Good morning on this fine Monday. We have a Birthday Baby! Tomorrow is the special day for Barb in Scranton, SC. Barb enjoys the recipes, humor and just plain 'ol knowing we'll be here for her. Join me in wishing Barb the best of birthdays by sending her a personal message. To do so, please drop by the A to Z Discussion Forum, ok? We actually have a few more birthdays this week which I will get to in later issues. Birthdays are such fun, even when they are not yours, lol. I'm sharing some recipes with you today that are keepers. Like a lot of the recipes I share, they are from books I own, have borrowed (thank goodness for the library, lol) or from pals. Would you figure that most of my friends in town really enjoy cooking? Hard to believe but - NOT. Most look at cooking as a chore. But I have a couple who own wonderful cookbooks passed down from their mothers, and trust me to handle with care. Like some of you, I can keep myself happy for hours by curling up with a good book... a cook book.

* Birthdays are good for you. The more you have, the longer you live.
* Some mistakes are too much fun to only make once.
* A truly happy person is one who can enjoy the scenery on a detour.

Nifty Cooking Tip

If a recipe calls for herbs that do not dissolve; for example bay leaves and garlic cloves, place them into a metal tea ball. Hook the chain over side of pot. This makes it easier to remove seasonings during or after cooking. After using, empty and then swish the tea ball in warm, soapy water to clean!

BAKED CHICKEN WITH ONIONS, GARLIC AND ROSEMARY

4 to 5 servings

Position a rack in the center of the oven. Preheat the oven to 400 degrees F. Rinse and pat dry:
3-1/3 to 4-1/2 pounds chicken parts

Season liberally with:
Salt and ground black pepper to taste

Toss together:
3 medium onions, cut into rings
6 to 12 cloves garlic, thinly sliced
2 tablespoons olive oil
4 teaspoons minced fresh rosemary, or 2 teaspoons dried, crumbled

Spread half of the onion mixture in a shallow baking dish or roasting pan just large enough to hold the chicken pieces in a single layer. Arrange the chicken pieces skin side up on top, then cover with the remaining onion mixture.

Drizzle over the chicken:
2 tablespoons olive oil

Bake the chicken until the dark meat pieces exude clear juices when pricked deeply with a fork, 45 to 55 minutes.

SWEET ONION AND FRIED CHICKEN SALAD

1 large head leaf lettuce, or a combination of lettuces
8 cherry tomatoes, halved
1/2 cup sliced mushrooms
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon coarse-grind black pepper
1/3 cup milk
2 whole chicken breasts, halved, boned, and cut into 1/2-inch strips
1/2 cup peanut oil
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 shallot, minced
1 tablespoon fresh tarragon, or 1 teaspoon dried tarragon
salt
pepper
1 large sweet onion (such as Vidalia or Texas 1015 SuperSweet), thinly sliced

Arrange lettuce leaves, tomatoes, and mushrooms on 4 salad plates; set aside.

In a shallow bowl, mix flour with 1/2 teaspoon salt and coarse-grind pepper. Place milk in a separate bowl. Dip chicken strips into milk and then into flour mixture to coat. Fry chicken in hot oil on both sides for a total of 5 minutes or until golden brown. Drain chicken on paper towels, reserving drippings in pan.

Stir vinegar into drippings, scraping bottom and sides of pan. Pour vinegar mixture into a mixing bowl and stir in mustard. Add shallots and tarragon and season with salt and pepper; set dressing aside.

Arrange chicken strips and onion slices on top of salads. Serve with mustard-tarragon dressing on the side.

Yield: 4 servings.

SAUSAGE-MUSHROOM BREAKFAST CASSEROLE

2 1/4 cup seasoned croutons
1 1/2 lb. bulk pork sausage
4 eggs, beaten
2 1/4 cup milk
1 can cream of mushroom soup
1 can sliced mushrooms (4 oz.) drained*
3/4 teaspoon dry mustard
2 cups grated cheddar cheese
Cherry tomatoes, halved*
Parsley sprigs*

Spread croutons in a lightly greased 9"x13" dish; set aside. Cook sausage until browned, stirring to crumble; drain well. Sprinkle sausage over croutons. Combine eggs, milk, soup, mustard and mushrooms. Mix well and pour over sausage. Cover and refrigerate at least 8 hours or overnight. Remove from refrigerator; let stand 30 minutes. Bake uncovered at 325 degrees for 50-55 minutes. Sprinkle cheese on top and bake 5 minutes or until cheese is melted. Garnish with cherry tomatoes and parsley.

Serves 8-10

When I made this, I used fresh mushrooms and omitted the tomatoes. I substituted chopped, fresh cilantro for the parsley.

PEANUT BUTTER PIE

1 8-ounce package cream cheese, softened
1 cup chunky peanut butter
2/3 cup powdered sugar
1/3 cup half-and-half
1 8-ounce carton whipped topping
1 graham cracker crust
?? cup heavy cream
1 tablespoon powdered sugar

Beat cream cheese, peanut butter and powdered sugar together until smooth. Gradually add half-and-half, beating until well blended. Stir in whipped topping. Spoon into graham cracker crust. Whip cream, gradually adding powdered sugar until soft peaks form. Spoon or pipe around edge of pie. Freeze. Slice while frozen. Let stand 20 minutes before serving.

BONELESS, SKINLESS CHICKEN BREASTS BAKED IN FOIL WITH SUN-DRIED TOMATOES AND OLIVES

4 servings

Position a rack in the center of the oven. Preheat the oven to 450 degrees F.

Rinse and pat dry:
4 boneless, skinless chicken breast halves (about 1-1/2 pounds)

Trim any fat around the edges. If you wish, remove the white tendon running through the tenderloins.

Season with:
Salt and ground black pepper to taste

Combine:
10 Kalamata or other black olives, pitted and finely chopped
8 sun-dried tomato halves in oil, cut into thin strips
3 tablespoons sun-dried tomato oil (from the jar of tomatoes) and/or olive oil
2 tablespoons finely shredded fresh basil or minced fresh parsley

Cut four 12-inch squares of aluminum foil. Fold each square in half to make a crease at the center. Unfold the foil and lightly oil the shiny side. Lay each breast on the shiny side of the foil just to one side of the crease. Spoon the tomato mixture over each breast, leaving a 1/4-inch border around the edges. Loosely fold the foil over the chicken, then crimp the edges of the packet to seal tightly. Place the packets on a baking sheet and bake for 20 minutes. Remove from the oven and let stand for 5 minutes. To avoid being burned by steam, cut a slit in the packets before opening them.

DOUBLE CHILI CHEESE DIP

1 package (8 ounces) light cream cheese, softened
1 can (15 ounces) turkey chili without beans
4 green onions, thinly sliced
3 tablespoons chopped green chilies
1/4 cup sliced ripe olives, optional
1 cup (4 ounces) shredded reduced-fat cheddar cheese
Baked tortilla chips

Spread cream cheese into a 9-in. pie plate or quiche dish that has been coated with nonstick cooking spray. Top with chili, onions, chilies and olives if desired. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 15-20 minutes or until the cheese is melted. Serve with tortilla chips.

Yield: 8 servings.

Nutritional Analysis: One serving (calculated without olives and tortilla chips) equals 189 calories, 502 mg sodium, 35 mg cholesterol, 5 gm carbohydrate, 12 gm protein, 14 gm fat.
Diabetic Exchanges: 1-1/2 fat, 1 meat, 1/2 starch.

For Two

PECAN PUDDING

1 tablespoon butter
1 large egg, beaten
1/3 cup dark corn syrup
1/4 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/8 teaspoon baking powder
1/4 cup chopped pecans
confectioner's sugar

In a 15-ounce custard cup, microwave the butter, uncovered, on 100% power for 30 to 40 seconds or just until melted. Swirl the butter in the custard cup, coating the entire surface.

Lightly beat the egg in a medium bowl. Pour the excess butter from the custard cup into the beaten egg. Stir in the dark corn syrup and vanilla.

Stir together the flour and baking powder. Stir flour mixture into egg mixture. Gently fold in the chopped pecans. Pour mixture into the buttered custard cup.

Microwave, uncovered, on 50% power for 3 to 4 minutes or until the pecan mixture is just set, rotating the custard cup a half-turn every minute. Sift a little confection's sugar on top. Serve warm with light cream, if desired.

Makes 2 servings.

SHRIMP* LOUIS

2 1/2 cups cleaned shrimp*
1 head iceberg lettuce, shredded
4 hard-cooked eggs
2 large tomatoes, cut in wedges
1/4 cup black olives
1 large lemon, cut in 8 wedges
1/4 cup chopped chives

Sauce:
1 cup mayonnaise
1/4 cup cream
1/4 cup ketchup or sweet chili sauce
1 teaspoon Worcestershire sauce
2 tablespoons lemon juice
1/4 cup minced onion
2 tablespoons minced green pepper
salt and pepper to taste

For sauce, combine all ingredients and season to taste.

Portion the lettuce onto four chilled luncheon plates. Mix the shrimp meat with enough Louis dressing to moisten well and mound in the center of lettuce. Garnish with quartered eggs, tomato wedges, olives and lemon wedges, and sprinkle chopped chives over top. Serve extra sauce on the side with rustic French or Italian bread and sweet butter.

*In place of shrimp, I have also used flaked imitation crab and it was so good!
