TGIF. We have birthday babies! First is Leen from Houston,
Texas, who celebrates today. She sent me the most touching yet humorous birthday babies submission.
Leen has had a very rough go of things since an auto-pedestrian accident in January, 2001. The accident set off a chain
reaction of medical complications which included badly broken bones, a blood clot, and eventually a stroke. With the loving support of her hubby
Mike, she is on the mend. I hope she will visit the QT forum and share her heart-warming
journey. Last is my precious "baby"
Trey, who will turn 15 on Sunday. You hear snippets of him in issues, but unless you know the miraculous story of how he
blossomed from a troubled child into a loving and generous young man, you may not appreciate all he has become. When people meet him, the most common remark is
"what a wonderful guy!" And... he is. Please drop by the A to Z Discussion Forum QT to send
Leen and Trey a personal wish.
In this issue, I have a few Caramel Icing recipes (made the old fashioned way without confectionary sugar)
requested by Leen, our birthday baby. Then I have some recipes for my sweetheart of a son,
Trey. Since Sunday is his birthday as well as our theme issue posting, I decided to do some goodies for him today.
I will head to Florida on Tuesday to visit with our a2z Florida Bunch. If you live in the Leesburg area, please join us at our get-together. You can read more about it

Discussion Forum section of this issue. I am trying to get my duckies in a row in order to get issues out to you during my absence. If I can squeeze in some
work here during the day, I should make it. Of course, most of my other free time will be spent reciting lines with my daughter,
Angela. She is performing in her high school play next week. I will be away, but her father has promised to attend and video the play so I can enjoy the
fruits of "our" labor, lol. We'll see you here on Sunday for the monthly theme issue of

Note: I am not sure of the source of this, but it is something I use as a recipe for parenting.

HELPFUL HINTS
(Some of these are wonderful!)
1. When your hands are badly stained from gardening, add a teaspoon of sugar to the soapy lather you wash them in.
2. Before emptying the bag of your vacuum cleaner, sprinkle water on the newspaper into which it is emptied, and there will be no scattering of dust.
3. To whiten laces, wash them in sour milk.
4. Dip a new broom in hot salt water before using. This will toughen the bristles and make it last longer.
5. Try waxing your ashtrays. Ashes won't cling, odors won't linger and they can be wiped clean with a paper towel or disposable tissue. This saves daily
washing.
6. Plant a few sprigs of dill near your tomato plants to prevent tomato worms on your plants.
7. Marigolds will prevent rodents.
8. Spray garbage sacks with ammonia to prevent dogs from tearing the bags before picked up.
9. You can clean darkened aluminum pans easily by boiling in them two (2) teaspoons of cream of tartar mixed in a quart of water. Ten (10) minutes will do it.
10. Soak colored cottons overnight in strong salt water and they will not fade.
11. To dry drip-dry garments faster and with few wrinkles, hang garment over the top of a dry cleaner's bag.
12. If a cracked dish is boiled for 45 minutes in sweet milk, the crack will be so welded together that it will hardly be visible, and will be so strong it will stand the
same usage as before.
13. Potatoes soaked in salt water for 20 minutes before baking will bake more rapidly.
14. Sweet potatoes will not turn dark if put in salted water (5 teaspoons to 1 quart of water) immediately after peeling.
15. Let raw potatoes stand in cold water for at least 1/2 hour before frying to improve the crispness of French fried potatoes.
16. A few drips of lemon juice in the water will whiten boiled potatoes.

A couple had been debating buying a vehicle for weeks. He wanted a truck. She wanted a fast little sports car so she could zip through traffic around town. He
would probably have settled on any beat up old truck, but everything she seemed to like was way out of their price range.
"Look!" she said, "I want something that goes from 0 to 200 in just a few seconds. Nothing else will do. My birthday is coming up, so surprise me!"
He did just that. For her birthday, he bought her a brand new bathroom scale.
Nobody has seen or heard from him since.

CARAMEL ICING I
This is for our birthday baby Leen in Houston, Texas
2 cups brown sugar
1 cup white sugar
1 tablespoon white syrup
1 cup cream
1 teaspoon vanilla
Cook together all ingredients except vanilla until mixture forms soft ball when dropped into cold water. Add vanilla and stir until desired consistency to spread.
CARAMEL ICING II

1 lb brown sugar
1 cup cream
1/2 cup butter
1 teaspoon vanilla
Mix all ingredients together, boil 20 minutes; then beat a little and spread on cooled cake.
SPICE CAKE WITH EASY CARAMEL ICING
This is for our birthday baby Leen in Houston, Texas
INGREDIENTS:
2 cups all-purpose flour
1 1/3 cups sugar
1 tablespoon plus 1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup shortening
1 cup milk
1 teaspoon vanilla
2 large eggs
Easy Caramel Icing (recipe follows)
PREPARATION:
Sift together flour, sugar, baking powder, salt, cinnamon and nutmeg. Add shortening, milk, and vanilla; beat on slow to medium speed of electric mixer for 2
minutes. Scrape sides and bottom of mixing bowl several times. Beat in eggs and continue to beat for 2 minutes longer. Spoon batter into a generously greased and
floured 9x13x2-inch baking pan. Bake at 350?° for 40 to 45 minutes. Cool and frost with caramel icing (below) or cream cheese icing.
Easy Caramel Icing
1 1/2 cups brown sugar, packed
1/4 cup milk
2 tablespoons butter
1 teaspoon vanilla
In a saucepan, combine brown sugar, milk, and butter. Stirring constantly; bring to a boil and boil for 3 minutes. Remove from heat and add vanilla. Let cool to
lukewarm. Beat until creamy and thick enough to spread. If too thick, add a little more milk or a small amount of cream.
BACON WRAPPED WATER CHESTNUTS
Teens not only love to eat these, they love to prepare them too!
1 (8 oz.) can water chestnuts, drained, cut in half
1/4 c. soy sauce
6 slices bacon, cut in half
Power: High.
Microwave Time: 6 to 7 minutes.
Marinate water chestnuts in soy sauce 30 minutes. Place bacon on paper towels. Cover with paper towels. Microwave at High 3 minutes. Wrap each water chestnut
with strip of bacon; secure with toothpick. Place on plate lined with paper towels. Microwave at High 3 to 4 minutes until bacon is crisp.
Yield: 12 water chestnuts.
GROUND BEEF DIRTY RICE
This one won an industrious teen a blue ribbon in a 4H cooking competition.
1 1/4 lbs. ground beef
1/2 c. diet butter
2 c. instant rice
1 (10 oz.) can French onion soup
1 can water
4 oz. can drained mushrooms
1 tbsp. Creole seasoning
In a medium pan, saut?© ground beef until brown. While meat is browning, in large skillet melt butter. Add uncooked rice. Stir until brown, about 6 minutes. When
rice is brown, add onion soup, water, mushrooms and seasoning. Drain meat, mix with rice mixture. Bring to boil. Turn off heat, cover and let stand 10 minutes.
VELVEETA LOG
This is a hit at teen parties. The kids love preparing it themselves, too.
8 oz. box Velveeta cheese
8 oz. tub cream cheese (we use the foil-packaged cream cheese)
7 oz. can green diced chilies, drained
Let cream cheese and Velveeta soften to room temperature. Roll Velveeta between 2 sheets of waxed paper with rolling pin until flat. Spread cream cheese over
rolled Velveeta. Spread green chilies over sour cream layer. Roll Velveeta into a log and refrigerate before serving. Serve with large dip size corn chips.

MEXICALI PORK SOUP
A prize winner in a teen cooking contest.
1-1/2 pounds coarsely ground pork loin
1 cup chopped onions
2 15-ounce cans black beans, drained and rinsed
1 15-ounce can whole kernel corn, undrained
1 14-1/2-ounce can diced tomatoes, undrained
2 4-1/2-ounce cans chopped green chilies, undrained
1 14-1/2-ounce can beef broth
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon chopped fresh cilantro
Combine pork and onions in large skillet. Cook over medium-high heat until pork is no longer pink; drain. Combine pork mixture, beans, corn, tomatoes, chilies, broth,
cumin, chili powder and cilantro in large saucepan. Bring to a boil. Reduce heat to medium-low; simmer, covered, 15
minutes.
Makes 8 servings.

Protein: 30 g
Fat: 6 g
Sodium: 517 mg
Cholesterol: 50 mg
LOW-FAT TAPIOCA PUDDING
2 3/4 cups skim milk
3 tablespoons quick-cooking tapioca
1/4 cup sugar
1/4 cup Splenda
2 egg whites, beaten
1/2 teaspoon grated lemon zest
1 teaspoons vanilla extract
In a large saucepan, combine milk, tapioca, sugar, Splenda, egg whites, and lemon zest: let stand 5 minutes. Cook over medium heat, whisking until the mixture comes
to a full boil; remove from heat and stir in vanilla extract.
Let pudding cool approximately 20 minutes; stir and then spoon into 6 servings dishes (pudding will thicken as it cools). Cover pudding dishes with plastic wrap.
Refrigerate until cool and ready to serve.
Makes 6 servings.
Each Serving Totals - 0 Fat Grams, 83.8 calories, 2 WW Points

DIABETIC DESSERT
1/3 c. butter, softened
1/4 c. brown sugar
2 tsp. liquid sweetener or 1/3 c. Sprinkle Sweet
1 egg
1 1/3 c. flour
3 tbsp. cocoa
2 tsp. baking powder
1/2 tsp. soda
1 tsp. vanilla
1/2 c. skim milk
Combine butter, brown sugar, sweetener, and egg. Beat 2 minutes at high speed. Add remaining ingredients and blend 2 minutes at low speed. Pour into 8 inch square
pan and sprinkle with chopped nuts. Bake at 350 degrees for 25 to 30 minutes. Frost with diabetic whip, if desired.
Exchange: 9 slices: 1 bread, 2 fats.

EASY SPAGHETTI
Prep/Total Time: 30 minutes
1/2 pound lean ground beef
1/4 cup chopped onion
2 cups meatless spaghetti sauce
1 cup water
3 ounces uncooked spaghetti, broken
1/4 pound reduced-fat process cheese (Velveeta), cubed
2 teaspoons grated Parmesan cheese
1. In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
2. Stir in the spaghetti sauce, water, and spaghetti; bring to a boil.
3. Reduce heat; cover and simmer for 20 minutes or until spaghetti is tender. Add process cheese; stir until melted. Sprinkle with Parmesan cheese.
Serves: 2
Per serving: (1 1/2 cups) 570 calories, 15 g fat (8 g saturated fat), 81 mg cholesterol, 2,115 mg sodium, 63 g carbohydrate, 5 g fiber, 43 g protein.

BACON AND CHEESE STUFFED CHICKEN BREASTS
This rich chicken dish is impressive and delicious.
Servings: 4
Prep Time: 45 minutes
Cook Time: 30 minutes
Total Time: 75 minutes
4 boneless, skinless chicken breast halves
4 bacon slices, cooked and crumbled
2 ounces sharp cheddar cheese, cut into 4 pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika (optional)
1 tablespoon olive oil
1 teaspoon cornstarch
2/3 cup reduced-sodium chicken broth
2 tablespoons finely chopped parsley
1. With a sharp knife, cut a pocket into the thickest side of each chicken breast. Stuff each with 1/4 of the bacon and a piece of cheese. Seal with a toothpick
(remove before serving). Sprinkle chicken with salt, pepper and paprika.
2. Heat oil in large nonstick skillet over medium-high heat. Add chicken and cook 4 minutes per side, until browned. Reduce heat to medium-low; cover and cook 10
minutes until chicken is cooked through. Remove from skillet and cover loosely with foil to keep warm.
3. Stir cornstarch into chicken broth with a fork until dissolved. Add to skillet and bring to a boil, scrapping up browned bits on bottom of skillet. Cook 3 minutes,
until sauce is thickened. Add chopped parsley. When serving, spoon sauce over chicken.
Based on individual serving:
Calories: 260
Total Fat: 13 g
Carbohydrates: 1 g
Protein: 33 g
