It’s been a while. How y’all doin’. Cappuccino has asked me if I could take over the newsletter for a bit. Her mother is finally coming home from the hospital and she is trying to get the place ready for her, plus she is moving in with her mom too so she has a lot to do that will be keeping her busy. Good luck with the move and with your mother Capp. Our thoughts and good wishes are with you. I hope I don’t disappoint anyone but I will try to be as good as Capp was with the freebie offers. It’s been a while since I did this newsletter and I know it should be like riding a bike….you never forget….but in my case, I’m lucky if I remember my own name in the morning. In the coming weeks I hope to get the knack of things; after all, practice makes perfect, right? Well at least that’s what my mother-in-law says and she has 14 kids and 57 grand and great grand kids to prove it. YIKES!!! And I was complaining I was a mother of 2 and a grandmother of 3. This week’s letter may be shorter than the previous ones but it should eventually get back to normal soon. Directions
Sprinkle chicken with salt and black pepper. Heat oil in a 12-inch nonstick skillet over medium heat. Add onion and garlic; saut? 2 minutes or until onion is tender. Return chicken to pan.
Stir in wine, 3 tablespoons cilantro, and next 4 ingredients (through red pepper); bring to a boil. Cover, reduce heat, and simmer 30 minutes or until chicken is done.
Place chicken in a serving platter; keep warm. Increase heat to medium-high; cook until sauce is reduced to 1 cup (about 5 minutes). Stir in grapes. Spoon sauce over chicken; sprinkle with remaining 3 cilantro.
<><><><><><><><><><><><> This rum spiked sauce can be stored in the refrigerator for up to 3 days. Serve it over fresh figs, berries, or ice milk.
Ingredients
? cup evaporated skimmed milk 1 tablespoon each granulated sugar and dark rum 1 teaspoon cornstarch 1 egg ? teaspoon vanilla extract 1/8 teaspoon ground nutmeg
Directions
In small microwavable mixing bowl combine milk, sugar, rum and cornstarch. Stir to dissolve cornstarch. Microwave on High (100%) for 1 ? minutes, stirring every 30 seconds.
Using a wire whisk, in separate small microwavable mixing bowl beat egg; slowly stir milk mixture into egg. Stir in vanilla and nutmeg; microwave on Medium (50%) for 1 ? minutes, until slightly thickened, stirring every 15 seconds (do not overcook).
Set aside and let cool slightly. Serve immediately or transfer to jar with tight-fitting cover and refrigerate until ready to serve.
