Want to start today's letter by saying we went to the doctor this morning, and he really thinks Mandy is OKAY....Still doing a MRI just to rule everything out but he is pretty confident its nothing like was first thought. She has so much muscle tension...maybe from being away from school, kinda being depressed. We started walking today and as long as the weather holds up we will get out and keep active on a daily basis. It was great walking today, so nice out! I firmly believe in prayer and I know she was on tons of prayer lists thank all of you so so much! I want to thank Linda which we recieved a card from today with very cute stickers. We had just pulled up from the doctors and there it was in the mail, so thank you Linda!! He was injured when a trailer fell on his head. He appears to have severe brain damage that looks to be irreversible. He may not survive at all. He is an only child and his parents are devastated. Julie **Swamp Recipe Of The Day** ~Steak Roll Ups~ Round steak is flattened and then stuffed and simmered. INGREDIENTS: 2 lbs. lean boneless round steak 1/2-inch thick 12 medium carrot sticks 6 medium dill pickle spears 6 slices bacon, partially cooked 3/4 c. Catalina French dressing 1 cup water 1 medium onion, sliced 2 tablespoons flour PREPARATION: Cut steak into 6 portions; pound to flatten. Wrap 1 piece of steak around 2 carrot sticks, 1 pickle spear and 1 slice of bacon. Secure with toothpick. Repeat to make 6 roll ups. Place in pan and brown in just enough oil to keep from sticking. Quickly add dressing and heat over low heat. Add 3/4 water and onions. Add rest of water and bring to boil. Cover and simmer for 45 minutes until steak is tender. Remove steak to warm plate and stir in the flour to the juices. Add more water if needed for gravy.
