Good morning everyone.

Not much to say except I’m glad to see the snow gone.

It’s wonderful to watch the birds chirping and talking
to one another while building their nests. The cutest
site is watching the baby squirrels coming out of their
tree homes looking for food.

I so love spring and hope it comes quick.

Today’s Recipes

Classic Fish & Chips

Ingredients

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk (ice cold)
1 egg
1 quart vegetable oil for frying
1 1/2 pounds cod fillets

Directions

Place potatoes in a medium-size bowl of cold water. In a
separate medium-size mixing bowl, mix together flour,
baking powder, salt, and pepper. Stir in the milk and egg;
stir until the mixture is smooth. Let mixture stand for 20
minutes.

Preheat the oil in a large pot or electric skillet to 350 degrees
F (175 degrees C).

Fry the potatoes in the hot oil until they are tender. Drain
them on paper towels.

Dredge the fish in the batter, one piece at a time, and place
them in the hot oil. Fry until the fish is golden brown. If
necessary, increase the heat to maintain the 350 degrees F
(175 degrees C) temperature. Drain well on paper towels.
Fry the potatoes again for 1 to 2 minutes for added crispness.

Irish Cream Bundt Cake

Ingredients

1 cup chopped pecans
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/4 cup water
1/2 cup vegetable oil
3/4 cup Irish cream liqueur
1/2 cup butter
1/4 cup water
1 cup white sugar
1/4 cup Irish cream liqueur

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease and
flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly
over bottom of pan.

In a large bowl, combine cake mix and pudding mix. Mix in
eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream
liqueur. Beat for 5 minutes at high speed. Pour batter over
nuts in pan.

Bake in the preheated oven for 60 minutes, or until a
toothpick inserted into the cake comes out clean. Cool for 10
minutes in the pan, then invert onto the serving dish. Prick
top and sides of cake. Spoon glaze over top and brush onto
sides of cake. Allow to absorb glaze repeat until all glaze is
used up.

To make the glaze: In a saucepan, combine butter, 1/4 cup
water and 1 cup sugar. Bring to a boil and continue boiling
for 5 minutes, stirring constantly. Remove from heat and stir
in 1/4 cup Irish cream.

the currency exchange window at the local bank.

Short line…Just one person in front of him...an Asian guy
who was trying to exchange yen for dollars and he was a
little irritated!

He asked the teller, "Why it change?? Yestoday, I get two
huna dolla fo yen. Today I get huna eighty?? Why it
change?"

The teller shrugged her shoulders and said, "Fluctuations".

The Asian guy says, "Fluc you white people, too!"

He then removes his underwear, and the blondes goes
running out of the apartment screaming in fear.

The body builder puts his clothes back on and chases after
her.

He catches up to her and asks why she ran out of the
apartment like that.

The blondes replies, "I was afraid to be around all that
dynamite after I saw how short the fuse was!!!!!!"
