Today’s Recipes
Diabetic
Strawberry or Raspberry Spread
1 ? tsp.
unflavoured gelatin
? cup water
2 cups sliced
fresh or frozen unsweetened strawberries or raspberries
Artificial
sweetener equivalent to 8 to 12 tsp of sugar
red food
coloring
1. Sprinkle
gelatin over water to soften. Let stand 5 min.
2. Place
berries in a medium saucepan; bring to a boil; cook stirring occasionally for 5
min.
3. Add softened
gelatin, sweetener and food coloring; stir until gelatin dissolves.
4. Skim foam
from the surface. Ladle into hot sterilized jars leaving 1.2 in. headspace.
5. Wipe jar
rims. Seal. Store in refrigerator or freezer.
Makes about 1 ?

Calgary Pot
Roast (diabetic)
3 ? lbs.
boneless, lean beef brisket, cross rig, chuck or blade roast
1 tsp. dry
mustard
? tsp salt
? cup chopped
onion
1 can (7 ? oz.)
tomato sauce
2 tbsp. vinegar
? tsp. thyme
? tsp. freshly
ground pepper
Trim all fat
from roast. Rub dry mustard and salt into the surface of the meat.
Place in a
lightly greased, oven-proof dish.
Top with onion.
Combine tomato
sauce, vinegar, thyme and pepper; pour over roast and cover tightly.
Bake in a 325°
oven 3 hours until meat is tender.
Serves. 10.

Braised
Steak and Green Pepper (diabetic)
1 ? lbs lean
round steak, cut into ? in. strips
2 tbsp. all
purpose flour
? tsp. salt
? tsp. freshly
ground pepper
1 tbsp.
vegetable oil
1 ? cups beef
broth
1 cup canned
tomatoes with juice
1 medium onion,
sliced
1 clove garlic,
finely chopped
1 large green
pepper, seeded and cut into strips
1 ? tsp.
Worcestershire sauce 1. Coat strips
of meat with flour mixed with salt and pepper.
2. Heat oil in
a large frypan; brown meat on all sides. Drain off any fat.
3. Add broth,
tomato juice (reserving the tomato pieces for later), onion and garlic to the
meat.
4. Cover and
simmer 1 ? hours until meat is tender.
5. Add tomato
pieces, green pepper strips and Worcestershire sauce. Stir-cook 4 to 5 min.
longer.
Serves 6.

alumni, highly established in their careers, got together to visit their old university professor.
The
conversation soon turned into complaints about stress in work and life.
Offering his
guests coffee, the professor went to the kitchen and returned with a large pot
of coffee and an assortment of cups – porcelain, plastic, glass, crystal, some
plain-looking, some expensive, and some exquisite - telling them to help
themselves to the coffee
After all the
students had a cup of coffee in hand, the professor said: "If you noticed,
all the nice looking expensive cups were taken up, leaving behind the plain and
cheap ones.
While it is but
normal for you to want only the best for yourselves, that is the source of your
problems and stress. "Be assured that the cup itself adds no quality to
the coffee.
In most cases,
it's just more expensive and in some cases even hides what we drink.
What all of you
really wanted was coffee, not the cup, but you consciously went for the best
cups...and then began eyeing each other's cups.
"Now
consider this: Life is the coffee, and the jobs, money and position in society
are the cups.
They are just
tools to hold and contain life, and the type of cup we have does not define nor
change the quality of life we live.
Sometimes, by
concentrating only on the cup, we fail to enjoy the coffee God has provided
us."
God brews the
coffee, not the cups . . . enjoy your coffee!
