Copycat Applebee’s Walnut Blondie with Maple Butter Sauce
Dough
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1 cup flour, sifted
1/4 cup chopped walnuts (or more if desired)
1/3 cup butter or margarine (melted)
1 cup packed brown sugar
1 egg, beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips
Maple Butter Sauce
3/4 cup real maple syrup
1/2 cup butter
3/4 cup brown sugar
1/4 cup chopped walnuts (optional)
Directions
Dough
Preheat the oven to 350 degrees F.
Add baking powder, baking soda and salt to the already
sifted
flour. Then sift dry ingredients again.
Add chopped nuts and mix well. Set aside.
Add brown sugar to melted butter and mix well. Then add egg
and
vanilla extract. Mix well. Add flour mixture, a little at a time, until mixed well.
Stir in white chocolate chips. Spread out dough in a 9-inch
pan.
Bake for 20 to 25 minutes. Use a toothpick or fork to test
if it is
cooked in the center.
Serve warm with ice cream and Maple Butter Sauce.
Maple Butter Sauce
In a pan, add real maple syrup and butter, cook over low
heat until
butter is melted. Next, stir in brown sugar until completely
dissolved. If you desire, add walnuts.

Chocolate-Espresso Snowcaps
Ingredients:
1/2 cup all-purpose flour
1/4 cup Nestle Tollhouse Baking Cocoa
4 teaspoons instant espresso
1 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons unsalted butter, room temperature
2/3 cup packed light brown sugar
1 large egg3/4 cup (4 oz.) Nestle Chocolatier 53% Cacao Dark Chocolate
Morsels, melted and cooled
1 tablespoon milk
1/2 cup powdered sugar, for coating
Directions
WHISK flour, cocoa, espresso, baking powder and salt in
medium
bowl. with an electric mixer, beat butter and brown sugar
until
light and fluffy.
Beat in egg until well combined; mix in cooled chocolate.
With mixer on low speed, gradually add dry ingredients; beat
in
milk just until combined.
Flatten dough into a disk; wrap in plastic. Freeze until
firm, about
45 minutes.
PREHEAT oven to 350° F. Line two baking sheets with
parchment
paper. Shape dough into 1-inch balls. Place powdered sugar
into a
medium bowl; working in batches, roll balls in powdered
sugar
twice.
PLACE balls on prepared baking sheets, 2 inches apart. Bake,
rotating sheets halfway through, until cookies have spread
and
coating is cracked, 12 to 14 minutes; cookies will still be
soft to the
touch. Transfer to a wire rack to cool completely.

This is for all the Italians out there, and those who are
lucky
enough to be married to an Italian, and even to all the
friends of
Italians.
An elderly Italian man lay dying in his bed.
While suffering the agonies of impending death, he suddenly
smelled the aroma of his favorite Italian anisette sprinkle
cookies
wafting up the stairs. Gathering his remaining strength, he
lifted
himself from the bed. Leaning against the wall, he slowly
made
his way out of the bedroom, and with even greater effort,
gripping
the railing with both hands he crawled downstairs.
With labored breath, he leaned against the door frame,
gazing into the kitchen.
Were if not for death's agony, he would have thought himself
already in heaven. For there, spread out upon waxed paper on
the
kitchen table were literally hundreds of his favorite
anisette
sprinkled cookies.
Was it heaven? Or was it one final act of heroic love from
his
devoted Italian wife of sixty years, seeing to it that he
left this
world a happy man?
Mustering one great final effort, he threw himself towards
the
table, landing on his knees in a crumpled posture. His
parched lips
parted, the wondrous taste of the cookie was already in his
mouth,
seemingly bringing him back to life. The aged and withered
hand
trembled on its way to a cookie at the edge of the table,
when it
was suddenly smacked with a spatula by his wife.
"Get outta here! " she shouted, "They're for
the funeral!"

Counseling
A husband and wife came for counseling after 15 years of
marriage.
When asked what the problem was, the wife went into a
passionate, painful tirade listing every problem they had
ever had
in the 15 years they had been married. She went on and
on and on:
neglect, lack of intimacy, emptiness, loneliness, feeling unloved
and unlovable, an entire laundry list of un-met needs she
had
endured over the course of their marriage.
Finally, after allowing this to go on for a sufficient
length of time,
the therapist got up, walked around the desk and, after
asking the
wife to stand, embraced and kissed her passionately.
The woman shut up and quietly sat down as though in a daze.
The therapist turned to the husband and said, "This is
what your
wife needs at least three times a week. Can you do
this?"
The husband thought for a moment and replied, "Well, I
can drop
her off here on Mondays and Wednesdays, but on Fridays, I
fish."
