A few days ago I was thinking of you when I sent a large tray of chocolate dipped cherries I did up to a party for friends who are getting married! I also made a large marble cake with chocolate frosting made from a recipe I picked up on the Newsletter! Today I noticed that one of our local grocery stores has blueberries on special, so I am going to get some and do something with them that I do every summer. I dip them in dark chocolate (as good quality as I can find) and set them onto a cookie sheet lined with parchment paper. Then I put them in the freezer for a few minutes, until the chocolate hardens. When I take them out, I remove the berries from the paper and put them into small snack size zipper bags and leave them in the freezer. Whenever you want a cool treat, just pull a bag out and feast away! The centers are like popcicle or slushie bites, and the chocolate is reason we're eating them in the first place, let's be honest here!! Hee hee! They are really, really yummy! Gradually stir in cocoa powder & milk while continuing to heat. You want the consistency to be thick but not solid as you add the milk & cocoa powder. Beat sugar into eggs. Stir hot chocolate/milk mixture into eggs. Add cream & vanilla extract. Cool. Just before adding to ice cream maker, stir a cup of ice cream mixture into almond butter. Once mixed, stir into rest of ice cream mixture. Freeze in ice cream maker according to manufacturer's instructions. Mix sugars, butter, vanilla & egg in large bowl. Stir in flour, baking soda & salt (dough will be stiff). Stir in chocolate chips & pecans. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8-10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.
