Good morning everyone.

Hey!!! Murphy!!! You still with me?

Both my parents are home from the hospital. My mother,
yet again – and not much better. She picked up a few more
infections while in there. A word to the wise…..if you’re
sick, stay home. Hospitals are a breeding ground for the
baddies.

This time, she was sent home with a possible wrist fracture.
Was she examined before her release? NOT!!!! Now, her
immobility poses a dilemma. How do we get her wrist
X-rayed without transporting her (by ambulance yet again
at $45 a pop) back to the hospital. Hmmmm!!!! Any
suggestions? Info?

Food for thought……..Unhappy with our health care?
UNITE!!! Raise your voices, be heard, yell loudly, make
them listen, voice your concerns to the Minister of Health.
Together, we can succeed. Seniors have paid their dues
……they deserve better care. Let’s not fill them with drugs.
Let’s give them the care they deserve. After all, we’ll be
in the same boat soon enough.

Today’s Recipes

Here’s a super easy recipe for a decadent treat. These
easy truffles are perfect for little hands to roll, and have
less than half the fat of traditional chocolate truffles, which
are made with chocolate, butter, and cream.

Low Fat White chocolate Peppermint Truffles

Ingredients

1/2 cup white chocolate chips or chopped white chocolate
4 oz. light cream cheese, softened (half an 8 oz block)
2 cups confectioners’ sugar

Directions

Crushed candy canes for rolling (or peppermint candy)
(coconut, chocolate sprinkles, etc. could be used)
Microwave chocolate in a glass bowl until melted. Put the
candy canes in a plastic bag and bash them with a rolling
pin.

Beat the cream cheese until smooth. Add chocolate and
blend well.

Add the icing sugar gradually, stirring gently until well mixed.

If the dough is a little soft, chill until it firms up a bit. Roll
the mixture into balls and roll in crushed candy canes to coat.

Makes 2-dozen truffles. Store extras in the fridge.

Incredible Sugar Cookies

Ingredients

1 cup Gay Lea Unsalted Butter, softened
1/2 cup granulated sugar
1/4 cup icing sugar
1 egg
1 tsp vanilla
2-1/2 cups all-purpose flour
3/4 tsp baking powder
1/4 tsp salt

Directions

With electric mixer, beat butter until light and fluffy.
Gradually beat in granulated and icing sugars and then
beat in egg and vanilla.

Combine flour, baking powder and salt; gradually stir
into butter mixture. Transfer dough to work surface;
knead lightly until it forms a ball.

Divide dough in half; shape each into disc. Wrap in
plastic wrap; refrigerate for at least 1 hour or for up
to 2 days. One disc at a time, roll out dough on lightly
floured surface to 1/4-inch thickness. Using cookie
cutters, cut out shapes and place them on parchment
paper lined baking sheets.

Bake in centre of preheated 375?F oven for 10 to
12 minutes or until light golden on bottom and edges.

Let cool for 3 minutes on baking sheets; transfer to
wire racks to cool.

Makes 3 dozen cookies. Preparation time: 30 minutes.
Refrigeration time: 1 hour. Baking time: 10 to 12 minutes.

Icing:

Whisk together 3 cups icing sugar with 1/4 cup water for
regular piped icing, adding up to 2 tablespoons more water
to create paint for background colours. Tint with food
colouring as desired.

OR

Royal Icing:

Using electric mixer, beat together 2 tbsp meringue powder
with 1/4 cup water. Slowly beat in 2 1/4 cups icing sugar
until stiff, about 4 minutes. Separate into bowls and tint
with food colouring as desired.

I've seen two shows lately that went on and on about how
mid-life is a great time for women. Just last week Oprah
had a whole show on how great menopause will be...
Puhleeeeeeeze! I've had a few thoughts of my own and
would like to share them with you.

Whether you are pushing 40, 50, 60 (or maybe even just
pushing your luck) you'll probably relate.

Mid-life is when the growth of hair on our legs slows
down. This gives us plenty of time to care for our newly
acquired mustache.

In mid-life women no longer have upper arms, we have
wing spans. We are no longer women in sleeveless
shirts, we are flying squirrels in drag.

Mid-life is when you can stand naked in front of a
mirror and you can see your rear without turning
around.

Mid-life is when you go for a mammogram and you
realize that this is the only time someone will ask you
to appear topless.

Mid-life is when you want to grab every firm young
lovely in a tube top and scream, "Listen honey, even
the Roman empire fell and those will too."

Mid-life brings wisdom to know that life throws us
curves and we're sitting on our biggest ones.

Mid-life is when you look at your-know-it-all,
beeper-wearing teenager and think: "For this I have
stretch marks?"

In mid-life your memory starts to go. In fact the
only thing we can retain is water.

all the wisdom and love we've acquired. That's
my philosophy and I'm sticking to it!
