Recipes from Lawry’s <><><><><><><><><><><><> Today’s
Recipe - (3 recipes today) Tomatoes
with Basil and Mozzarella
1 pound whole or part skim milk mozzarella, sliced the same thickness as the tomatoes A handful of fresh basil leaves rinsed, patted dry, and minced 1/4 cup olive oil Salt and pepper to taste
<><><><><><><><><><><><> Stuffed Italian Zucchini 6 medium size zucchini 3 eggs 3 tbsp. fine dry bread crumbs 3 tbsp. freshly grated Parmesan cheese 1 tbsp. unsalted butter, melted 6 oz. cooked ham, chopped salt and pepper 1 – 8 oz. can of Italian stewed tomatoes 1. Bring saucepan water to a boil. Add the zucchini and cook for 5 minutes. Drain and pat dry. Cut off and discard both ends of the zucchini. Using an apple corer, scoop out the pulp from the centers, leaving both ends intact, to make the hollow boat. 2. In a bowl, beat the eggs. Add the bread crumbs, Parmesan cheese, butter and chopped ham. Mix well. 3. Transfer the mixture to a small frying pan. Stirring constantly, cook over low heat until the mixture thickens slightly. Remove from heat and season with salt and pepper. 4. Stuff the zucchini with the mixture. Pour stewed tomatoes into an oven-proof dish and arrange the zucchini in it. Bake in a preheated 350 degree oven for about 20 to 30 minutes. Garnish and serve. <><><><><><><><><><><><> Sweet Zucchini Bread With Citrus 2 cups all-purpose flour 1 cup whole wheat flour 2 cups sugar 1 tsp. baking powder ? tsp. baking soda ? tsp. salt 4 eggs, beaten 1 cup vegetable oil 3 cups grated zucchini Peel of 1 washed orange, minced (or try this with lemon peel) 1. Preheat oven to 375 degrees. 2. Butter two 9-inch loaf pans and dust with flour or wheat germ. 3. Mix all the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda and salt in a large bowl. 4. With an electric mixer or wire whisk beat the eggs, then blend in the oil. 5. Use a spatula to mix the dry ingredients into the egg mixture in several additions, then fold in the zucchini and the orange peel. 6. Divide the batter evenly between the two pans and bake for 50 minutes or until the top springs back when pressed lightly with a finger (bake muffins for 30 minutes). The bread may cool in the pans for 5 to 15 minutes before being turned out onto a rack or plate. Makes two 9-inch loaves (or one loaf and 12 muffins). DIETER'S TIP: This recipe is just as delicious if you replace the 1 cup of oil with 1 cup of applesauce. <><><><><><><><><><><><> Crafter’s
