From Now Until Christmas *** Jar Gift Recipes and Holiday Recipes:

Homemade Cranberry Sauce

1 bag Cranberries
1 cup sugar
water

Rinse the cranberries and put them into a heavy pot. Add just enough water to cover
them. Stir in the sugar. Cook over medium heat, stirring frequently, until most of the
cranberries have "popped" open. This will take about 15 minutes. Stir well, then taste it,
and add more sugar if it's not sweet enough for you. If you add more sugar, cook it a little
longer, still stirring, to make sure that the new sugar is completely dissolved. Chill overnight.

This keeps covered in the refrigerator for quite a long time.

Candied Sweet Taters

2 large Cans Sweet Taters/Yams
1 stick butter
1 cup brown sugar
2 tsp. cinnamon
1 tsp. nutmeg
Mini Marshmallows

Preheat oven to 350??.
Drain the sweet taters reserving the juices. Place the taters in a casserole dish. Set aside. Now
take the juices from the taters and mix in brown sugar, cinnamon and nutmeg. Mix well with
a wire whish. Pour over the sweet taters. Slice butter into chunks and place over the taters.
Bake about 20 minutes covered. Uncover and top with marshmallows and put back in oven uncovered and bake until marshmallows are browned.

Sweet Vidalia Onion Pie

1 1/2 cups crushed Ritz crackers
1/3 cup butter, melted
2 tbs butter
2 cups sliced sweet onions
2 eggs
3/4 cup half-and-half
3/4 tsp salt
1/8 tsp ground white pepper
1/4 cup shredded sharp Cheddar cheese

Preheat oven to 350F. In a medium bowl, mix together crushed crackers and 1/3 cup melted butter. Press mixture firmly into a 9 inch pie pan and set aside. Heat a medium skillet over medium heat. Melt 2 tablespoons butter in skillet and saute onions until translucent and tender but not brown. Spread into prepared crust. In a medium bowl, whisk together eggs, half-and-half, salt, and white pepper. Pour mixture over onions then sprinkle top with shredded cheese. Bake in preheated oven for 30 minutes, until center is set. Let stand 10 minutes before serving.
