HOWEVER, you have to remember to reduce the amount of liquid in the recipe, because you use so much less "EQUAL" than you would "SUGAR".

*-=*=-* Walnut Blondie with Maple Butter Sauce *-=*=-*


Dough
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg, beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips

Preheat oven to 350 degrees F. Sift flour, add baking powder, baking soda & salt. Sift again. Add chopped nuts. Mix well & set aside.

Melt butter. Add brown sugar & mix well. Add egg & vanilla extract. Blend well. Add flour mixture, a little at a time, mixing well. Stir in white chocolate chips. Spread in a 9-inch square pan. Bake for 20 to 25 minutes or until a wooden pick inserted in center comes out clean or with slightly fudgy-looking crumbs. Serve with ice cream & Maple Butter Sauce.

Maple Butter Sauce
3/4 cup maple syrup
1/2 cup butter
3/4 cup brown sugar
1/2 cup walnuts, chopped (optional)

Combine syrup & butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Add walnuts, if desired. Serves 4.

Mud Hen Bars

1/4 cup margarine
1/4 cup butter
1 cup granulated sugar
1 egg
2 eggs, separated
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped nuts
1/2 cups semi-sweet chocolate chips
1 cup miniature marshmallows
1 cup light brown sugar, packed

Cream margarine, butter & sugar. Beat in whole egg & two egg yolks.
Sift flour, salt & baking powder together. Combine the two mixtures & blend thoroughly. Spread batter in 9 x 13-inch pan. Sprinkle nuts, chocolate pieces & marshmallows over top of cake batter. Beat two egg whites stiff; fold in brown sugar. Spread over cake & bake 30 to 40 minutes in a preheated oven at 350 degrees F. Cut into bars. Good warm or cold.
