Welcome to Mocha Monday at Cappuccino’s Caf?.

Hey everyone….Whacky Kiki’s back in the house!!!!  It’s been a while.  How y’all doin’.  Cappuccino has asked me if I could take over the newsletter for a bit.  Her mother is finally coming home from the hospital and she is trying to get the place ready for her, plus she is moving in with her mom too so she has a lot to do that will be keeping her busy.  Good luck with the move and with your mother Capp.  Our thoughts and good wishes are with you. 

I hope I don’t disappoint anyone but I will try to be as good as Capp was with the freebie offers.  It’s been a while since I did this newsletter and I know it should be like riding a bike….you never forget….but in my case, I’m lucky if I remember my own name in the morning.  In the coming weeks I hope to get the knack of things; after all, practice makes perfect, right?  Well at least that’s what my mother-in-law says and she has 14 kids and 57 grand and great grand kids to prove it.  YIKES!!! And I was complaining I was a mother of 2 and a grandmother of 3.

This week’s letter may be shorter than the previous ones but it should eventually get back to normal soon.  So without further delay, grab your javas and take a walk with me down freebie lane and enjoy the sites.

Today’s Recipes

Yield:  6 servings (1 chicken breast, about ? cup sauce, and 1 ? teaspoons cilantro per serving)

Chicken with White Wine, Grape Juice, and Cilantro

Ingredients

6 (6-ounce) skinless, boneless chicken breast halves

1/4 teaspoon kosher salt

1/8 teaspoon freshly ground black pepper

3 tablespoon olive oil

1 cup vertically sliced onion

2 cloves of garlic, minced

3/4 cup dry white wine (such as Woodbridge Chardonnay)

6 tablespoons finely chopped fresh cilantro, divided

1/3 cup unsweetened white grape juice

1/2 teaspoon ground coriander

1/4 teaspoon ground cumin

1/4 teaspoon crushed red pepper

1? cups seedless green grapes, halved

Directions

Sprinkle chicken with salt and black pepper.  Heat oil in a 12-inch nonstick skillet over medium heat.  Add onion and garlic; saut? 2 minutes or until onion is tender.  Return chicken to pan. 

Stir in wine, 3 tablespoons cilantro, and next 4 ingredients (through red pepper); bring to a boil.  Cover, reduce heat, and simmer 30 minutes or until chicken is done.

Place chicken in a serving platter; keep warm.  Increase heat to medium-high; cook until sauce is reduced to 1 cup (about 5 minutes).  Stir in grapes.  Spoon sauce over chicken; sprinkle with remaining 3 cilantro.

This rum spiked sauce can be stored in the refrigerator for up to 3 days. 

Serve it over fresh figs, berries, or ice milk.

Ingredients

? cup evaporated skimmed milk

1 tablespoon each granulated sugar and dark rum

1 teaspoon cornstarch

1 egg

? teaspoon vanilla extract

1/8 teaspoon ground nutmeg

Directions

In small microwavable mixing bowl combine milk, sugar, rum and cornstarch.  Stir to dissolve cornstarch. Microwave on High (100%) for 1 ? minutes, stirring every 30 seconds.

Using a wire whisk, in separate small microwavable mixing bowl beat egg; slowly stir milk mixture into egg.  Stir in vanilla and nutmeg; microwave on Medium (50%) for 1 ? minutes, until slightly thickened, stirring every 15 seconds (do not overcook). 

Set aside and let cool slightly.  Serve immediately or transfer to jar with tight-fitting cover and refrigerate until ready to serve.

YIELD:  4 servings (about 3 tablespoons each serving)

What Time Is It

A man is strolling past the mental hospital and suddenly remembers an important meeting.

Unfortunately, his watch has stopped, and he cannot tell if he is late or not. Then, he notices a patient similarly strolling about within the hospital fence.

Calling out to the patient, the man says, "Pardon me, sir, but do you have the time?"

The patient calls back, "One moment!" and throws himself upon the ground, pulling out a short stick as he does. He pushes the stick into the ground, and, pulling out a carpenter's level, assures himself that the stick is vertical.

With a compass, the patient locates north and with a steel ruler, measures the precise length of the shadow cast by the stick.

Withdrawing a slide rule from his pocket, the patient calculates rapidly, then swiftly packs up all his tools and turns back to the pedestrian, saying, "It is now precisely 3:29 pm, provided today is August 16th, which I believe it is."

The man can't help but be impressed by this demonstration, and sets his watch accordingly.

Before he leaves, he says to the patient, "That was really quite remarkable, but tell me, what do you do on a cloudy day, or at night, when the stick casts no shadow?" The patient holds up his wrist and says, "I suppose I'd just look at my watch."

"Then stand over there against the wall," said the priest.

Then Father Murphy walked up to O'Toole and said, "Do you want to go to heaven?"

O'Toole said, "No, I don't Father."

The priest said, "I don't believe this. You mean to tell me that when you die you don't want to go to heaven?"
