Good morning everyone. Welcome to Cappuccino’s Mocha Monday edition
at the Freebie Caf?, and a very warm welcome to new subscribers.

I don’t know about the rest of the world but it’s been freaking cold
here in Toronto.

Anyone planting this weekend should reconsider. I’m still expecting
it to snow, hail, whatever!! Murphy’s Law. Could this be Mother
Nature’s revenge against pollution?

Unable to decide what to wear to venture outdoors, I came to the
conclusion that indoors was the best choice.

Hope the weather will be kind to those who are planning fireworks
displays today. A kind warning – please do not allow children to
handle fireworks without an adult present. Better to be safe than
sorry. There are far too many children injured this time of year.

May your hearts be happy, your mailboxes full, and the mailman
forever busy. HAPPY HUNTING!!! Have a safe and wonderful Victoria
Day weekend.

Recipe of the Day

Italian Focaccia-Onion Bread

2 packages dry yeast, dissolved in 1 cup lukewarm water 3 cups
unbleached flour
2 packages dry yeast, dissolved in one cup lukewarm water
3 cups unbleached flour
Olive oil
1 teaspoon sugar
1 teaspoon salt
3 tablespoons tomato paste
1 yellow onion, peeled and chopped
6 green onions, chopped
1 clove garlic, crushed
Fresh-cracked pepper

Place the water and yeast in a mixing bowl. Add half the flour,
1/4 cup olive oil, the sugar, and salt, and mix with an electric
mixer until smooth. Add the remaining flour, and blend in by hand.

Place the dough on floured board, and knead for 5 minutes. Place
the dough on a Formica countertop or on plastic wrap, and cover
with a large metal bowl. Allow to rise about 1 hour, or until
doubled in bulk.

When it is doubled, punch the dough down, and knead it for 1 or 2
minutes. Roll the dough out to fit a greased 9- by 13-inch shallow
pan, and place the dough in the pan. Let the dough rise until not
quite doubled in bulk, and then punch holes all over it, using a
fork. Brush the top of the dough with some olive oil and then the
tomato paste. Mix together the yellow onion, green onions, and
garlic; use to sprinkle top of dough. Sprinkle with the pepper.

Preheat the oven and bake at 375° for about 25 minutes, or until
lightly browned.

This bread is great on a buffet. Or slice in half and use for
Italian sandwiches such as a little Italian salami, some yellow
onion, and a few green olives. Drizzle a little Italian salad
dressing on the sandwich, and enjoy with a heavy red wine.

MAKES I LOAF.

The Speeder and the Cop

A police officer pulls over a speeding car. The officer says, I
clocked you at 80 miles per hour, sir."

The driver says, "Gee, officer I had it on cruise control at 60,
perhaps your radar gun needs calibrating."

Not looking up from her knitting the wife says: "Now don't be silly,
dear, you know that this car doesn't have cruise control."

As the officer writes out the ticket, the driver looks over at his
wife and growls, "Can't you please keep your mouth shut for once?"

The wife smiles demurely and says, "You should be thankful your
radar detector went off when it did."

As the officer makes out the second ticket for the illegal radar
detector unit, the man glowers at his wife and says through clenched
teeth, "Darn it, woman, can't you keep your mouth shut?"

The officer frowns and says, "And I notice that you're not wearing
your seat belt, sir. That's an automatic $75 fine."

The driver says, "Yeah, well, you see officer, I had it on, but took
it off when you pulled me over so that I could get my license out of
my back pocket."

The wife says, "Now, dear, you know very well that you didn't have
your seat belt on. You never wear your seat belt when you're driving."

And as the police officer is writing out the third ticket the driver
turns to his wife and barks, "WHY DON'T YOU PLEASE SHUT UP??"

The officer looks over at the woman and asks, "Does your husband
always talk to you this way, Ma'am?"
