Welcome everyone to Mocha Monday at Cappuccino’s Caf?.

Well, it’s been a hectic two months but my mother is finally on the road to
recovery, thanks to all your prayers. She has now been transferred to another
hospital where she will get daily therapy. I can only hope and pray that she
will recover some speech so that she can communicate with us and her friends.
At the moment, she speaks gibberish as her brain scrambles her words. Her
mind, however, is intact and being speechless frustrates her to no end.

Kiki has returned to Sudbury with yet another computer. I hope this one works
this time as I will definitely need her help with this newsletter.

She has been a great help with my mother as we took shifts caring for her
24 hours a day at the hospital. Our health care system’s protocol for the
over 55 is to let them waste away rather than save them and it had been a
battle to get the medical attention my mother deserved. This was not a case
of public health care as she had exceptional medical coverage but a case of
no compassion for the elderly. Because of this, she suffered many undue
setbacks (infections, depression, anger). Who can blame her?

We, as a whole, must to do something about this inept health care system.
I, for one, plan to start a petition as soon as my life gets somewhat back to
normal. I hope that you will join me at that time to let the politicians know
how we feel about this.

Today’s Recipe (4 recipes)

Light Vanilla Ice Box Ice Cream

1/4 cup Splenda
1 pinch salt
1 tablespoon corn syrup
1/4 cup water
1 1/3 cups heavy whipping cream
2/3 cup skim milk
1/2 cup sweetened condensed milk
1 1/2 tablespoon vanilla extract

Directions

1. Mix the Splenda, salt, corn syrup, and water in a microwave safe bowl until the
Splenda and salt are dissolved. Heat it in the microwave until it simmers, stirring once.
Place the bowl of sugar syrup in the refrigerator or freezer until well cooled.

2. Beat the whipping cream with an electric mixer until soft peaks form.

3. Fold in the milk, sweetened condensed milk, vanilla extract, and sugar syrup.

4. Pour it into a pan or baking dish and freeze.

5. When nearly frozen, remove the ice cream from the freezer, spoon it into a large
bowl, and beat with electric beater. Put the ice cream back into the pan and continue
freezing.

Baker’s Note: Rapidly freezing your ice cream improves the texture. Since your freezer
is colder than the freezing compartment of your refrigerator, you’ll make better ice
cream in the freezer.

Vanilla Ice Box Ice Cream

1/4 cup granulated sugar

4. Pour it into a one-quart pan or baking dish and freeze.

Spaghetti Con Polpettine (tasty meatballs)

Cooking Tip: For a lower-fat option, bake the meatballs instead of sauteing them.
Arrange them on a lightly oiled baking sheet and bake at 350 degrees, turning once
or twice, until brown and cooked through, about 20 minutes.

Serves 4 (makes about 24 to 30 meatballs and 3 cups of tomato sauce)

Meatballs

3/4 lb. ground beef
1/4 lb. ground sweet or hot Italian sausage
3 tbsp. grated Parmesan cheese
2 tbsp. bread crumbs
2 tsp. onion powder, or 2 tbsp. finely chopped onion
1/2 tsp. dried basil
1/2 tsp. salt
2 garlic cloves, minced
1 egg
2 to 3 tablespoons olive oil

Tomato Sauce

1 medium onion, finely chopped
3 tbsp. finely grated carrot (about 1/2 small carrot)
1 1/2 tbsp. olive oil
2 garlic cloves, minced
1 28-oz. can crushed tomatoes
Salt to taste

Pasta

1 lb. spaghetti
Grated Parmesan cheese

1. To make the meatballs, mix all the ingredients except the olive oil and form into
1-inch balls (the size of small walnuts). In a large saute pan, brown the meatballs
in the oil until cooked through, about 8 to 10 minutes.

2 . To make the tomato sauce, saute the onion and carrot in the olive oil for 3 to 4
minutes over medium-high heat. Add the garlic and cook for another minute. Toss
in the tomatoes and reduce the heat to medium, cooking another 10 to 15 minutes.
Add salt to taste. Toss in the meatballs.

3. While the meatballs gently simmer in the sauce, bring a pot of water to a boil for
the pasta. Cook until the pasta is al dente, or slightly chewy. Fill individual bowls
with the cooked pasta and add the sauce.

Cajun Grilled Chicken
(low sodium, low carbohydrate, low fat)

44 oz skinless, boneless chicken breasts
3 Tbsp. (45mL) Mrs. Dash® Chicken Grilling Blend
1/4 cup (60mL) red wine vinegar
2 Tbsp. (30mL) tomato paste
2 Tbsp. (30mL) honey

1. Place chicken breasts side by side in large glass casserole dish. Lightly score
each piece 2 - 3 times with a sharp knife.

2. Mix together Mrs Dash® Chicken Grilling Blend™, red wine vinegar, tomato paste,
and honey and pour over chicken; marinate in refrigerator for up to 1 hour.

3. Grill chicken on preheated grill over medium heat for about 4 - 5 minutes on each
side or until juices run clear, turning once during cooking. Serve hot off the grill.

Government Bureaucracy

In the year 2006, the Lord came unto Noah, who was now living in the United
States, and said, "Once again, the earth has become wicked and over-populated,
and I see the end of all flesh before me. Build another Ark and save 2 of every
living thing along with a few good humans."

He gave Noah the blueprints, saying, "You have 6 months to build the Ark before I will start the unending rain for 40 days and 40 nights.

"Six months later, the Lord looked down and saw Noah weeping in his yard - but no Ark. "Noah!" He roared, "I'm about to start the rain! Where is the Ark?"

"Forgive me, Lord," begged Noah, "but things have changed.

I needed a building permit.

I've been arguing with the inspector about the need for a sprinkler system.

My neighbours claim that I've violated the neighborhood zoning laws by building the Ark in my yard and exceeding the height limitations.

We had to go to the Development Appeal Board for a decision.

Then the Department of Transportation demanded a bond be posted for the future costs of moving power lines and other overhead obstructions, to clear the passage for the Ark's move to the sea. I told them that the sea would be coming to us, but they would hear nothing of it.

Getting the wood was another problem. There's a ban on cutting local trees in order to save the spotted owl. I tried to convince the environmentalists that I needed the wood to save the owls but no go!

When I started gathering the animals, an animal rights group sued me. They insisted that I was confining wild animals against their will. They argued the accommodation was too restrictive, and it was cruel and inhumane to put so many animals in a confined space.

Then the EPA ruled that I couldn't build the Ark until they'd conducted an environmental impact study on your proposed flood.

I'm still trying to resolve a complaint with the Human Rights Commission on how many minorities I'm supposed to hire for my building crew.

Immigration and naturalization are checking the green-card status of most of the people who want to work.

The trades unions say I can't use my sons. They insist I have to hire only Union workers with Ark-building experience.

To make matters worse, the IRS seized all my assets, claiming I'm trying to leave the country illegally with endangered species.

So , forgive me, Lord, but it would take at least 10 years for me To finish this Ark."

Suddenly the skies cleared, the sun began to shine, and a rainbow stretched across the sky.

Noah looked up in wonder and asked, "You mean you're not going to destroy the world?"

"No," said the Lord. "The government beat me to it."
