Welcome everyone to Mocha Monday at Cappuccino’s Caf?.
Well…..it looks like the newsletter will be emerging only
once a week for now as I am still quite busy. My mom has improved enough that
she can soon go to rehab for a short while. Hopefully, she will regain some
speech as at the moment, she cannot communicate at all. Thank God we are
Italian as our conversations are mainly composed of the universal language of
animated hand gestures (charades anyone?) Even so, it has been very difficult
for her as she has the use of only one hand.
Kiki will be returning to Sudbury
this week. I have given her one of my spare computers so, hopefully, she will
be able to help with the newsletter. However, Murphy’s Law, my shadow, usually
prevails. Keep your fingers crossed.
I have tried to make up for some of the slack by adding some
extra freebies this week. Last week, I posted the renowned California
Pistachios. They are sooooo good. For those who may have missed it, I have

In The News Have a "STAR" in your family?
I am a researcher with PTV Productions, an independent
film company here in Toronto.
We are looking for kids to participate in a new television series
called, "Letters to God." This series is being
produced for Vision TV, and is divided into 13 half-hour episodes. The series
is all about the letters kids write to God.
This show is about what kids think about when they think about
God. All kids are welcome to write a letter, whether they have had a
religious upbringing, or not, whether they are believers or not, and no matter
what God they believe in. The only limitation is their age (5 to 12) and their location (Toronto
and the outlying areas.)
After we've collected all the letters we can get, we're going to choose 150,
and then interview on camera the kids who wrote those letters. And this is what
the series is about.

Today’s Recipe (4

Dark Chocolate Mousse Cake with Gold Dust (optional)
Use: 8 in or 9 in tart tin
1 tablespoon ground almonds plus extra for dusting
1 - 12-oz. bag of dark chocolate baking chips
1/2 cup of sugar
1/2 cup unsalted butter
pinch of salt
5 large eggs
edible gold dust (optional)
Preheat the oven to 350F. Brush the tin with a little melted
butter and dust with the ground almonds, shaking off any excess.
Melt the chocolate, sugar, butter and salt in a microwave
bowl in 30 second intervals, stirring in between.
Whisk the eggs with the ground almonds and fold into the
chocolate mixture. The mixture will thicken after a few minutes. Pour into the
cake tin and bake for 35-40 minutes.
Let the cake cool, then dust with edible gold dust.

Easy Chocolate Ice Cream
Ingredients 2 cups heavy whipping cream
1/2 cup unsweetened chocolate milk
2/3 cup chocolate syrup Directions
1. Beat the whipping cream with an electric mixer until soft
peaks form.
2. Fold in the sweetened condensed milk and chocolate syrup.
3. Pour it into a one-quart pan or baking dish and freeze.
Baker’s note: With this recipe, you can use our Frozen Treat
Maker to make icicle-type ice cream treats on a stick.
Rocky Road Ice Box Ice Cream Recipe
Make as above but fold 1/2 cup chopped walnuts and 2/3 cup
miniature marshmallows into the ice cream before freezing.

Make as above but fold 1/2 cup chopped walnuts into the ice

Homemade Sweetened Condensed Milk
Yield: The equivalent of one 14-ounce can of sweetened
condensed milk.
Ingredients
1/3 cup water
2/3 cup sugar
1 cup dry milk powder
3 tablespoons butter
Directions
1. Heat a bowl of water in the microwave until it is very
hot (or use tap water if you can get it steaming hot).
2. Combine the remaining ingredients in a small bowl. Add
the hot water and beat with an electric mixer or wire whisk until smooth.
Note: This should be made as you need it and will not store
well. One recipe equals one can of store bought sweetened condensed milk

Homemade Chocolate Syrup Recipe
This makes great, homemade chocolate syrup. The only fat in
the recipe is any incidental fat that might be in the cocoa.
Ingredients
1 cup granulated sugar
1 cup water
1 teaspoon vanilla extract
1/2 cup cocoa
Directions
Add the sugar and water to a saucepan. Stir and cook until
the syrup reaches a full boil. Remove from the heat.
Add the cocoa a little at a time, whisking steadily as you
add the powder. Press the hot syrup through a fine strainer. Add the extract.
After sitting for a few minutes, you are likely to have a scum on the top. Skim
it off. Cover and store in the refrigerator.
