Publisher's Desk

Good morning to all. We have much for which to be thankful on this fine Monday morning. First, the US was spared much of the destruction that was feared to be part and parcel of Hurricane Dennis. Yes, there was great damage but Dennis was not the menace anticipated. And the sun is shining gloriously over much of the areas where rain and wind prevailed just yesterday. We've been given another chance and we should make the best of it.

In this issue I am sharing some recipes from my personal files. They have come from magazine and newspaper clippings, product labels, or my trusty cookbooks. There's also lots to make you think and laugh. I do hope you enjoy it.

Join us here Wednesday when Linda will be at the helm. She has a great issue planned for you. Don't you love all the recipes and fun stuff she sends our way? Working with Linda is such a pleasant experience for me as she is so much like real family. I know you feel the warmth and affection she has for our a2z family. What a gem.

I'm admitting I have failed
And need God to clean my mess.

When I say... "I am a Christian"
I'm not claiming to be perfect,
My flaws are far too visible
But, God believes I am worth it.

When I say... "I am a Christian"
I still feel the sting of pain.
I have my share of heartaches
So I call upon His name.

When I say... "I am a Christian"
I'm not holier than thou,
I'm just a simple sinner
Who received God's good grace, somehow!

HINTS FOR MAKING PIE CRUST

Too much flour makes pie crust tough. Too much shortening makes pie crust dry and crumbly. Too much liquid makes pie crust heavy. Pie dough may be made in advance, wrapped in wax paper and stored in refrigerator. Chilled dough handles more easily. All materials for pie crust should be cold as possible. Liquid should be iced. Pie dough should be handled lightly and as little as possible. If crust is to be baked without filling, prick bottom and sides and bake at 450 degrees 10-12 minutes.

Here's the scoop on the current theme:

What we're aiming for this month is recipes that require 30 minutes or less to prepare, start to finish. But, let's not limit this to entrees only! Since most of us would like to spend less time in the kitchen during the high summer heat, please send in any tasty recipes that may be prepared quickly. It would be great if this was an entire meal, but any good and quick recipes will fit in perfectly with this month's theme. How about some yummy one-pot meals, or delish desserts? Send us those family keepers for 30 Minutes Or Less! recipes for all to share here at A to Z Recipes. Make sure to drop by the rules section to ensure your submissions are acceptable.

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in your favorite theme recipes in ONE email. If the number of recipes submitted by readers exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up (ALL caps or NO caps) or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

This is a list I got off usenet where someone wondered what kind of messages a word processor would give when exiting without saving the file if the programmer was of one of various Christian denominations:

Non-sectarian: Do you wish to Save your work?

Roman-Catholic: Registry indicates user is female; only males are allowed to Save.

Anglican: Your work may or may not be Saved

Lutheran: If you don't follow the instruction manual, don't expect your work to be Saved.

Mennonite: Document contains the word "dancing"; it cannot be Saved

J. Witness: You are user 144,001; your work cannot be Saved

Mormon: Could we interest you in Saving your work?

Millenarian: It is almost to late to Save your work

S. Baptist: If your work was not Saved, it is because you are evil.

TV Preacher: This program has made mistakes in the past, but it will try to Save *this* file.

Born-again: Before Saving your work, this program will erase all existing data. Proceed?

Faith healers: If you believe your work will be Saved, it will be Saved.



The Atheist!

An atheist was walking through the woods one day in Alaska, admiring all that evolution had created. "What majestic trees! What a powerful river! What beautiful animals!" he said to himself. As he was walking alongside the river, he heard a rustling in the bushes behind him.

Turning to look, he saw a 13-foot Kodiak brown bear beginning to charge towards him. He ran as fast as he could down the path.

He looked over his shoulder and saw that the bear was rapidly closing on him.. Somehow, he ran even faster, so scared that tears came to his eyes. He looked again & the bear was even closer. His heart pounding in his chest, he tried to run faster yet. But alas, he tripped and fell to the ground.

As he rolled over to pick himself up, the bear was right over him, reaching for him with it's left paw and raising its right paw to strike him....he yelled out, "OH MY GOD!"

Time stopped.......

The bear froze.......

The forest was silent............

Even the river stopped moving.

As a brilliant light shone upon the man, a thunderous voice came from all around,

GOD SPOKE:

"YOU DENY MY EXISTENCE FOR ALL THESE YEARS, TEACH OTHERS THAT I DON'T EXIST AND EVEN CREDIT CREATION TO SOME COSMIC ACCIDENT. DO YOU EXPECT ME TO HELP YOU OUT OF THIS PREDICAMENT? AM I TO COUNT YOU NOW AS A BELIEVER?"

Difficult as it was, the atheist looked directly into the light & said, "It would be hypocritical to ask to be a Christian after all these years, but perhaps you could make the bear a Christian?"

"VERY WELL," said GOD.

The light went out...

The river ran...

The sounds of the forest resumed..

And the bear dropped down on his knees, brought both paws together, bowed his head and spoke:

"Lord, thank you for this food which I am about to receive, Amen."

CAJUN QUICHE

1 pie shell
1/2 c. mayonnaise
2 tbsp. flour
1/2 c. milk
2 eggs, slightly beaten
1 c. crabmeat
2/3 c. parboiled shrimp
8 oz. Swiss cheese, diced
1/3 c. onion

Bake pie shell at 350 degrees for 15 minutes. Meanwhile, in bowl, combine mayonnaise, flour, milk, and eggs and mix well. Stir in remainder of ingredients. Pour mixture into pie shell. Bake 40 minutes until center is done at 350 degrees.



CHOCOLATE ?‰CLAIR CAKE

2 (3 oz.) pkgs. French vanilla instant pudding
3 c. cold milk
2 tsp. vanilla
8 oz. Cool Whip
Graham crackers

Mix instant pudding with cold milk. Beat two minutes or until thickened. Add vanilla and fold in Cool Whip. Line 9x12x2 inch baking dish with graham crackers. Add 1/2 of the pudding mixture. Add 2nd layer of graham crackers then add the second 1/2 of the pudding mixture. Add 3rd layer of graham crackers.

ICING:
1 c. sugar
1/8 tsp. salt
1/4 c milk
1/2 c. cocoa
1 tbsp. vanilla
1 stick melted margarine

Combine sugar, salt, milk and cocoa. Bring to boil and boil 1 minute. Add vanilla and margarine. Blend and set aside for 5 minutes. Pour and spread over top of 3rd layer of graham crackers. Refrigerate overnight or longer.

Serves 18 to 24.



BROCCOLI AND RICE CASSEROLE

2 (10 oz.) pkgs. frozen broccoli spears
1 med. onion
3 tbsp. butter or margarine
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 c. milk
1 c. cooked rice
1 c. shredded cheese
1/4 c. slivered almonds

Cook broccoli without salt according to package directions. Drain. Cut spears after cooked. Saut?© onion in butter or margarine. Mix onion, soups and milk in 8" x 11 1/2" baking dish. Add broccoli and rice. Cover with cheese and almonds. Bake at 350 degrees for 20 minutes.



CHEESE BREAD

1 large loaf French bread
Swiss cheese, sliced
1 stick butter
1 small onion, finely chopped
2 tablespoons poppy seed

Slice French bread in 1 inch slices (not quite through to bottom). Tuck Swiss cheese in between each slice. Melt butter and combine with onion and poppy seed. Pour over bread. Wrap in foil and bake in oven at 350 F degrees for 20 minutes.



EASY TASTY PORK CHOPS

4-6 pork chops
1 cup applesauce
1/2 cup soy sauce
1/8 teaspoon onion powder

Brown pork chops and put in a 9 x 13 inch pan. Mix applesauce, soy sauce and onion powder. Spoon over meat. Cover with foil and bake at 350 degrees for 45-60 minutes, depending on thickness of pork chops.



ASPARAGUS CASSEROLE

2 (14 1/2 oz.) cans cut asparagus, drained
1 1/2 tbsp. butter, melted
1 tbsp. flour
3/4 c. milk
2/3 c. Cheddar cheese, grated
1/8 tsp. salt
1/2 c. Ritz crackers, crushed
1/2 tbsp. butter

Preheat oven to 325 degrees. Place cut asparagus in casserole dish. In small pan over medium heat, melt butter. Add flour, then add milk gradually. Cook slowly until thickened, stirring constantly. Add cheese and salt. Pour sauce over asparagus, sprinkle with cracker crumbs and dot over top with butter. Bake 40 minutes.

CHICKEN TETRAZZINI

1 (7 oz.) package uncooked spaghetti
1 cup chicken broth
2 teaspoon canola oil
1/2 cup skim milk
1/2 cup sliced green onions
2 cups cubed cooked chicken breast
1 (8 oz.) package fresh mushrooms, sliced (2-1/2 cups)
1 (2 oz.) jar sliced pimento, drained
3 tablespoons all purpose flour
2 tablespoons dry sherry
1/4 teaspoon garlic powder
1/4 cup grated Parmesan cheese
1/8 teaspoon pepper

Break spaghetti into thirds. In large saucepan, cook spaghetti to desired doneness as directed on package; drain and set aside in colander.

In saucepan, add oil, onions and mushrooms; cook and stir until tender. In small bowl combine flour, garlic powder, pepper, broth and milk; blend well. Add to onion mixture in saucepan. Cook until mixture boils and thickens, stirring constantly. Add chicken, pimento and sherry; cook until thoroughly heated, stirring occasionally. Stir in cheese. Add cooked spaghetti; toss gently. If desired, serve with additional grated Parmesan cheese and chopped fresh parsley.

Serves 4.

PER SERVING: CALORIES: 411 (19.9% from fat) FAT: 8.5g (SAT 2.7g) CHOL: 58mg FIBER: 2.7g SODIUM: 410mg
DIABETIC EXCHANGE: 3 lean meat 3 starch


For Two

SMOKED SALMON SALAD

Serves 2

This salad combines some ordinary ingredients for an extraordinary taste sensation.

1 whole avocado pitted and peeled
1/3 slice from bottom of whole avocado
dice the remaining 2/3 of the avocado
1 tsp. lemon juice
6 thin slices smoked salmon
1 orange peeled, and segmented into 10 pieces

Roll the smoked salmon sliced with diced avocado inside. Arrange the 6 rolls per plate. Put the 1/3 slice of the whole avocado in the center of the plate. Top with orange segments and sprinkle with lemon juice.

Drizzle with citrus dressing:
1 Tbsp. olive oil
?? tsp. lime juice
?? tsp. lemon juice
?? tsp. orange juice
salt and pepper to taste

INSIDE-OUT CHOCOLATE BROWNIES

Yield: 32 brownies

2 cups all-purpose flour
1/2 cup finely chopped nuts (optional)
2 cups semisweet chocolate chips
1/4 cup butter
14 ounces sweetened condensed milk
1 teaspoon vanilla
32 chocolate kisses, unwrapped

Chocolate Topping: 

2 ounces semisweet chocolate chips
1 teaspoon vegetable oil

Preheat oven to 350 degrees F. In a large bowl, toss together flour and nuts and set aside. In a medium saucepan combine chocolate chips and butter, stirring over very low heat until chips are melted and smooth. (Mixture will be stiff.)

Add sweetened condensed milk and vanilla to chocolate mixture; mix well. Add chocolate mixture to flour and nuts; mix well.

Shape 1 tablespoon of dough around each candy kiss, covering it completely. Shape into a ball and place 1 inch apart on an ungreased cookie sheet. Bake for 6 to 8 minutes. Do not overbake. Cookies will be soft and appear shiny but will become firm as they cool. Remove from cookie sheets. Cool 15 minutes or until completely cooled.

Chocolate Topping:

Melt chocolate chips in a small saucepan with vegetable oil and stir until smooth. Dip just the top of the treat into the melted chocolate and set on rack to cool and firm chocolate.
