Hi everyone, This is Patsy, Kay's Mom. Kay often helps with this news & sends special-contest things. Her sweet hubby, my son-in-law, Kyle, is in hospital again, in Critical condition. He has been flown to a Neuro Critical ICU in Columbus. They are not sure what is wrong, but, he has had a horrible day. Kay was with him all day, after the ambulance took him away. He has been disoriented, very high BP, high temperature, his heart stopped at one point. He is on a ventilator now & we hope to know more tomorrow. Combine first 3 ingredients and press mixture in bottom and up sides of a 10-inch springform pan. Bake for 10 minutes and set aside. Beat cream cheese until creamy. Gradually add 1-1/4 cups sugar, beating well. Add 1/3-cup pareve whip, flour and 1 teaspoon vanilla. Mix well. Add eggs one at time, beating well after every addition. Pour 3-1/2 cups of this batter into prepared crust. Top with crumbled cookies. Pour remaining batter over cookies. Bake for 1 hour and 15 minutes. Combine sour cream, remaining ?? cup sugar and 1 teaspoon vanilla. Spread over cheesecake. Bake for 7 more minutes. Turn oven off and leave cheesecake in with door close for 45 minutes. Remove from oven and cool completely on a wire rack. Cover and chill 8 hours. Remove sides of pan. Combine 1/3-cup pareve whip with chocolate chips in a small saucepan. Stir over low heat until chocolate melts. Stir in teaspoon vanilla and remove from heat. Carefully spread mixture over cheesecake allowing it to drip down the sides. Chill. Grease and flour a 12-cup Bundt pan. Combine ingredients; with electric mixer; beat about 4 minutes. Pour into prepared pan and bake for 50 minutes or until cake tester (or wooden pick) inserted comes out clean. Cool in pan 15 - 20 minutes; turn onto cake plate. Chocolate Kahlua Glaze: 1 cup powdered sugar 2 tablespoons unsweetened cocoa 1 tablespoon margarine, softened 1 tablespoon Kahlua 1 tablespoon water Away from burner, but in small saucepan, combine glaze ingredients, stir until smooth and creamy; over low heat, warm glaze 3 - 5 minutes; stir often.
