They are usually really fun, the kids always get cool stuff and theres always lots of good food. Then theres another that is just for the grownups next week. I have NOTHING to wear! NIL! I work at home I wear my OU jammy pants, shorts, sweats, or jeans. I need to dress up which means I am going shopping...for me...wow! that never happens! How you doing anyway? Here's a special recipe for you. My father's family is from Finland. It is believed that most Finns have a second stomach just for desserts. I think so too. Piparkakut [Ginger Cookies] makes about 200 or serves 2 Finns Preparation Time: 30 minutes plus overnight Cooking time: 10 minutes/batch Oven Temperature: 400 degrees F 1 1/4 cups margarine 1 1/4 cups sugar 3 eggs 1 cup dark corn sryup 2 teaspoons cinnamon 2 teaspoons ginger 2 teaspoons cloves 1 teaspoon grated orange rind 7 cups white [all purpose] flour--divided into 2 equal portions 3 teaspoon baking soda 1. Boil the sryup and spices, add the margarine and beat until the mixture is cool. 2. Beat the eggs and sugar in a separate bowl. 3. Mix the baking soda into 1 of the flour portions and then combine with the syrup- margarine mixture. Add the whipped eggs and the rest of the flour. Do not knead the final mixture. 4. Cover the dough with plastic wrap and leave overnight in fridge. 5. Roll out the dough, cut into shapes, and bake until golden brown. I grew up with these. They're work, but worth it. You might be a Yooper if you wear the earflaps on your hat down in August. Will explain that later. hehe Joan Joan..LOL I am forwarding this newsletter to you today!! HUGS to you & thanks for the recipe! **Swamp Recipe Of The Day** ~Cherry Kisses~ 2 1/3 cups all-purpose flour 1 cup (2 sticks) butter, softened 1/2 cup granulated sugar 1 large egg 2 teaspoons vanilla extract 1 teaspoon ground nutmeg (optional) 3/4 teaspoon ground cardamom 36 maraschino cherries, cut in half Preparation Time: 20 minutes Cooking Time: 10-15 minutes per batch Makes 6 dozen cookies 1. Preheat the oven to 350?°F. In a medium bowl, sift the flour twice. 2. In a large bowl, using an electric mixer set on medium speed, beat together the butter and sugar until light and fluffy. Beat in egg, vanilla, nutmeg, and cardamom. Reduce the mixer speed to low. Gradually beat in the flour just until a firm, but not dry, dough forms. 3. Spoon half of the dough into a cookie press fitted with a snowflake plate. Press cookies, 1 inch apart, onto 2 ungreased baking sheets. Top each cookie with a cherry half. 4. Bake the cookies until barely colored and slightly browned on the bottom, 10 to 15 minutes. Transfer the baking sheets to a wire rack to cool.
