I know you are as grateful for Skirnir??s wonderful issue posted yesterday as I am. Thanks, Skirnir! And, the issue Sunday of our Seafood for All Seasons theme was a real biggie, wasn??t it? Those theme issues can be a real pain to put together but thanks to our wonderful submitters, there is much less work for me to do. Most of you are sending in recipes that require less edits. I am so very grateful and we all benefit from the extra time you take before sending them off to me. I hope you are sending in your bread favorites for THIS month??s theme (see theme details a bit later in this issue). I am still away. Hopefully I have had some rest and quality time with my kids and grandkids by now. And, maybe I??ve tried a few new recipes out on them. Needless to say, I love to cook. But there??s no better way to ensure a recipe is perfect than by testing it out on loved ones. Now, that can be a bit tricky. Like my son, Trey, who will rarely be the FIRST to sample a new recipe. I suppose he needs the assurance of seeing his sister ???live through??? the first bite, lol. My oldest daughter, Joanna, and my Angela are great ???guinea pigs???. Oops! Uh, they are more adventurous? Tomorrow I have a special treat for peanut butter lovers. Barbara from Chula Vista, CA, sent along a batch of recipes which I shall post with a few of my own and some from other readers. It??s a terrific set of recipes, especially for the holidays. He arose, cooked breakfast for his mate, awakened the kids, set out their school clothes, fed them breakfast, packed their lunches, drove them to school, came home and picked up the dry cleaning, took it to the cleaners and stopped at the bank to make a deposit, went grocery shopping, then drove home to put away the groceries, paid the bills and balanced the check book. He cleaned the cat's litter box and bathed the dog. Then it was already 1 P. M. and he hurried to make the beds, do the laundry, vacuum, dust, and sweep and mop the kitchen floor. Ran to the school to pick up the kids and got into an argument with them on the way home. Set out milk and cookies and got the kids organized to do their homework, then set up the ironing board and watched TV while he did the ironing. At 4:30 he began peeling potatoes and washing vegetables for salad, breaded the pork chops and snapped fresh beans for supper. After supper, he cleaned the kitchen, ran the dishwasher, folded laundry, bathed the kids, and put them to bed. At 9 P. M. he was exhausted and, though his daily chores weren't finished, he went to bed where he was expected to make love which he managed to get through without complaint. The next morning, he awoke and immediately knelt by the bed and said, "Lord, I don't know what I was thinking.! ! I was so wrong to envy my wife's being able to stay home all day. Please, oh! please, let us trade back." The Lord, in his infinite wisdom, replied, "My son, I feel you have learned your lesson and I will be happy to change things back to the way they were. You'll just have to wait nine months, though. You got pregnant last night." A preacher went to his church office on Monday morning and discovered a dead mule in the church yard. He called the police. Since there did not appear to be any foul play, the police referred the preacher to the health department. They said since there was no health threat that he should call the sanitation department. The sanitation manager said he could not pick up the mule without authorization from the mayor. Now the preacher knew the mayor and was not too eager to call him. The mayor had a bad temper and was generally hard to deal with, but the preacher decided that he had to call him anyway. The mayor did not disappoint. He immediately began to rant and rave at the preacher and finally said, "Why did you call me anyway? Isn't it your job to bury the dead?" The preacher paused for a brief prayer and asked the Lord to direct a response his way. Canada 1 cup diced cooking apples 1 tablespoon butter 1 ?? cups flour 2 tablespoons sugar 1 tablespoon baking powder ?? teaspoon salt 2 eggs, beaten 1 cup milk 2 tablespoons melted butter 3 tablespoons sugar 1 teaspoon cinnamon no-stick spray 1 stick butter, softened (for spreading) Mix 3 tablespoons sugar and cinnamon and set aside. Cook apples in 1 tablespoon butter until barely tender. Set aside. Sift together flour, sugar, baking powder and salt. Combine eggs, milk, melted butter and undrained apples. Add to dry ingredients and stir until moistened. Add 1 tablespoon cinnamon-sugar mixture. Spray griddle or pan. Use 2 tablespoons batter per flapjack. Cook as you would pancakes. Top hot flapjacks with soft butter and additional cinnamon-sugar. Yields 18-20 flapjacks. Note: If apples are very tart, they may need to be sweetened slightly. Bring marinade just to a boil, stirring (marinade will rise and foam), and remove pan from heat. In a blender puree marinade in 2 batches, transferring it as pureed to a bowl. Cool marinade to room temperature and spoon off any remaining foam. In large Ziploc bag, combine pork and marinade. Chill, turning bag once or twice, 8-24 hours. Let pork come to room temperature, about 40 minutes. Transfer marinade to a saucepan and bring just to a boil. Preheat oven to 375F. Pat pork dry with paper towels and season with salt and pepper. Heat oil in roasting pan over high heat and brown pork on all sides. Roast pork in middle of oven, basting frequently with some marinade, until a meat thermometer registers 155F, about 1 to 1 1/2 hours. Can make sauce with remaining marinade and pan drippings.
