My weekend flew by how bout yours?? We went and seen 'Meet The Fockers' ....It was SO good!! If you haven't seen it you must! I was worried it might not be as good as the first, it was awesome! We laughed and it was just one of those really fun movies.My husband thinks they will do a third, they should!! Oh, and Chase {my 5 Year old} lost his first tooth yesterday. We forgot all about it last night cause they had friends over so they built little forts...hehe on the living room floor and slept in there. So anyway tonight I put him to bed and he is of course all excited for the Tooth fairy. So I have his tooth up on top of my computer desk. I come in here and it is gone.....where could it have gone?? Noone has seen it so I have to think fast and my 9 year old is standing here going 'Mom, what about the toothfairy?' I said I will still leave....oh I mean SHE will still leave the money! OMGosh i almost ruined the whole thing for my 4th grader too! So anyway. I explained to my 5 year old that it seems the toothfairy has came early for his tooth but will be leaving the money under his pillow anyways. WHEW! LOL And I told him she might leave him a quarter and he looked at me funny and said 'For what??' BAHAHAHA I guess a quarter isn't even much to a kindergartner huh? Susie ~~ **Swamp Recipe Of The Day** ~Fire House Chili Casserole~ INGREDIENTS: 16 ounces lean ground beef 2 teaspoons olive oil 2 medium yellow onions, chopped (about 2 cups) 1 medium green bell pepper, chopped (about 1 cup) 1 tablespoon chili powder 1 can (14 1/2 ounces) whole tomatoes 1/4 cup no-salt-added tomato paste 1 can (8 3/4 ounces) red kidney beans, drained and rinsed 1 can (7 ounces) whole kernel corn, drained 3 corn tortillas, cut into quarters, divided 1/4 cup shredded reduced-fat cheddar cheese Preparation Time: 25 minutes Cooking Time: 25 minutes Serves 4 1. In a large nonstick skillet, cook beef over medium heat, stirring, until browned, about 5 minutes. Place beef on a paper towel-lined plate. Wipe skillet clean with paper towels. 2. Preheat oven to 375?° F. In same skillet, heat oil over medium heat. Add onions; cook, stirring, for 5 minutes. Add bell pepper and chili powder; cook, stirring, for 4 minutes. Stir in beef, tomatoes with liquid, and tomato paste. Bring mixture to a boil. Reduce heat to low; cook for 5 minutes. Stir in beans and corn. 3. Spray a medium baking dish with vegetable cooking spray. Spoon half of beef mixture into prepared dish. Layer half of tortillas on top. Top with remaining beef mixture. Cover dish with foil; bake for 20 minutes. Uncover; top with remaining tortillas and cheese. Bake until cheese melts, about 5 minutes.
