As ususal I am running behind....guys I had the most horrible Monday EVER! I wasn't even going to say anything but what the heck, I blab to you all about everything else LOL. Anyhoo, yesterday, I ran out to the mailbox to check my mail.....mind you, I am in my jammie pants a t~shirt and baby blue fuzzy socks. So I run out like I always do and grab my mail real quick. I go to come back in the house, and somehow the bolt on my front door slipped back and locked! Well...Colton (my 18 month old) was in here all alone. I must have felt like people do when they realize their child is missing because I panicked and it was such a awful feeling. I always keep all my windows and back doors etc locked so there was no way to get in. I would have course done whatever it took to get to my child break a window out whatever. I ran to my neighbors house and had to go to 4 before anyone was home. My husband would have taken at least 30 minutes to get here by the time he drove home from work through all of the traffic. So I had to call 911....man they took it as seriously as me , they sent the fire Dept. which was in here in I swear 2 min at the most. They kicked in a old part of my back door and were in here and carrying my baby out all in like um...3 minutes?? They were the nicest men and told me I did the right thing even though I felt like a complete idiot I really didn't care I was just so afraid Colton was in here getting hurt even though I always keep the bedroom & bathroom doors closed thank goodness! I was a complete wreck all day and still am! Yesterday my husband fixed the code on our garage door opener box so this will never happen again and I can always get in....And I will never check the mail dressed like that again! Ya goof!! ~~ Don't feel bad about the lost tooth. I remember once my daughter lost her tooth around the holidays and I totally forgot. The next morning she came out crying and all the kids were upset. She was so afraid the toothfairy was mad at her because she didn't come. I had to think quick and explain that the toothfairys magic wasn't as strong as santas and that if alot of kids lost there teeth on the same day she didn't have the power to get to all of them in one night that was why she had up to three nights to collect the tooth and to bring money. My son then decided that if she had three nights the longer she took the more money she should leave. Needless to say that was an expensive tooth but at least they all continued to believe, terri Terri, thanks now I don't feel so bad! LOL **Swamp Recipe Of The Day** ~All Day Slow Cooker Chicken~ Marinade Ingredients (Do the night before): 2 tablespoons frozen orange juice 2 cups chicken stock 1 teaspoon salt 1/4 teaspoons pepper 1/2 cups tomato paste 2 tablespoons soy sauce 2 tablespoons brown sugar 2 cloves garlic, minced 1 dash allspice Remaining Ingredients: 4 pounds chicken, breasts and thighs 1/4 pounds mushrooms, sliced 2 tablespoons margarine or butter 11 ounces mandarin orange , (1 can) sections, drained 1/2 a medium-large bell pepper, sliced lengthwise 1/4 teaspoons ground ginger 3 tablespoons cornstarch 1/4 cups cold milk 1/4 cups cold water The night before you plan on slow cooking your dinner, mix together the marinade ingredients in a large, closable container large enough to also hold the chicken pieces. When marinade is thoroughly mixed, add the chicken, close container and refrigerate until morning. In the morning place the chicken in the slow cooker/Crock Pot and add marinade up to about an inch from the top of the container. Set the cooker on low and cover. 6 to 8 hours later, turn the cooker to high. About an hour later, saute the sliced mushrooms in the margarine or butter. Then add the mushrooms (with pan juices), mandarin sections, green pepper and ginger into the slo cooker and stir thoroughly. Mix together the cornstarch, milk and cold water, then gradually add into the slow cooker while stirring until the entire mixture thickens a bit. Re-cover the slow cooker/Crock Pot and let simmer for 15 to 30 minutes unti serving. Serve with baby carrots, new potatoes or veggies of your choice.
