Hello everyone, Kyle still didnt have the trache out yet....talked to Kyles nurse. They haven't taken out the trache yet because he needs to be breathing a bit better on his own before they take it out. When we were there Saturday his oxygen would go up and down. Mix the flours, cocoa, salt, and Sugar Twin together, just until mixed evenly. Set aside. Cream the softened butter on medium speed until fluffy. Gradually add the fructose. Add the egg, beating well the addition. Reduce the speed to low and stir in about 1/2 of the dry ingredients, then the heavy cream, then the remainder of the dry ingredients. Stir in the vanilla and macadamia nuts. Form teaspoon-sized balls and place on ungreased baking sheets. Flatten each with a fork. Bake 10 minutes, until puffy. Do not overbake! Cool for a few minutes before removing from the baking sheet. Finish cooling on a cooling rack. Melt chocolate and butter in large heavy saucepan over very low heat. Add sweetened condensed milk; stir to blend. Remove from heat. 2. Combine granulated sugar, water and corn syrup in small saucepan. Cook over medium heat, stirring constantly, until sugar is dissolved. Cook, without stirring, until mixture reaches 250?°F on candy thermometer or until a small amount of syrup, when dropped into very cold water, forms a firm ball which does not flatten when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.) Remove from heat; stir into chocolate mixture. Add vanilla, coconut and nuts; stir until well blended. 3. Refrigerate about 30 minutes or until firm enough to handle. Shape into 1-inch balls; roll in powdered sugar. Store tightly covered in cool, dry place.
