Good morning everyone! Welcome to Mocha Monday’s edition at
Cappuccino’s Caf?, and a very warm welcome to new subscribers.

I’m sure by now you’ve notice that I keep changing things. Well,
being a newbie, I’m still learning, trying to make it better. So,
please bear with me. One of these days, it will be perfect. Don’t
forget to pass it along to friends and family. Let’s not be greedy.

Apologies, one of the links, “Earthlink” (accidentally included in
Friday’s newsletter) was only available in the US (sigh). Forgive me.
Today, I went to the LifeFest expo for women thanks to Judy S. who
was very kind to invite me. Thank you Judy. I would not have gone
otherwise because the fee at $22 per person was a bit steep but let
me tell you, it was well worth it. If you have the opportunity to
attend it in your area, I would highly recommend it. We were so
loaded with freebies I barely made it home (heh heh). I’m a little
hog when it comes to freebies.

RECIPE OF THE DAY
PASTA SALAD WITH TOMATOES AND ARUGULA

Ingredients: (serves 4)

6.5 oz (200 g) fusilli or any short pasta
4 fresh tomatoes or 1 lb( 500 g) cherry tomatoes
2 large handfuls of arugula
1/4 cup (50 mL) Bertolli Extra-Virgin Olive Oil
salt pepper
1/4 cup (50 mL) shredded Parmesan cheese
3 tbsp (45 mL) toasted pine nuts
4 tbsp (60 mL) pitted, chopped black olives

Cook the pasta al dente (firm, not mushy) in plenty of boiling water
(add salt when boiling).

Cut the tomatoes into 8 segments and mix with the arugula leaves.
Season with the olive oil, a little salt and a generous sprinkling of pepper.

Drain the pasta, add the tomato and arugula mixture and mix
thoroughly. Serve and sprinkle the Parmesan cheese, pine nuts and
olives over each plate.

A tip:
Toasted (pine) nuts have more flavour. Toast them in a non-stick pan
without any oil until golden brown.
