Welcome to Cappuccino’s Freebie Caf?.

Good morning everyone!!!

Well, my mom is coming home on Tuesday. An animal
lover, I’m pretty sure she had nine lives like a cat.
However, I’m quite sure she has used them all up.

Canning season is here. You know what that means. I
will be busy, busy, busy. We have so many fruit trees
and berry bushes that with all that canning and caring
for my mother, my newsletters will be very short.

Please be patient if I skip a week now and again. In any
case, I’m sure that many of you will be going on holidays.

May your hearts be happy, your mailboxes full and the

Today’s Recipes

Crostoli (these are favourites in Europe – easy to make)

These are amazing. Easy to make and sooo good. If you
have a pasta making machine, that’s even better because
the width of lasagna is perfect for this recipe. Just make
sure you run the dough through the machine at least 3
times starting from the thick setting to the thin. Then
just cut the strips diagonally.

Ingredients

6 egg yolks
1/4 cup granulated sugar
1/4 cup whipping cream
1/2 tsp salt
1 tbsp rum or brandy (optional)

1 tsp white vinegar
2 to 2-1/2 cups all-purpose flour
4 cups vegetable oil
dusting of icing sugar

Directions

1. In a large bowl, using a whisk, whip yolks until light in
colour. Whisk in granulated sugar, cream, salt, rum, if using,
and vinegar. Using a wooden spoon, stir in 2 cups flour,
stirring in a little more flour, if necessary, so that dough is
smooth and satiny and no longer sticky. Then knead lightly
with floured hands. Divide dough into quarters, then form
each quarter into a ball. Wrap each ball in plastic wrap and
refrigerate until chilled, about 30 minutes. Line a baking
sheet with a few layers of paper towels.

2. Work with one ball of dough at a time, keeping rest in the
refrigerator until needed. Lightly dust counter and rolling pin
with flour. Roll out dough as thinly as possible, no thicker
than 1/8 inch. Using a pastry cutter with a scalloped edge, a
pizza cutter or knife, cut rolled dough into 1x3-inch strips.
Using tip of a small knife, make a 1/2-inch slit lengthwise in
each strip. Pull one end almost all the way through slit.

3. Pour oil into a deep saucepan. It should be at least 3
inches deep. Place over medium-high heat until hot. This
may take 10 minutes. Then reduce heat to medium and
carefully slip 4 to 6 cookies into oil. Cook until lightly
browned on one side, from 1-1/2 to 2 minutes. Turn and
continue to cook until evenly browned, from 1-1/2 to 2 more
minutes. Immediately remove with a slotted spoon and place
on paper towels. Repeat with remaining dough. When cool,
dust cookies with icing sugar. Store in an airtight container
at room temperature up to 1 week. Do not freeze.

and says, "Got stuck, huh?"

The truck driver says, "No, I was delivering this
bridge and ran out of gas."

not being here tomorrow. I might consider a nuclear attack
or a serious personal injury, illness, or a death in your

A smart-ass guy in the back of the room raised his hand and
asked, "What would you say if tomorrow I said I was
suffering from complete and utter sexual exhaustion?"

The entire class is reduced to laughter and snickering.

When silence is restored, the teacher smiles knowingly at
the student, shakes her head and sweetly says.
"Well, I guess you'd have to write the exam with your other
hand."
