Welcome everyone to Mocha Monday at Cappuccino’s Caf?.

After basically living at the hospital caring for my mother the past 3 weeks, I’m taking a temporary breather from all the chaos in my life. I want to thank you all for your thoughtful and uplifting e-mails and your prayers. It is obvious that your prayers have worked a small miracle as my mother is still with us. She had colon surgery a few days ago to remove an obstruction. Doctors were skeptical to do it as her heart was very weak from the congestive heart failure and the massive stroke but thanks to your prayers, she is recovering – slowly but surely.

Whacky Kiki is here from Sudbury and says that she will try her best to get the Friday’s letter out to everyone. Kiki’s grandson, my great-grandson, is also in hospital with an unknown illness but we’re hopeful that it’s nothing too serious. Doctors have been unable to diagnose the problem. He is only 18 months old, poor guy, but he’s a trooper.

We apologize for not being able to send out our newsletters lately and we thank you for your patience and understanding. However, I have managed to scrounge up some freebies for you today. Hope you enjoy them and we will try to get more out to you just as soon as we can.

In The News

In an interview on CBC Radio's Ontario Today with a plastics expert about
the chemicals that leach out of plastic containers:

To sum up:

don't use hard, clear plastic bottles.
don't heat any food in any plastic.
don't refill and re-use water bottles
after filtering with the Brita, keep water in glass container

As you know, most plastic containers have a number or a recycle number on the bottom of them. Those are the numbers referred to in the following cheat notes from the interview.

AVOID:

#7 the hard, clear plastics contain BPA ...a polycarbonate plastic made from a sex hormone. There are some new products that have the number 7 on them with a slight yellow tint to them that are ok.

#3 poly vinyl chloride...to be avoided at all costs. Contains chemicals hazardous to boys and men

#6 has toxicity associated with it...but not as serious as #3 & #7

SAFER:

#2 plastic: ethylene based

#5 plastic: propylene based (can't see thru them) or any plastic you can't see through

#1 (most water bottles) plastic is ethylene based (PET), and is 100% recyclable. It is safe as long as you don't re-use it many times (after 15 washings it starts to emit a chemical). The longer the water is in a bottle, the greater the leaching. In general, #1 would not be hazardous, but, don't reuse it.

DO NOT BUY:

If the material is hard, glasslike in appearance, particularly if hard and clear....do not buy it.

CLEAR Nalgene, even with coloring, called BPA, has the appearance of glass, and being very hard. When exposed to heat, the chemical is released into the liquid and is equivalent to a birth control pill type chemical.

Stainless steel, lightweight sport bottles...he wasn't familiar with it, and couldn't comment on them

BRITA water filters -- the Brita carbon filter filters the chemicals out of the municipal water supply which is good but, unfortunately, the Brita filters the water into a BPA plastic container which is not good and the older the Brita container is, the more chemicals leach into the water. The best thing is to put a carbon filter right on your tap or put the water through the Brita carbon filter and store it in a glass container.

Tupperware? (as long as it's not clear and hard) you can FREEZE food in them but don't heat in them.

THERE is no such thing as a safe microwaveable plastic. The basic chemistry: the hotter the molecules, the more chemical leaching you get.

- baby bottles -- use non see-through bottles
- water bottles with a #6 on them are polystyrene - no good
- many of the plastics are not recyclable, even if they have a number on them.

Oh gawd! Good thing beer comes in glass bottles.

Today’s Recipe

Brown Sugar Brownies

We think of brownies as chocolate bar cookies, usually dense but sometimes cake-like. They don’t have to be. Blondies are light colored, usually with chocolate chips. These brownies are dense like most brownies but made with butter and brown sugar.

These are serious brownies without the chocolate—and absolutely scrumptious. They are dense and chewy like a brownie but caramel-flavored. You’ll use this recipe over and over. Think of it as a blondie recipe without the chocolate chips.

This recipe can be doubled.

Ingredients

2/3 cup (10 2/3 tablespoons) butter
1 1/3 cup brown sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
3 large eggs
1 2/3 cup all-purpose or bread flour
1 teaspoon baking powder

Directions

Preheat the oven to 350 degrees. Lightly grease an 8 x 8-inch baking pan. Line it with parchment paper or dust it with flour.

1. Melt the butter in the microwave. Stir in the brown sugar and salt.

2. Add the vanilla and eggs to the brown sugar mixture. Stir until combined.

3. Add the flour and baking powder. Stir until combined again. Beat for two minutes.

4. Scrape the batter into the prepared pan. Bake for 40 minutes or until the brownies test done by sticking a toothpick or knife into the center of the pan. The brownies will be done when moist crumbs cling to the toothpick or knife. Let cool completely before cutting.
