Hi from Linda in Michigan. What do peaches and cheese and grape nuts and strawberries and chocolate have in common? You can use all these ingredients in quick breads! These breads are simple to assemble and bake, and don't require yeast or kneading. This is good for me because I never did learn to bake anything with yeast. Most of these recipes yield 2 loaves. One for now and one for the freezer. You can also make a batch of mini loaves. Just fill the pans half full with batter, and reduce baking time. Check with a toothpick for doneness. Oh, and I did want to comment on the Crazy Corner. Today's offerings are a little on the "naughty" side. I would never print really nasty jokes, but these are kinda cute. If you are offended,

JUST CHECKING IN
A Minister passing through the church
in the middle of the day,
Decided to pause by the altar
and see who had come to pray.
Just then the back door opened,
a man came down the aisle,
The minister frowned as he saw
the man hadn't shaved in a while.
His shirt was kinda shabby
and his coat was worn and frayed,
the man knelt, he bowed his head,
Then rose and walked away.
In the days that followed,
each noon time came this chap,
each time he knelt just for a moment,
A lunch pail in his lap.
Well, the minister's suspicions grew,
with robbery a main fear,
He decided to stop the man and ask him,
"What are you doing here?"
The old man said, he worked down the road.
Lunch was half an hour.
Lunchtime was his prayer time,
For finding strength and power.
"I stay only moments, see,
because the factory is so far away;
as I kneel here talking to the Lord,
This is kinda what I say:
"I JUST CAME AGAIN TO TELL YOU, LORD,
HOW HAPPY I'VE BEEN,
SINCE WE FOUND EACH OTHER'S FRIENDSHIP
AND YOU TOOK AWAY MY SIN.
DON'T KNOW MUCH OF HOW TO PRAY,
BUT I THINK ABOUT YOU EVERYDAY.
SO, JESUS, THIS IS JIM
CHECKING IN TODAY."
The minister feeling foolish,
told Jim, that was fine.
He told the man he was welcome
To come and pray just anytime.
Time to go, Jim smiled, said "Thanks."
He hurried to the door.
The minister knelt at the altar,
he'd never done it before.
His cold heart melted, warmed with love,
and met with Jesus there.
As the tears flowed, in his heart,
he repeated old Jim's prayer:
"I JUST CAME AGAIN TO TELL YOU, LORD,
HOW HAPPY I'VE BEEN,
SINCE WE FOUND EACH OTHER'S FRIENDSHIP
AND YOU TOOK AWAY MY SIN.
I DON'T KNOW MUCH OF HOW TO PRAY, BUT I
THINK ABOUT YOU EVERYDAY.
SO, JESUS, THIS IS ME CHECKING IN TODAY."
Past noon one day, the minister noticed
that old Jim hadn't come.
As more days passed without Jim,
he began to worry some.
At the factory, he asked about him,
learning he was ill.
The hospital staff was worried,
But he'd given them a thrill.
The week that Jim was with them,
Brought changes in the ward.
His smiles, a joy contagious.
Changed people, were his reward.
The head nurse couldn't understand
why Jim was so glad,
when no flowers, calls or cards came,
Not a visitor he had.
The minister stayed by his bed,
He voiced the nurse's concern:
No friends came to show they cared.
He had nowhere to turn.
Looking surprised, old Jim spoke
up and with a winsome smile;
"the nurse is wrong, she couldn't know,
that in here all the while everyday at noon
He's here, a dear friend of mine, you see,
He sits right down, takes my hand,
Leans over and says to me:
"I JUST CAME AGAIN TO TELL YOU, JIM,
HOW HAPPY I HAVE BEEN,
SINCE WE FOUND THIS FRIENDSHIP,
AND I TOOK AWAY YOUR SIN.
ALWAYS LOVE TO HEAR YOU PRAY,
I THINK ABOUT YOU EACH DAY,
AND SO JIM, THIS IS JESUS
CHECKING IN TODAY."

As the name implies, quick breads can be made quickly and easily. Because the leavening agent is either baking powder, baking soda, or steam, there is no rising time required.
A baked quick bread will generally have a gently rounded top that is slightly bumpy.
don't worry about a crack on top of the quick bread loaves; it's normal.
Baking Tips:
IMPORTANT: When working with baking powder or baking soda, do not beat the batter; stir only enough to just moisten the dry ingredients. There may still be lumps remaining in the dough, but this is okay. the more you mix a quick-bread batter, the more you develop the flour's gluten, and the tougher the resulting bread.
Don't increase the quantity of baking powder called for in a particular recipe, for too much leaves a distinctive and unpleasant taste.
Don't substitute self-rising or cake flour for all-purpose flour, unless you are confident of being able to calculate exactly how much to reduce the quantity of baking powder or baking soda to compensate.
Bake all quick breads as soon as the ingredients are assembled. since high temperatures are often called for, it is best to bake them in the center of the oven, as the heat in the top third of the oven will be too intense. If you oven tends to overheat, reduce the oven temperature by 25 degrees and increase the cooking time by 5 minutes.
Because glass bakeware retains heat better than metal bakeware, reduce the temperature of your oven by 25 degrees when using glass pans.
If you find that your bread is beginning to brown too fast, cover it with a tent of
aluminum foil.
Cool quick breads in the loaf pan for 10 minutes; then remove from pan and allow to cool completely before slicing.

JALAPENO MEXICAN CORN MUFFINS
18 muffins
30 minutes 10 mins prep
1/2 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups yellow cornmeal
2 eggs
1 cup nonfat sour cream
1 cup grated cheddar cheese (I use light cheese)
1 (10 ounces) can creamed corn
1/4 cup seeded and chopped jalapeno peppers
1/2 cup butter, melted
Sift flour, baking powder and salt together.
Add cornmeal, eggs, sour cream, cheese, corn, jalapeno peppers and butter; mix well.
Spray a medium muffin tin or use paper liners and fill with the mixture.
Bake at 450 for 15-20 minutes.

HAIR IN THE EARS?
My neighbor found out her dog could hardly hear so she took it to the vet. He found that the problem was hair in its ears so he cleaned both ears and the dog could hear fine. The vet then proceeded to tell the lady that if she wanted to keep this from reoccurring she should go to the store and get some "Nair" hair remover and rub it in the dog's ears once a month.
The lady goes to the drug store and gets some "Nair" hair remover. At the register the pharmacist tells her: "If you're going to use this under your arms don't use deodorant for a few days." The lady says, "I'm not using it under my arms."
The pharmacist says: "If you're using it on your legs don't shave for a couple of days." The lady says, "I'm not using it on my legs, either. If you must know, I'm using it on my schnauzer."
The pharmacist says: "Stay off your bicycle for a week."?
TRAIL TALK
One day, while riding on the trail, a cowboy met an Indian riding along with a dog and a sheep. He began a conversation:
Cowboy: "Hey, cool dog you got there. Mind if I speak to him?"
Indian: "Dog no talk."
Cowboy: "Hey dog, how's it going?"
Dog: "Doin' all right."
Indian: Look of shock.
Cowboy: "Is this Indian your owner?" pointing at the Indian.
Dog: "Yep"
Cowboy: "How does he treat you?"
Dog: "Real good. He walks me twice a day, feeds me great food, and
takes me to the lake once a week to play."
Indian: Look of total disbelief.

Horse: "Cool."
Indian: Extreme look of shock.
Cowboy: "Is this your owner?" pointing at the Indian.
Horse: "Yep"
Cowboy: "How's he treat you?"
Horse: "Pretty good, thanks for asking. He rides me regularly, brushes
me down often, and keeps me in a shed to protect me."
Indian: Total look of utter amazement.
Cowboy: "Mind if I talk to your sheep?"
Indian: "Sheep liar."
A little old man shuffled slowly into an ice cream parlor and pulled himself slowly, painfully, up onto a stool. After catching his breath he ordered a banana split. The waitress asked kindly,?
"Crushed nuts?" " No," he replied, "arthritis."?
DUSTY UNDERWEAR
One morning a husband took a pair of underwear out of the drawer. "What the ? ? ?" he said to himself as a little "dust" cloud appeared when he shook them out.
"April," he hollered into the bathroom, "why did you put talcum powder in my underwear?"
She shot back: "It's not talcum powder. It's 'Miracle Grow'

GEORGIA PEACH BREAD

1 1/2 cups sugar
1/2 cup shortening
2 eggs
2 1/4 cups pureed peaches
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup finely chopped pecans
Cream sugar and shortening together. Add eggs and mix thoroughly. Add peach puree and dry ingredients. Mix thoroughly. Add vanilla and chopped pecans and stir until blended. Pour into two loaf pans approximately 5- x 9-inches in size, that have been well greased and floured. Bake at 325 degrees F for 55 minutes to 1 hour. Let bread cool a few minutes before removing from pan.
Makes 2 loaves.
STRAWBERRY PECAN BREAD
Moist and tangy quick bread.?
3 cups flour
1 teaspoon salt
2 cups sugar
1 1/4 cups oil
1 teaspoon baking soda
1 teaspoon cinnamon
4 eggs, beaten
2 cups strawberries, sliced
Combine the dry ingredients. Add eggs, oil, strawberries and pecans. Stir just until all ingredients are moistened, may still be a bit lumpy. Spoon the batter into 2 well-greased 9x5x3-inch loaf pans. Bake at 350F for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes, the remove and cool completely on wire racks.
LEMON GLAZED NUT BREAD

2/3 cup sugar
1/2 cup LAND O LAKES Butter, softened
2 eggs
1/4 cup lemon juice
1 teaspoon grated lemon peel
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/8 teaspoon salt
1/2 cup milk
3/4 cup chopped pecans
Glaze Ingredients:
1/2 cup powdered sugar
2 tablespoons lemon juice
Instructions:
Heat oven to 350F. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs, one at a time, beating well after each addition. Add lemon juice and lemon peel; continue beating until well mixed. (Mixture will look curdled.)
Combine flour, baking powder and salt in small bowl. Add alternately with milk to butter mixture, beating well after each addition. Stir in pecans by hand.
Pour into 3 greased (5 1/2 x 3-inch) mini loaf pans. Bake for 35 to 45 minutes or until toothpick inserted in center comes out clean.
Meanwhile, combine sugar and 2 tablespoons lemon juice in small bowl. Poke holes in top of warm bread with toothpick; drizzle glaze evenly over top of breads. Let stand 10 minutes; remove from pans. Cool completely.
GRAPE NUTS DATE BREAD

2 cups milk, scalded
1 cup Grape-Nuts cereal
3 cups sifted flour
4 teaspoons baking powder
1 teaspoon salt
1/2 cup sugar
1 egg, well beaten
3 tablespoons melted butter
1 cup chopped dates
PREPARATION:
Pour hot milk over Grape-Nuts; cool. Sift flour, measure, then add baking powder, salt and sugar. Sift again.?
To the Grape Nuts cereal mixture, add the beaten egg, melted butter, and chopped dates; blend well.?
Add dry ingredients, stirring just enough to moisten all ingredients. Turn into a greased and floured 9x5x3-inch loaf pan. Let stand for 20 minutes at room temperature, then bake at 350? for about 1 hour and 20 minutes
QUICK CELERY CHEESE LOAF
Recipe From: Farm Journal's Homemade Breads?
3 cups flour -- sifted
1/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup cheddar cheese -- shredded
1/4 teaspoon celery seed
1 1/4 cups milk
1 eggs
Into large bowl, sift together flour, sugar, baking powder and salt. With pastry blender, cut in shortening until coarse crumbs form. Stir in cheese and celery seed; set aside.
In small bowl, mix milk and eggs until well blended. Add milk mixture to dry ingredients; stir just until moistened. Pour batter into greased and waxed paper-lined 9x5x3 loaf pan.
Bake in 350 degree oven 50 to 60 minutes, or until loaf is golden brown and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove; peel off waxed paper. Cool on rack.
Makes 1 loaf.
MAMAW??™S SWEET POTATO BREAD

3 1/2 cup flour (I used 1 1/2 wheat pastry, 1 1/2 wheat, and 1/2 defatted soy)
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
2 tsp baking soda
2 1/4 cup honey (or 3 cups sugar or 2 cups fructose)
2/3 cup soy milk (I didn't have any on hand so I used water and it turned out okay)
3/4 cup unsweetened applesauce
1 cup egg substitute (or whatever you use to substitute for 4 eggs)
2 cup cooked and mashed sweet potatoes
Mix everything together until moist. Grease 2 loaf pans (again, Bev, I use no-stick spray :-) ) Bake at 325 for 1 hour or until knife comes out clean.
CHOCOLATE NUT BREAD

Ingredients:?
4 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 tablespoon baking soda
1 teaspoon salt
2 large eggs
1 3/4 cups milk
2/3 cup vegetable oil
12 ounces NESTL?‰ TOLL HOUSE Semi-Sweet Chocolate Morsels, divided
1 1/2 cups chopped walnuts
Directions:
PREHEAT oven to 350F. Grease two 9x5-inch loaf pans.
COMBINE flour, sugar, baking powder, baking soda and salt in large bowl.
COMBINE eggs, milk and vegetable oil in medium bowl. Add to flour mixture; mix just until moistened. Stir in 1 1/2 cups morsels and nuts. Spoon into prepared loaf pans.
BAKE for 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 10 minutes; remove from pans. Cool on wire racks.
MICROWAVE remaining morsels in heavy-duty plastic bag on HIGH (100%) power for 45 seconds; knead bag to mix. Microwave at additional 10- to 20-second intervals, kneading until smooth. Cut a small hole in corner of bag; squeeze to drizzle over bread. Sprinkle with additional nuts.
