Orange Walnuts w/Chocolate Drizzles

1 1/2 cups sugar
1/2 cup orange juice
1 teaspoon grated orange peel
2 cups walnut halves
3-4 ounces semisweet chocolate chips, melted

You will need a candy thermometer for this recipe.
In a deep enough pan, with good heat retention, cook the sugar & orange
juice to soft ball stage. Remove from heat. Cool a bit, & add the orange
peel, then stir in the walnut halves. Stir until candy mixture has
become cloudy. It is important to reach the cloudy stage. Separate the
walnut halves to cool completely on waxed paper. You will need some
space for this. Take some of the cooled walnuts & drizzle very lightly
with the melted chocolate, not too much, so as not to overpower the
orange candy flavor achieved with the cooking. Just a dash to add
chocolate to offset the sweetness of the orange.

5 eggs
1 cup sugar
4 tbsp cocoa powder
1 cup whipping cream, chilled
1/4 tsp almond extract
1/2 cup maraschino cherries, chopped fine
1 tbsp liquid from the cherry jar
1 tbsp sugar

Preheat oven to 350F. Grease & dust a 12" x 20" x 1/2" cookie
sheet/jellyroll pan. In a large bowl, whip the egg whites until peaks
are firm but not stiff. Set aside only briefly. In a separate bowl,
froth the egg yolks, then add the cocoa powder & the sugar. Mix well, to
get volume, but do not overmix. Carefully add the chocolate mixture to
the egg whites, mixing & folding gently, but do not deflate the egg
whites too much. Bake at 350F for 20 minutes. Remove & cool. It's
basically a flat souffl?, so it will fall. This is normal. Turn the cake
over onto a clean dishtowel & carefully remove the pan. Cover with a
moist towel until cooled.

Whip the cream with the almond extract & the cherry liquid. Add the tbsp
of sugar. Stir in the chopped cherries. Spread the whipped cream mixture
over the cooled cake, just to edges, & roll gently. Place on serving
platter. Dust with powdered sugar if desired. Refrigerate for easier
slicing.

1 cup chocolate chips
2 &1/4 cups flour
1/8 tsp. salt
1 cup butter, softened
2 &1/2 cups firmly packed brown sugar
1 tbsp. light corn syrup, at room temperature
2 tsp. vanilla
4 eggs

Preheat oven to 350 degrees F. Line a 13 by 9 inch pan with heavy-duty
aluminum foil, shiny side up. Grease the foil lightly with shortening.
Set aside.

Place chocolate chips in small bowl. Add about 2 teaspoons of the flour.
Stir the chocolate chips until coated with flour & set aside. In
another small bowl, combine remaining flour & salt; stir until mixed.
Set aside.

In large bowl of electric mixer, combine butter & sugar. Beat at a low
speed until partially mixed. Increase speed to medium & beat 2 minutes,
stopping halfway through to scrape down bowl & beater. Add corn syrup &
vanilla; beat in both at a low speed.

Add eggs, one at a time, beating at a low speed after each addition just
until mixed. Once all eggs are in, increase speed to medium; beat 1
minute. At a low speed, gradually add flour, beating only until
combined. Remove bowl from mixer. Add chips. With large rubber spatula,
fold in until evenly distributed. Batter will be stiff.

Spoon batter into prepared pan. Spread level, making certain batter is
well-pushed into corners. Bake in preheated oven for 30-35 minutes,
turning back-to-front once about halfway during baking time. Blondies
will brown on top, with outer edges darker; center may rise higher than
edges. Blondies are done when a toothpick inserted near center emerges
with only a few moist crumbs still clinging to it. Remove to cooling
rack. Cool completely before cutting. Store airtight at room temperature
for up to a day or so; freeze for longer storage.
