-=*=-Almost any recipe can be made sugar *free* if you're creative.
-=*=-Instead of sugar, you can use a sugar substitute of equal value.
HOWEVER, you have to remember to reduce the amount of liquid in the recipe, because you use so much less "EQUAL" than you would "SUGAR".
-=*=-Apple sauce or any mashed fruit of your choice can be used in place of sugar in many a recipe.
-=*=-Instead of Chocolate you can use carob, which is very healthy &
sugar free* as well, or use cocoa & add your desired fruit.

Arizona Biltmore Resort & Spa Chocolate Linzer Tart
 
7 ounces butter
3/4 cup granulated sugar
1 egg
1/8 teaspoon vanilla extract
1 cup almond meal
1 tablespoon cinnamon
1/8 teaspoon baking powder
1 1/2 cups cake flour
1/4 cup cocoa powder
1/4 cup all-purpose flour
1 cup seedless raspberry jam

Cream together the butter & sugar. Add egg & vanilla extract; mix to combine. In a separate bowl, combine dry ingredients. Mix dry ingredients into butter mixture. Place mixture in the refrigerator to chill. Roll dough to 1/8-inch thickness. Line tart pan with dough, reserving some for the tops of the tarts. Fill tart shell with raspberry jam. Cut reserved dough into strips; place over the jam in a lattice design. Bake at 350 degrees F until the jam is set and the crust is golden.

*-=*=-* Chocolate Almond Brittle *-=*=-*


Chocolate Almond Brittle
 
1 pound butter, lightly salted
2 cups granulated sugar
1 package semisweet chocolate bits
1 pound whole almonds with brown skins still on (grind 25 almonds from the pound)

Put butter, sugar & whole almonds into heavy cast aluminum pan. Cook over high heat, stirring constantly. Reduce heat slightly after sugar melts to keep from turning too dark. Keep stirring briskly. Cook to almost hard crack stage, about 290 degrees F on candy thermometer. This will take about 10 to 12 minutes. Pour onto ungreased cookie sheets to about the thickness of an almond. Melt semisweet chocolate & smear on top of warm brittle. Sprinkle ground nuts on top of the chocolate. Cool & chill until chocolate hardens. Break into pieces.
