update. The response has generated little toward my rising operating expenses. If you choose to help me defray my expenses (and I hope you will), you may click on the "Make a Donation" button (or the link for other methods). Sometimes we wonder, "What did I do to deserve this?" or "Why did God have to do this to me?" Here is a wonderful explanation! A daughter is telling her Mother how everything is going wrong, she's failing algebra, her boyfriend broke up with her and her best friend is moving away.

Meanwhile, her Mother is baking a cake and asks her daughter if she would like a snack, and the daughter says, "Absolutely Mom, I love your cake."

"Here, have some cooking oil," her Mother offers. "Yuck" says her daughter.

"How about a couple raw eggs?" "Gross, Mom!"

"Would you like some flour then? Or maybe baking soda?" "Mom, those are all yucky!"

To which the mother replies: "Yes, all those things seem bad all by themselves. But when they are put together in the right way, they make a wonderfully delicious cake!

God works the same way. Many times we wonder why He would let us go through such bad and difficult times. But God knows that when He puts these things all in His order, they always work for good! We just have to trust Him and, eventually, they will all make something wonderful!

God is crazy about you. He sends you flowers every spring and a sunrise every morning.

Whenever you want to talk, He'll listen. He can live anywhere in the universe, and He chose your heart.

Life may not be the party we hoped for, but while we are here we might as well dance.

Breast Cancer Legislation

Important legislation for all women. Men... we need your support too! : )

If there was ever a time when our voices and choices should be heard, this is one of those times. If you are receiving this it's because I think you will take the 30 seconds to go and vote (sign up) on this issue. And send it on to others you know who will do the same. There's a bill called the Breast Cancer Patient Protection Act which will require insurance companies to cover a minimum 48-hour hospital stay for patients undergoing a mastectomy. It's about eliminating the "drive-through mastectomy where women are forced to go home hours after surgery against the wishes of their doctor, still groggy from anesthesia and sometimes with drainage tubes still attached. I was released 17 hours after receiving my radical mastectomy.

Was also wheeled right back to the outpatient bay right after recovery.

Never did see a hospital room.

Lifetime Television has put this bill on their web page with a petition drive to show your support. Last year over half the House signed on. Sign the petition by clicking on the web site below. You need not give more than your name and zip code number.

Here's the scoop on the current theme:

I love pasta recipes. My kids enjoy eating and preparing them. Since most folks enjoy pasta, I thought it would be great to share some of those recipes right here as a theme topic. How about it, folks? Is there a recipe that makes your family swoon when you prepare it? Even simple pasta dishes are great for sharing. The sky's the limit!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Crazy Corner

FAMILY

Three sisters ages 92, 94 and 96 live in a house together. One night the 96 year old draws a bath. She puts her foot in and pauses. She yells to the other sisters, "Was I getting in or out of the bath?"

The 94 year old yells back, "I don't know. I'll come up and see." She starts up the stairs and pauses "Was I going up the stairs or down?"

The 92 year old is sitting at the kitchen table having tea listening to her sisters. She shakes her head and says, "I sure hope I never get that forgetful, knock on wood." She then yells, "I'll come up and help both of you as soon as I see who's at the door."


"I CAN HEAR JUST FINE!"

Three retirees, each with a hearing loss, were playing golf one fine March day.

One remarked to the other , "Windy isn't it?"

"No," the second man replied, "it's Thursday."

And the third man chimed in, "So am I. Let's have a beer."


SUPERSEX

A little old lady was running up and down the halls in a nursing home. As she walked, she would flip up the hem of her nightgown and say "Supersex." She walked up to an elderly man in a wheelchair. Flipping her gown at him, she said, "Supersex." He sat silently for a moment or two and finally answered, "I'll take the soup."


ROMANCE

An older couple was lying in bed one night. The husband was falling asleep but the wife was in a romantic mood and wanted to talk.

She said: "You used to hold my hand when we were courting." Wearily he reached across, held her hand for a second and tried to get back to sleep.

A few moments later she said: "Then you used to kiss me." Mildly irritated, he reached across, gave her a peck on the cheek and settled down to sleep. Thirty seconds later she said: "Then you used to bite my neck."

Angrily, he threw back the bed clothes and got out of bed. "Where are you going?" she asked. "To get my teeth!"

GERMAN POTATO SALAD

I haven't had this for awhile and decided it really sounded good. It is great to make for a pot luck or brunch or a family that eats in "shifts" as you can keep it warm in your crockpot.

5 lbs. red potatoes
1 lb. bacon
1 onion, diced
5-6 hard boiled eggs
1/3 cup flour
1/4 cup fresh parsley, chopped
1/2 cup water
1/2 cup cider vinegar
2 tbs. sugar
3/4 tsp. salt
pepper to taste

Cook potatoes in boiling water 45 min. Peel and slice.

Fry bacon; reserve drippings. Saute onion in 2 tbs. bacon grease. Add to potatoes with crumbled bacon. diced hard boiled eggs and parsley; mix.

Add flour to remaining bacon grease and stir well. Stir in remaining ingredients. When thickened, mix well with potato mixture.


BANANA CHOCOLATE-CHIP TEA CAKE

12 tablespoons unsalted butter, room temperature
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla
1 scant cup mashed very ripe bananas (about 2 medium)
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup buttermilk
6 ounces semisweet chocolate morsels (1 cup plus 3 tablespoons)
1/2 teaspoon icing sugar

Preheat oven to 350F. Grease a fluted 10-cup Bundt pan. Using electric mixer, beat butter and granulated sugar until very soft, pale and fluffy. Beat in eggs one by one, then vanilla.

Add bananas; batter may look speckled and grainy. Add flour, baking powder and baking soda. Add buttermilk; mix until smooth. Fold in chocolate.

Scrape batter into Bundt pan and place on baking sheet in preheated oven. Bake until tester inserted into cake comes out clean (except for melted chocolate), about 45 minutes. Cool cake in pan about 10 minutes and then unmold on to serving plate.

Cool 15 minutes, dust with icing sugar passed through fine sieve. Serve slightly war or at room temperature.

Makes 10 to 12 servings.

CONEY ISLAND HOT DOGS

1/2 pound ground beef
1 medium onion, chopped
1 can tomato sauce (8 oz)
1 t. chili powder
1/2 t. Worcestershire sauce
1/2 t. dried oregano
1/4 t. hot pepper sauce
6 to 8 hot dogs
6 to 8 hot dog buns

In a large skillet, cook the beef and onion over medium heat, stirring often, until the beef is browned. Add the remaining ingredients, except the buns. Bring to a boil. Reduce heat to low and cook for 8 to 10 minutes or until the hot dogs are heated through. Serve the hot dogs in the buns, topped with the sauce.

Makes 6 to 8 servings.

GARLIC BROCCOLI

Here's one of my lazy recipes. (I don't remember the source) Instead of steaming, I simply thawed frozen. Conveniently comes in 1 1/2# bags. Drain water & heat til tender crisp & follow directions.

1 1/2 # broccoli
1 1/2 tsp. sesame oil
1 1/2 tsp. veg oil
1 1/2 tsp. dried red pepper
2 cloves crushed garlic
1/4 cup soy sauce
1 T. sugar
1 T. lemon juice
1 T. water

Steam broccoli.

Heat oils to hot, but not smoking. Remove from heat. Add pepper and let stand 10 minutes.

Add garlic and remaining sauce ingredients, stirring to dissolve sugar. Toss with broccoli.

Serve hot or cold.


CHOCOLATE-ORANGE PIE

A holiday dessert deserves to be memorable. This mousse-like pie, with its tropical pairing of chocolate and orange, will leave guests begging for more. Prepare the crust first and chill for an hour before adding the filling. Cool 1 more hour, and it's ready to enjoy!

Ingredients: (Serves 6-8):

Crust:
2 cups finely chopped toasted pecans
5 Tablespoons packed brown sugar
5 Tablespoons cold butter (cut into small pieces)

Filling:
6 oz. bittersweet chocolate
3/4 cup sugar
4 egg yolks
1 Tablespoon orange liqueur
1 teaspoon vanilla
2 1/2 cups whipping cream
shaved chocolate for garnish (optional)

Directions:

Crust:
1. Mix the pecans, butter, and sugar in a mixing bowl with your hands until the butter melts and mixes evenly together. Press the pecan mixture into pie pan bottom and up the side.

2. Refrigerate for 1 hour.

Filling:
1. Melt chocolate together in a double boiler, or in the microwave (depending on the microwave, about two minutes).

2. Remove from the heat and let cool slightly.

3. In a separate bowl add the egg yolks to orange liqueur, vanilla, and 1/2 cup of sugar. Whisk in until smooth and pale yellow.

4. Place egg yolks, sugar, orange liqueur, and vanilla over double boiler and continue to whisk over simmering water until thickened.

5. Remove from heat and continue to whisk until cooled, but not cold.

6. Add chocolate to sugar mixture and stir until combined.

7. Whip 1 cup of whipping cream to soft peaks and fold into chocolate mixture.

8. Pour the chocolate mousse into the prepared pie shell and chill for at least an hour.

9. Add 1/4 cup sugar to the rest of the cream (1 1/2 cups) and whip. Top the pie. Garnish with shaved chocolate, if desired.

SPICY MEATBALL AND PASTA STEW

Yield: 8 servings

INGREDIENTS

Meatballs:
8 ounces lean ground beef
1 egg
2 tablespoons ketchup or chili sauce
2 tablespoons seasoned bread crumbs
1 teaspoon minced garlic
1/2 teaspoon chili powder

Stew:
2 teaspoons vegetable oil
1 teaspoon minced garlic
1-1/4 cups chopped onions
3/4 cup chopped carrots
3-1/2 cups beef stock
1 can (19 ounces) tomatoes, crushed
3/4 cup canned chick peas, drained
1 tablespoon tomato paste
2 teaspoons granulated sugar
2 teaspoons chili powder
1 teaspoon dried oregano
1-1/4 teaspoon dried basil
2/3 cup small shell pasta

DIRECTIONS

In large bowl, combine ground beef, egg, ketchup, bread crumbs, garlic and chili powder; mix well. Form each 1/2 tablespoon into a meatball and place on a baking sheet; cover and set aside.

In large nonstick saucepan, heat oil over medium heat. Add garlic, onions and carrots and cook for 5 minutes or until onions are softened. Stir in stock, powder, oregano and basil; bring to a boil, reduce heat to medium-low, cover and let cook for 20 minutes. Bring to a boil again and stir in pasta and meatballs; let simmer for 10 minutes or until pasta is tender but firm, and meatballs are cooked.

For Two

THAI SHRIMP AND PASTA SALAD

2 servings (serving size: 2 cups)

Purchase pre-cooked shrimp from the seafood department to save precious minutes!

2 ounces uncooked linguine
1/2 cup shredded carrot
8 ounces medium shrimp, cooked and peeled
1 cup thinly sliced Boston lettuce leaves
1/4 cup fresh cilantro leaves
2 tablespoons chopped unsalted, dry-roasted peanuts
1/4 cup fresh lime juice
2 tablespoons fish sauce
2 tablespoons chopped fresh cilantro
1 tablespoon chopped green onions
2-1/2 teaspoons sugar
2 teaspoons vegetable oil
1 teaspoon grated peeled fresh ginger
2 garlic cloves, minced

Cook pasta in boiling water 9-1/2 minutes. Add carrot; cook an additional 30 seconds. Drain, and cool. Combine pasta mixture, shrimp, lettuce, cilantro leaves, and peanuts in a large bowl; toss well.

Combine lime juice and remaining ingredients in a jar. Cover tightly, and shake vigorously. Pour over pasta mixture, tossing gently to coat.

MAGICALLY MOIST CHICKEN

4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
1/2 cup Hellmann's ?® or Best Foods ?® Real or Light Mayonnaise
1-1/4 cups Italian seasoned dry bread crumbs

1. Preheat oven to 425F.

2. Brush chicken with Hellmann's ?® or Best Foods ?® Real Mayonnaise, then coat with bread crumbs. On baking pan, arrange chicken.

3. Bake 20 minutes or until chicken is thoroughly cooked.

Serves: 4
