I hope you had a chance to enjoy it and spend time with family and friends. We had a great time at a local resort enjoying some live music, good food and drinks and a spectacular fireworks display. As soon as they ended the natural fireworks began and we became drenched by our summer monsoons. It was still
a lot of fun though. This weekend we are going on another family vacation! We will be visiting family in the northwest part of the country near Seattle and eastern WA. I am looking forward to the change of scenery again and cooler temps, but at the same time a little bummed lately. Why? My beautiful cat of 18.5 years passed away on Wednesday night :( We will put him to rest afte we return. Until then he is being kept cool...sad to think he is gone and now frozen :( I still can't believe he is gone. I kept hoping he would wake up and he was just in some temporary coma...I had him for half my life just about...I don't think we will have another pet until my son is
much older now. Tommy will be deeply missed, he was a special friend and companion for many years. Sure seems like a long time since I sent the newsletter out...As a reminder, due to time constraints, I will be sending future newsletter issues bi-weekly. | Serves/Makes: 6 Ingredients:4 cups elbow macaroni, cooked and drained
3 tablespoons butter or margarine
1/4 cup finely chopped onion
2 tablespoons all-purpose flour
1/4 teaspoon salt
17 ounces evaporated milk
1 cup American cheese, grated
1 cup sharp Cheddar cheese, grated
1 cup sliced hot dogs
1 1/2 tablespoon bread crumbs Directions: Saut? onions in butter. Stir in flour and salt. Blend in evaporated milk. Cook and stir over medium heat until thick and bubbly. Add cheeses. Stir until melted.
Remove from heat. Stir in macaroni and hot dog slices.
Place cheesy macaroni and hot dogs in a 1 1/2 quart casserole dish. Sprinkle with bread crumbs. Bake at 350 for 40 minutes or until heated through. |
Cooking Tip of the Day | Melting Cheese Bring cheese to room temperature before melting. Melt cheese over a low heat to help prevent toughening and separation of oils and liquid. |
