We have a birthday baby! Birthday wishes go out to Luanne who lives in Deltona, Florida. Lou is such a nice lady, and makes a point to participate in A to Z Recipes in every way possible. I was lucky enough to have met her during a Florida Bunch get-together last year. She is originally from Ohio (moved to FL in '87), enjoys cooking, crafting (donates her goods to the local library to raise money for books) and has a large family (6 children, 14 grandchildren and 5 greats). Please drop by the A to Z Discussion Forum to send Lou a personal wish.
Happy 45th Anniversary to Pat and her husband in Minden, Nevada!. Like so many of you who have maintained a long and prosperous marriage, its easy to see why Pat would. She is such a dear person.

The Necklace

The cheerful little girl with bouncy golden curls was almost five.
Waiting with her mother at the checkout stand, she saw them, a circle of
glistening white pearls in a pink foil box.
"Oh mommy please, Mommy. Can I have them? Please, Mommy, please?"
Quickly the mother checked the back of the little foil box and then looked back
into the pleading blue eyes of her little girl's upturned face.
"A dollar ninety-five. That's almost $2.00. If you really want them, I'll think
of some extra chores for you and in no time you can save enough money to buy
them for yourself.
Your birthday's only a week away and you might get another crisp dollar bill
from Grandma."
As soon as Jenny got home, she emptied her penny bank and counted out 17
pennies. After dinner, she did more than her share of chores and she went to the
neighbor and asked Mrs. McJames if she could pick dandelions for ten cents. On
her birthday, Grandma did give her another new dollar bill and at last she had
enough money to buy the necklace.
Jenny loved her pearls. They made her feel dressed up and grown up.
She wore them everywhere, Sunday school, kindergarten, even to bed.
The only time she took them off was when she went swimming or had a bubble bath.
Mother said if they got wet, they might turn her neck green.
Jenny had a very loving daddy and every night when she was ready for bed, he
would stop whatever he was doing and come upstairs to read her a story. One
night as he finished the story, he asked Jenny, "Do you love me?"
"Oh yes, daddy. You know that I love you."
"Then give me your pearls."!
"Oh, daddy, not my pearls. But you can have Princess, the white horse from my
collection, the one with the pink tail. Remember, daddy? The one you gave me.
She's my very favorite."
"That's okay, Honey, daddy loves you. Good night." And he brushed her cheek with
a kiss.
About a week later, after the story time, Jenny's daddy asked again, "Do you
love me?"
"Daddy, you know I love you."
"Then give me your pearls."
"Oh Daddy, not my pearls. But you can have my baby doll. The brand new one I got
for my birthday. She is beautiful and you can have the yellow blanket that
matches her sleeper."
"That's okay. Sleep well. God bless you, little one. Daddy! loves you."
And as always, he brushed her cheek with a gentle kiss.
A few nights later when her daddy came in, Jenny was sitting on her bed with her
legs crossed Indian style.
As he came close, he noticed her chin was trembling and one silent tear rolled
down her cheek.
"What is it, Jenny? What's the matter?"
Jenny didn't say anything but lifted her little hand up to her daddy.
And when she opened it, there was her little pearl necklace. With a little
quiver, she finally said, "Here, daddy, this is for you."
With tears gathering in his own eyes, Jenny's daddy reached out with one hand to
take the dime store necklace, and with the other hand he reached into his pocket
and pulled out a blue velvet case with a strand of genuine pearls and gave them
to Jenny.
He had them all the time. He was just waiting for her to give up the dime-store
stuff so he could give her the genuine treasure. So it is, with our Heavenly
Father. He is waiting for us to give up the cheap things in our lives so that he
can give us beautiful treasures.
Isn't God good? Are! you holding onto things that God wants you to let go of?
Are you holding on to harmful or unnecessary partners, relationships, habits and
activities that you have come so attached to that it seems impossible to let go?
Sometimes it is so hard to see what is in the other hand but do believe this one
thing.
God will never take away something without giving you something better in its
place.
You can do two things with this story:
A. Pass it on and let others be touched by its message;
B. Throw it away and not let it touch your heart.

New Uses for Everyday Things

USE WHITE VINEGAR TO:
1. Pinch-hit for lemon in a savory recipe. Use 1/2 teaspoon of vinegar in place
of 1 teaspoon of lemon juice.
2. Remove coffee or tea stains from the bottom of a cup. Swish 2 tablespoons of
vinegar around in the cup, then wash as usual.
3. Treat oily hair. Vinegar is a good degreaser for oily hair because it helps
adjust pH levels. Shampoo your hair as usual, rinse, then pour 1/4 cup over it
and rinse again.
4. Wipe salt stains off boots. Dip a cloth or an old T-shirt into vinegar, then
wipe away the white residue.
5. Make wool sweaters fluffier. Drop in a couple of capfuls of vinegar during
the rinse cycle for an extra-soft feel.
6. Deodorize a garbage disposal. Make vinegar ice cubes and feed them down the
disposal. After grinding, run cold water through the drain.
7. Clean a teakettle or a coffeemaker. Boil a mixture of water and vinegar in a
teakettle, then wipe away the grime. Fill the reservoir of a coffeemaker with a
mixture of vinegar and water and run it through a brewing cycle. Follow this
with several cycles of water to rinse thoroughly.
8. Clean a dishwasher. Once a month, with the machine empty, run a cup of
vinegar through an entire cycle to reduce soap buildup on the inner mechanisms
and glassware.
9. Remove stubborn price tags or stickers. Paint them with several coats of
vinegar, let the liquid soak in for five minutes, then wipe away the residue.
10. Kill weeds between cracks in paving stones and sidewalks. Fill a spray
bottle with straight vinegar and spray multiple times. (Be careful not to get
any on the surrounding grass, as it will kill that too.) (I also use vinegar and
newspapers to clean my windows.)

SOFT APPLE CIDER COOKIES

1 cup firmly packed light brown sugar
1/2 cup Fleischmann's?® Move Over Butter Spread, softened
1/2 cup apple cider
1/2 cup Egg Beaters?® Healthy Real Egg Substitute
2-1/4 cups all-purpose flour
1-1/2 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. salt
2 medium apples, peeled and diced (about 1-1/2 cups)
3/4 cup chopped almonds
Cider Glaze:
1 cup Confectioner's sugar
2 Tbsp. apple cider
Blend sugar and cider until smooth.
Preheat oven to 375F. Coat baking sheets with vegetable spray. In large bowl,
beat sugar and butter spread on medium speed of electric mixer until creamy.
Beat in cider and egg product. Blend in flour, cinnamon, baking soda and salt.
Stir in apples and almonds. Drop dough by tablespoonfuls onto prepared baking
sheets. Bake for 10 to 12 minutes, or until golden brown. Remove from sheets &
cool on wire racks. Frost with Cider Glaze.
Yield: 48 Cookies.
Per Cookie: 78 Cal; 3g Fat; 12g Carb; 3mg Cholesterol; 65mg Sodium.
Exchanges: 1 Starch; 1 Fat.
FESTIVE PORK

1 ( 3/4 pound) pork tenderloin, trimmed
1 tablespoon olive or vegetable oil
1/2 cup low-sodium beef broth, divided
2 tablespoons dried cranberries
1 1/2 teaspoons Dijon mustard
1 tablespoon orange juice concentrate
1 teaspoon cornstarch
Cut tenderloin into 12 slices; flatten to 1/4-inch thickness.
Brown in oil in a skillet over medium heat. Add 1/4 cup of the beef broth; cover
and simmer for 5 to 10 minutes or until meat is no longer pink. Remove meat to a
serving dish and keep warm.
Add cranberries, mustard and remaining broth to the skillet.
Combine orange juice concentrate and cornstarch until smooth; gradually add to
broth mixture, stirring constantly. Bring to a boil; cook and stir for 1 to 2
minutes. Pour over pork.
Serves 4.
Nutritional Analysis: One serving equals 162 calories, 92 mg sodium, 50 mg
cholesterol, 5 gm carbohydrate, 19 gm protein, 7 gm fat

PINEAPPLE SUMMER SHORTCAKES

This recipe was adapted from Dole Packaged Food Company. We managed to make it
45 calories lighter and lowered the fat by a full 5 grams!
1 can (8 oz) Dole pineapple chunks or slices in juice (not syrup)
3 oz light cream cheese, softened
1 Tbsp. honey
1/2 tsp. grated lemon peel
1 tsp. lemon juice
4 (1 oz) slices Sara Lee?® Free & Light pound cake
Assorted sliced fresh fruit such as strawberries, nectarines, raspberries or
blueberries
Drain pineapple, reserving 1 Tbsp. of juice. Beat together cream cheese, honey,
lemon peel, lemon juice and reserved juice in small bowl, until blended and
smooth.
Spoon filling evenly over pound cake slices. Arrange pineapple and fruit over
filling
Makes 4 Servings.
Per Serving: 167 Cal; 3g Total Fat; 32g Carbohydrate; 3g Protein; 10mg
Cholesterol; 206mg Sodium.
Exchanges: 1 Bread; 1 Fruit; 1/2 Protein; 1/2 Fat.
BAKED ZITI WITH MEATBALLS

Makes 6 servings
10 ounces (300 g) ziti or penne
1 15-ounce (450 ml) container low-fat ricotta cheese
1 cup (116 g) non-fat mozzarella cheese, grated
3 tablespoons (15 g) Parmesan cheese
1 28- ounce (840 g) can pureed tomatoes with basil
1/8 teaspoon (0.6ml) garlic powder
1/8 teaspoon (0.6 ml) dried red pepper flakes
Meatballs:
1 pound (480 g) ground sirloin
1/8 teaspoon (0.6ml) garlic powder
1/8 teaspoon( 0.6 ml) onion powder
1/4 cup (( 113 g) rolled oats
2 ounces (60 ml) egg substitute
1 tablespoon (15 ml) water
1/8 teaspoon 0.6ml) kosher salt
freshly ground pepper
olive oil cooking spray
Preheat oven to 375 ?° F(190?° C), Gas Mark 5.
In a bowl stir together the ground sirloin, garlic and onion powder, rolled
oats, egg substitute, water, salt and pepper. Coat a nonstick skillet with
cooking spray.
Make 1-inch in diameter meatballs and saut?© in batches, on all sides until
browned and cooked through. Set aside.
In a large pot of water cook the pasta as per package directions for al dente.
Drain and set aside.
In a bowl combine the ricotta, mozzarella and Parmesan cheeses. Add the garlic
powder and red pepper flakes to the canned tomato puree.
Place 1/4 cup tomato puree in the bottom of a casserole. Top with a layer of
meatballs, dollops of cheese mixture and tomato puree. Layer the casserole
topping with a few dollops of cheese mixture.
Bake in oven for 45 minutes until the ricotta is browned and the casserole is
hot or cover and freeze. To prepare later, place in the oven and bake until hot
or microwave.
Per Serving: 487 calories (22% calories from fat), 36 g protein, 12 g total fat
(5.2 g saturated fat), 55 g carbohydrates, 4 g dietary fiber, 51 mg cholesterol,
925 mg sodium
Diabetic exchanges: 4 lean protein, 3 1/2 carbohydrate (2 1/2 bread/starch), 3
vegetable
CONFECTIONER'S SUGAR REPLACEMENT

2 cups nonfat dry milk powder
2 cups cornstarch
1 cup granulated sugar replacement
Combine all ingredients in food processor or blender. Whip until well blended
and powdered.
Yields 4 cups.

CRUSTLESS CHEDDAR BROCCOLI QUICHE

Makes: 6 servings
1 tsp. canola oil
1/4 cup finely chopped onion
1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained
2 cups cholesterol-free egg product
1/2 cup BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese
1/8 tsp. black pepper
PREHEAT oven to 350?°F. Heat oil in small nonstick skillet on medium-high heat.
Add onions; cook 5 minutes or until onions are tender, stirring occasionally.
Add broccoli; mix well. Spoon into 9-inch pie plate sprayed with cooking spray.
MIX remaining ingredients until well blended; pour over broccoli layer.
BAKE 45 to 50 minutes or until center is set and top is golden brown.

ORANGE COTTAGE CHEESE MUFFINS

Makes 2 servings
2 tablespoons unbleached flour, white
1/2 tablespoon buckwheat flour or whole wheat flour
1 1/2 tablespoons cornmeal, yellow (preferably stone-ground)
3/8 teaspoon baking powder, double-acting
1/4 teaspoon salt
1/2 packet artificial sweetener (equal to 1/4 cup sugar)
3/16 egg
1 1/2 tablespoons cottage cheese, low-fat
1 tablespoon buttermilk, low-fat
1/2 tablespoon orange juice, fresh
3/16 teaspoon orange zest, grated
1/2 tablespoon vegetable oil
1/2 teaspoon raisins
1. Preheat oven to 400??F.
2. In a large bowl, combine the flours, cornmeal, baking powder, salt, and
sweetener; mix well.
3. In a small bowl, beat eggs lightly; mix in the cottage cheese, buttermilk,
orange juice, zest, oil, and raisins.
4. Make a well in the center of the flour mixture and add liquid ingredients all
at once. Stir with a fork just enough to blend ingredients.
5. Fill muffins cups 2/3 full. Bake in a 400??F oven until golden brown, about 20
minutes.
6. Turn out of cups and serve hot or cool, or wrap airtight and refrigerate or
freeze. To reheat muffins, wrap in foil and place in a 350??F oven for 15 minutes
if chilled, 25 minutes if frozen.

SPICED BAKED APPLES

Makes 2 servings
2 apples, medium, for cooking
1/4 cup water
1/2 teaspoon lemon juice, fresh
cinnamon, mace, and nutmeg, ground
1. Preheat oven to 375?°F.
2. Core apples to within ?? inch of bottom, leaving an inch-wide cavity. Peel
about a 1-inch strip of skin from stem end of each apple.
3. Arrange apples in an 8-inch square or 9-inch round baking pan. Combine water
and lemon juice; pour over apples. Sprinkle a pinch of cinnamon, mace, and
nutmeg on each apple.
4. Cover and bake for 50-60 minutes, until apples are tender. Or put in
microwave on HIGH for about 4-6 minutes, until apples are tender, turning dish
about halfway through the cooking time.
Food exchanges per serving: 2 FRUIT

LEMONADE CHEESECAKE
Prep Time: 15 min
Total Time: 4 hr 15 min
Serves: 8
1 pkg. (8 oz.) PHILADELPHIA Fat Free Cream Cheese, softened
1 tsp. CRYSTAL LIGHT Lemonade Flavor Low Calorie Soft Drink Mix
1/4 cup cold fat free milk
1 tub (8 oz.) COOL WHIP FREE Whipped Topping, thawed
1 ready-to-use reduced fat graham cracker crumb crust (6 oz. or 9 inch)
BEAT cream cheese and drink mix in large bowl with electric mixer on medium
speed until well blended and smooth. Gradually add milk, mixing until well
blended. Gently stir in whipped topping. Spoon into crust.
REFRIGERATE 4 hours or until firm. Garnish with fruit, if desired.
Diet Exchange:
1-1/2 Carbohydrate, 1 Meat (VL), 1 Fat
