Subject: Chocolate Recipes [Chocolate & Coffee Buttercream ] - September08, 2005



Note from Kay:

Hello everyone,

Mom, I just talked to Kyles nurse.
He had a full body scan but they don't have the results yet.
His BP is up a little.  His temperature is normal.
Now get this..
Kyle was reaching for the TV, so his nurse went to him and asked what he

wanted.
Bear in mind they are used to reading lips of people with a trac.
Kyle told the nurse he wanted to watch the Bengals...WOW ( He's a 16-17 year

Bengals fan)
ALso told the nurse he needed to use the bathroom and he had to explain to him

why he couldn't get up etc.....Dr's were amazed with him today.
They asked him to blink he did.  They asked him to move arms and legs and he

did.
Asked him to stick out his tongue and he did.
Asked him to touch his nose and he did.
They were shocked with the results they got from him today as are we.
Tina and I will be leaving around 3-3:30 to go up.
What great news eh.......

Well........we went to visit.

We got there at the hospital and they were giving Kyle dialysis and he was so

active in the bed and he wont keep still for them when they ask him to so they had

to sedate him while having dialysis.....Sooooooo we got there in the middle of it

and they asked us not to talk to him or touch him because he would move around

and possibly interfere with the blood lines......So we stayed for 10 mins and left.

And I barely and I mean barely unclovered Kyles toes...and lightly touched my

finger tips to the top of his feet and he jerked so even though he was sedated and

alseep.....ummmmm he still moved...

Also the body scan they did showed infection in his lungs, so they are going to

treat that aggressively and also put him back on the ventilator so that his lungs

can rest and heal while they treat the infection so he doesn't get so exhausted

and over work his lungs right now.

Also some infection around the Trac which they are treating, caused by him

moving about so much in the bed.
Once this infection has settled down they are going to give Kyle a new Dialysis

catherder in his chest again. Once that is done we will be looking into where to

move him next once they take him out of ICU.

On a more personal note:

I want to thank everyone who is supporting us, praying, calling, sending cards,

and just being there when I need to listen and just talk about anything.
The family appreciates everyone's efforts in all you do.
I Thank God for each of you and I have thanked him for the love and support that

has been and continues to be shown throughout this time.
Prayers work!!!
I don't care who you are or where you are or how you choose to go about praying

it works.
Driving down the road saying it in your head or out loud.
Mowing the grass, or sitting looking at this screen and reading this and silently

saying one in your head, THEY ARE ALL HEARD.

Chocolate Cups with Raspberry Mousse
Yield: 4 servings

Chocolate Cups
8 oz Semisweet chocolate
Balloons, small

Mousse
2 c Raspberries;fresh or frozen you may substitute mango, strawberries or kiwi

for flavor & color changes
1/4 c Sugar
1 c Whipping cream

Melt 8 oz to 1 lb semisweet chocolate in heavy pot over low heat. Blow up as

many balloons as cups you need. Use small balloons and don't blow them up very

big (about the size of an apple.) Dab a little melted chocolate onto a wax paper

lined cookie sheet. Dip bottom of balloon in melted chocolate and sit on cookie

sheet. Refrigerate until hard. Repeat for remaining balloons. If cups are very thin,

dip again. When the chocolate has hardened, snip the top of the balloon with

scissors and pull out gently from cup.
Fill cups with chocolate mousse or raspberry mousse for Valentine's Day or fill

with ice cream. Here is a possible filling: Puree raspberries in food processor with

sugar. Whip cream until stiff. Fold in raspberry puree.

Deep Chocolate Torte with Coffee Buttercream

Yield: 1 Servings

Cake layers:
14 lg Eggs, separated
1 3/4 c Sugar
9 oz Bittersweet chocolate, melted and cooled

Buttercream:
1 c Sugar
2 lg Eggs
1 1/2 c Unsalted butter, softened
3 tb Instant espresso, dissolved in 1 tb Hot water

Ganache:
1 1/2 c Heavy cream
6 oz Bittersweet chocolate, chopped fine

Assembly:
3/4 c Apricot preserves, heated to lukewarm
Chocolate coffee beans for decoration

Line 2 greased jelly-roll pans, 15x10x1-inch each, with wax paper and butter and

flour the paper, shaking off excess. In a large bowl with an electric mixer, beat the

egg yolks. Add slowly 1-1/2 cups sugar, beating, and beat the mixture until it is

thick and pale and forms a ribbon. Add the chocolate and combine the batter well.
In another large bowl with clean beaters, beat the egg whites until they hold soft

peaks. Add the remaining 1/4 cup sugar slowly, and beat until whites hold stiff

peaks. Stir a fourth of the whites into the yolk mixture, fold in remaining whites

gently but thoroughly, and pour the batter into the pans, spreading it evenly. Bake

the cake layers in the middle of a preheated 375f oven for 18-20 minutes or until

pick test. Let cake layers cool in the pans, covered with kitchen towels on large

racks. Invert the cake layers onto the racks and remove the wax paper carefully.
Buttercream: In a small heavy saucepan, dissolve sugar in 1/3 cup water over

moderate heat, stirring. Bring mixture to a boil, and boil it until it registers240f on a

candy thermometer. In a large bowl with an electric mixer, beat eggs until they are

frothy. Add sugar syrup in a thin stream, beating, and beat the mixture until it is

cool. Beat in the butter, one Tbsp at a time. Beat in expresso powder and a pinch

of salt. Beat the buttercream until it is combined well. If necessary, chill the

buttercream, covered, until it is firm enough to spread.

Ganache: In a large heavy saucepan, bring cream just to a boil and remove from

heat. Add chocolate and stir until it is smooth. Transfer mixture to a bowl and chill,

covered, stirring occasionally, until it is cool and thickened. Do not let it solidify.

Beat the mixture until it just forms soft peaks, but do not overbeat.

Assembly: Force preserves through a fine sieve into a bowl. Transfer the cake

layers to a work surface. Trim edges and halve each layer lengthwise. On a

serving plate, arrange one layer, spread with a third of the preserves, and spread

a third of the ganache over the preserves. Top with another layer and proceed

with the preserves, ganache and cake in the same manner, ending with a cake

layer on top. Spread the sides and top of the cake with a thin layer of buttercream

an chill for 30 minutes. Spread on additional buttercream, leaving about 1/3 cup to

make rosettes. With a pastry comb or tines of a fork, score the buttercream

lengthwise. Draw the back of a knife crosswise across the scored buttercream at

intervals. Transfer the remaining buttercream to a small pastry bag fitted with a

decorative tip. Pipe rosettes on top of the torte along the long sides and

intersperse the rosettes with chocolate coffee beans.
Chill. Remove from refrigerator about 30 minutes before serving.
