Hello, everyone. This is my second time doing an issue of A to Z recipes
and after this, unless I start trying a bunch more recipes, I am going
to be out of tried and true recipes! (Except for baking and cookie
recipes as that is what I love to do, but can not, as I am on a diet.)
These are all recipes I have tried, unless I say otherwise in my
comments for the recipe. They are all well liked in my house which
includes myself, my husband and my five year old, Zachary. We all
enjoyed summer, with our first pool pass. Zachary took swimming lessons
this summer. Zachary started kindergarten last week and seems to be
enjoying it and will be having his first music lesson on Tuesday. He
wants to learn violin, but we will see what he thinks after a few music
lessons. Hope you all find something that you would like to try! If you
try something in this post, please send me your comments on the recipe.
Nothing is more pleasing than to know that someone else tried one of my
shared recipes and enjoyed it.

A to Z Recipes continues with its popular Theme Issues.  We 
will share theme recipes and post them on the first Sunday of 
each month.  Send your recipes no later than the last Friday 
of each month to have them posted in the next monthly theme 
issue.  You may send in as many recipes in each email as your 
little heart desires.  If the number of recipes exceeds those 
needed in the issue, the publisher will post as many from every 
submitter as possible and save the remaining recipes for regular, 
daily issues.  The rules for recipe submissions for the monthly
theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:

As a service to your fellow readers, please send only recipes
that are in a form that others could easily copy and save for 
their own use.  Recipes that would require a lot of editing or
cleaning up or use non-standard measurements should not be 
submitted.  This would include recipes with traces from forwarding,
those in ALL caps (or NO caps), and recipes that do not contain
the standards for recipes (title, ingredient list, and instructions).
Recipes without a name/location of sender will NOT be posted.  
A to Z Recipes protects the privacy of its readers and does NOT 
publish email addresses.  There will be no exceptions.  Send recipes

Our Current Monthly Theme: "Our Daily Bread"
Yes, the aroma of fresh bread baking in the oven cannot be duplicated.
You might start looking through those recipe files for your favorite
bread recipes.  We've done the quick bread recipes before but we
can always use more, so you will be able to include any leavening
you choose.  Please share with our readers the recipes you enjoy when
you want to serve freshly baked bread.  This will be an exciting theme
when we can collect and share favorites such as white bread, perhaps a
whole wheat or cheese bread; how about some foccacia, or bruschetta? 
Don't forget to include the special date, banana and other fruit varieties. 
Try sharing some of those with us, as well as any you feel others
would enjoy collecting and preparing. Look through those recipe files, 
cookbooks and clippings for some great recipes to submit to November's 
Theme Issue.

The deadline for next month's theme issue is Friday, October 31st.

How to Make Eggshell Chalk

This chalk is for drawing on sidewalks only, not for chalkboards. 
You will need: 

The shells of 6 eggs 
1 tsp very hot water from the tap 
1 tsp flour 

Wash the eggshells well, so they don't have any egg left in them. Dry them and grind them with a rock on the sidewalk or other concrete surface. Make sure the rock you're using for grinding is clean so you don't get dirt ground in with the eggshells. Grind the eggshells into a fine powder. You'll need one soup-spoonful of this powder to make a stick of chalk.

When you have enough powder to make a stick of chalk, sift or pick out any little bits of eggshell that are still not ground up and throw them away. Scoop the powder into a cup or paper towel and bring it into the house for the next part.

Stir the flour and hot water together in a small dish to make a paste. Put the soup-spoonful of eggshell powder into the paste and mix well. It may help to mash it with the back of the spoon. Add a few drops of food coloring if you want colored chalk.

Shape this mixture into a chalk stick. Then roll it up in a strip of paper towel and set aside to dry. (Drying takes about three days.) Then just peel the paper off one end and you're ready for some sidewalk art. 

For really big sticks of chalk, try making 3 times this recipe, and stuff the mixture into an old toilet paper tube. When it's dry, you can peel away the cardboard as you use it.

OUR MENU:


Salisbury Steaks in Onion Gravy
Garlic Mashed Potatoes
Side Salad and/or Steamed vegetables
Wheat Rolls


Salisbury Steaks in Onion Gravy 
(From Best Recipes, Campbell??™s)
Makes 6 Servings

10 1/2 ounce can cream of onion soup
1 1/2 pounds ground beef
1/2 cup bread crumbs
1 medium egg
1/4 teaspoon salt
1 dash pepper
1 tablespoon flour
1/4 cup catsup
1/4 cup water
1 teaspoon Worcestershire sauce
1/2 teaspoon mustard

In bowl, combine 1/3 cup soup with beef, crumbs, egg, salt and pepper.
Shape into 6 oval patties. In skillet, brown patties, pour off fat.
Remove patties. Gradually blend remaining soup into flour until smooth.
Add to skillet remaining ingredients; stir to loosen browned bits. Add
browned patties to skillet and cover. Cook over low heat about 20 minutes
or until done. Stir occasionally.


Garlic Mashed Potatoes 
(Better Homes and Gardens)
Makes 6 Servings

2 pounds potatoes
1 cup onion chopped
4 cloves garlic, minced
2 tablespoons margarine
1/2 cup milk, warmed

In a large saucepan cook potatoes, covered, in boiling water for 20 to
25 minutes or until tender, drain. Meanwhile, in a saucepan cook onion
and garlic in hot margarine or butter 10 to 12 minutes or until onion is
lightly browned, stirring occasionally. Set aside. Mash potatoes. Beat
in browned onion mixture and warmed milk to make potatoes light and
fluffy. Season as desired.


Steamed Vegetables

Take your favorite, or desired vegetable and add a small amount of an
Italian style salad dressing or marinade and steam your vegetables until
crisp tender.  We have started doing this and it is quite good!


Wheat Rolls 
(Created by my mother in law)
Makes 9 servings

3/4 cup flour
3/4 cup wheat flour
3/4 teaspoon salt
2 tablespoons sugar
1/4 ounces yeast
2 tablespoons olive oil
1/2 cup water

Mix ingredients in food processor until a solid clump forms. (Should be
moist, but not very sticky.) Let rise one hour. Pulse in food processor
for about five seconds. Let rise another hour or so. Portion into
greased muffin tin. Put damp paper towel on top of rolls, let rise half
an hour. Cook rolls in oven at 400 degrees for 10 to 15 minutes, or
until rolls come out easily.

(This is a very easy recipe for making bread rolls for the inexperienced
bread maker, or for someone who just doesn't want to have to knead it by
hand, but does not have a bread machine. Makes a fairly heavy loaf
because of the wheat flower.)

Cheese Potato Puff (Taste of Home)
Makes 12 Servings

12 medium potatoes, peeled and cubed
2 cups cheddar cheese, shredded, divided
1 1/4 cups milk
1/3 cup butter, softened
2 medium eggs, beaten

Place the potatoes in a saucepan and cover with water; cover and bring
to a boil. Cook until tender, about 15 to 20 minutes. Drain and mash.
Add 1 3/4 cups cheese, milk and butter; cook and stir over low heat
until the cheese and butter are melted. Fold in eggs. Spread into a
greased 13-inch by 9-inch baking dish. Bake uncovered at 350 degrees for
25-30 minutes. Sprinkle with the remaining cheese. Bake 5 minutes longer
or until golden brown.


Basic Apple Muffins (Joy of Cooking)
Makes 12 muffins

1 1/2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
2 medium eggs
3/4 cup sugar
1 1/2 cups grated apples (about 2 apples)
1/3 cup margarine or butter

Whisk together the flour, baking powder, cinnamon and baking soda. Set
aside. Whisk together in a large bowl eggs and sugar. Stir in the apples
and let stand for 10 minutes. Stir in melted butter. Add the flour
mixture and fold just until the dry ingredients are moistened. Do not
overmix, the batter should not be smooth. Preheat oven to 400 degrees.
Divide the batter amongst the greased muffin cups. Bake about 14 to 16
minutes or until toothpick inserted comes out clean. Let cool for 2 to 3
minutes before removing them from the pan and then serve as soon as
possible. 

(And hope you don't have a husband like mine, who eats six muffins
before you even have three eaten!)

Makes 8 Servings

2 1/2 cups bread flour
1/2 cup whole wheat flour
3/4 teaspoon salt
1/4 ounce yeast (2 1/4 teaspoons)
2 teaspoons honey
4 ounces apple juice concentrate
1/2 cup water
1 medium apple, peeled, cored and finely chopped

Throw all ingredients into bread maker according to manufacturers
directions and cook on whole wheat light setting.

Herb and Cheese Bubble Loaf (Better Homes and Gardens)
Makes 16 Servings

2 1/2 cups flour
1/4 ounce yeast
1 cup milk
1 tablespoon margarine, softened
4 ounces cheddar cheese, shredded (about 1 cup)
1/4 cup margarine melted
2 teaspoons dried parsley
1/2 teaspoon oregano
1/2 teaspoon marjoram

In a large mixing bowl combine 1 cup of the flour and yeast; set aside.
In a small saucepan, heat and stir milk, the 1 tablespoon butter and 1/2
teaspoon salt until warm (120 to 130 degrees) and butter almost melts.
Add milk mixture to dry mixture. Beat with an electric mixer on low to
medium speed for 30 seconds, scraping sides of bowl often. Beat on high
speed 3 minutes. Stir in cheese and as much of the remaining flour as
you can. Turn dough unto floured surface. Knead in enough remaining
flour to make a moderately stiff dough that is smooth and elastic (6 to
8 minutes total). Shape dough into a ball. Place in a lightly greased
bowl; turn once. Cover; let rise in a warm place till nearly double in
size (about 1 hour). Punch dough down. Turn dough out onto a lightly
floured surface. Cover and let rise for 10 minutes. Meanwhile, lightly
grease a 1 1/2 quart casserole or a 9x5x3 inch loaf pan. Stir together
the 1/4 cup melted butter, parsley, oregano and marjoram. Set aside. To
shape, on a floured surface roll out dough from center to edges, forming
an 8x6 inch rectangle; cut into 48 pieces. Gently roll each portion of
dough into a ball, tucking edges beneath. Roll each boll in butter
mixture. Arrange balls, smooth sides up, in prepared casserole or pan.
Cover, let rise in a warm place till nearly double (30 to 40 minutes).
Bake in a 375 degree oven 35 to 40 minutes or till bread sounds hollow
when tapped (cover loosely with foil the last 10 to 15 minutes to
prevent over-browning). Remove bread from casserole or pan. Serve warm.
Makes 1 loaf. (This can be made into muffins if desired. Use standard
cooking times for muffins/rolls.)

(This makes a great accompaniment to pasta and salad. We do not cut ours
into 48 equal pieces. We just roll balls of dough with our hands. It
makes a loaf of bread with easily separate-able chunks with herbs
throughout the loaf.)

Cheese Meat Loaf (Better Homes and Gardens)
Makes 6 servings

1 medium egg
1 cup bread crumbs
1/2 cup pasta sauce
2 cloves garlic, minced
1/2 teaspoon rosemary
8 ounces Italian sausage
1 pound ground beef
2 ounces mozzarella cheese, cubed
2 tablespoons pasta sauce
2 tablespoons mozzarella cheese, shredded

In a large bowl combine egg, bread crumbs, the 1/2 cup of pasta sauce,
garlic and rosemary. Remove casings from sausage, if using. Add ground
beef and sausage, mix well. Press two thirds of the mixture evenly in
the bottom of an 8x4x2 inch loaf pan. Make a 1/2 inch indentation down
the center of the meat mixture. Place the cheese cubes in indentation.
Pat remaining meat mixture evenly over the top. Bake, uncovered, in a
350 degree oven for 55 to 60 minutes until no pink remains until a
thermometer inserted in the thickest part of the loaf registers 170
degrees. Let stand for 10 minutes. To serve, transfer meat loaf to a
platter. Drizzle top with the 2 tablespoons of pasta sauce. Sprinkle
with the 2 tablespoons shredded cheese.

(Can be a little bit on the salty side, so if you are sensitive to salt,
then reduce the salt in the pasta sauce and the cheeses, if you can.)

Chocolate Chocolate Chip Cookies
Makes 48 Cookies

2 1/4 cups flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup margarine
3/4 cup sugar
1 teaspoon vanilla
2 medium eggs
12 ounces semisweet chocolate chips

Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter,
brown sugar, sugar and vanilla in mixing bowl until creamy. Beat in eggs
about 2 minutes or until light and fluffy. Gradually beat in flour
mixture. Stir in chocolate chips. Drop by rounded tablespoon onto
ungreased baking sheets. Bake in 375 degree oven 8 to 10 minutes or
until puffed. Let stand for 2 minutes; remove to wire racks to cool
completely.

Spiced Brown Rice Pilaf (Joy of Cooking)
Makes 4 Servings

2 tablespoons margarine
1/2 cup onion, chopped
1 clove garlic, minced
1 cup brown rice
2 tablespoons raisins
1 tablespoon cinnamon stick
3 cups chicken broth

Melt the margarine in a large saucepan over medium low heat. Add and
cook, stirring, until golden the onion. Add and cook, stirring, the
garlic for 1 minute. Add the rice, raisins and cinnamon stick. Stir to
combine. Add the chicken broth. Bring to a boil. Stir once, cover and
cook over medium-low heat until the stock is absorbed and the rice is
tender, about 50 minutes. Uncover and let stand for 5 minutes before
serving.

Cauliflower Casserole (Taste of Home)
Makes 6 Servings

1 medium head cauliflower, broken into florets
1 cup sour cream
4 ounces cheddar cheese, shredded
1/2 cup cornflakes, crushed
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/4 cup parmesan cheese, grated
paprika to taste

Place cauliflower and a small amount of water into a saucepan; cover and
cook for 5 minutes or until crisp-tender. Drain. Combine cauliflower,
sour cream, cheddar cheese, cornflakes and peppers; transfer to a
greased 2-quart baking dish. Sprinkle with parmesan cheese and paprika.
Bake, uncovered, at 325 degrees for 30 to 35 minutes or until heated
through.

Apple Yogurt Muffins (Quick Cooking 2002)
Makes 12 muffins

2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon cinnamon
8 ounces vanilla yogurt
1 medium egg
1/4 cup vegetable oil
2 tablespoons milk, skim
1 small apple, peeled and chopped
1/3 cup raisins, optional
2 tablespoons flour
2 tablespoons sugar
1/2 teaspoon cinnamon
1 tablespoon butter chilled

In a bowl combine the flour, sugar, baking powder and cinnamon. Combine
the yogurt, egg, oil and milk. Stir into dry ingredients just until
moistened. Stir in apple and raisins, if desired. Batter will be thick.
Fill greased or paper-lined muffin cups two-thirds full. For topping,
combine flour, sugar and cinnamon in a bowl. Cut in butter until
crumbly. Sprinkle over batter. Bake at 400 degrees for 20 to 24 minutes
or until a toothpick comes out clean. Cool for 5 minutes before removing
from pan to a wire rack. 

Per Serving: 208 calories, 6.4 g Fat, 1.3 g. Saturated Fat, 19.1 mg.
Cholesterol, 431.8 mg. Sodium, 34.6 g Total Carbohydrate, 1.1 g Dietary
Fiber, 3.8 g Protein, 184.5 mg Calcium 

(This can be lower in fat and calories if one uses light fat free yogurt
or even Splenda and omits the topping. I have tried this and felt it was
quite good. Looks to be a little high in salt, but I wonder if that is
because unsalted butter is not specified with the rest being the baking
powder.)

Crusty Mini-Loaves
The recipe is from Pillsbury's New Soup Chili & Bread Recipes. 

1 pkg. hot roll mix
1 cup water, heated to 120 to 130 degrees
2 Tbsp. oil
2 Tbsp. lime juice
1 egg white
1 tsp. water


In large bowl, combine flour mixture with yeast from foil packet and mix well. Stir in hot water, oil, and lime juice until the dough forms a ball. Turn dough out onto lightly floured surface and knead for 5 minutes, until smooth, using additional flour if necessary to prevent sticking. Cover dough with the bowl and let rest for 5 minutes. 

Divide dough into eight pieces. Shape each into individual round mini-loaves and place 2" apart on greased cookie sheets. In a small bowl, combine egg white and 1 tsp. water and beat until frothy. Brush each loaf with this mixture. Cover and let rise in warm place for 30 minutes. 

Heat oven to 350 degrees. Uncover loaves and brush again gently with egg white mixture. Bake loaves for 20-30 minutes or until golden brown. 8 mini loaves 

Calories per loaf: 230
Fat: 4 grams
Sodium: 400 mg
Protein: 10%
Thiamine: 25%
