In a large mixing bowl, cream together shortening, cocoa, oil, sugar, eggs, and vanilla until well mixed. Add flour, salt, and baking powder. Mix well, then add walnuts and chocolate chips, if desired. (Dough will be very sticky and almost runny.) Refrigerate dough for 2 to 3 hours or overnight. Drop and gently roll dough by tablespoonfuls in a powdered sugar, being careful not to overhandle dough. Place on a greased or wax paper- covered cookie sheet. Bake for 9 to 10 minutes. Do not overbake. The cookie dough may be stored in the refrigerator for up to 5 days; baked cookies will store for at least 2 weeks, if well covered and refrigerated. These cookies freeze beautifully. Combine the flour, baking powder, sugar, & salt in a mixing bowl & stir together. Combine the applesauce, rice milk, & peanut butter in another bowl & whisk together until smooth. Pour into the flour mixture & stir together until fairly well blended, then use a whisk until the mixture is smooth. Stir in the chocolate chips & peanuts. Pour into a lightly oiled 9-inch round or square cake pan. Bake for 25 to 30 minutes or until golden on top, & a knife inserted into the center comes out with chocolate, but no batter. Allow to cool to room temperature or just warm, then cut into squares or wedges to serve.
