She and her new husband had a western - red neck wedding. Thought you would get a kick out of one of my shower games. Will post ideas in tomorrows letter! *** HILLBILLY RECIPE OF THE DAY *** Julie--I found this in one of my 400 cookbooks..yes I really DO have that many--It's my job! I'm a specialty food advisor for Central Market in Houston.....a.k.a. foodie. 1 pie shell 2 cups cooked, peeled sweet potatoes [can use pumpkin] 4 ounces [1/2 cup] unsalted butter 1/2 cup heavy cream 1/2 cup light brown sugar, packed 2 large eggs.slightly beaten 1 teaspoon vanilla 1 teaspoon cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg dash salt 2 tablespoons brandy, bourbon, or orange juice 1/2 cup dark corn syrup 1 cup pecan halves Prick bottom of pie crust with fork; bake in preheated oven [425 degrees F] for 12 minutes. Set aside. Mash sweet potatoes [pumpkin] with half [1/4 cup]. Let cool. Add heavy cream, brown sugar, eggs, vanilla and spices,and brandy [or bourbon or orange juice]. Beat until fluffy; turn into pie crust and bake at 375 degrees F for 20 minutes. Combine remaining 1/4 cup butter with corn syrup and pecans; sprinkle evenly over top of pie. Return to over and bake 25 minutes longer, or until a toothpick inserted in the center comes our clean. Serve with whipped cream or whipped topping.
