NO obligation - Confidential http://tinyurl.com/98gpm AOL ~~~~~~~~~ F*REE sample of Olay Regenerist http://tinyurl.com/4mw3z AOL **Swamp Recipe Of The Day** ~Potato Puff Casserole~ You'd never guess leftover mashed potatoes are the main ingredient in this delightful casserole that's good enough for company INGREDIENTS: 1 small onion, chopped 2 tablespoons butter or margarine 1/2 cup milk 1/2 teaspoon ground mustard 1/4 teaspoon salt 1/8 teaspoon pepper 2 cups mashed potatoes (prepared with milk and butter) 2 eggs, separated 1 cup shredded Cheddar cheese (optional) DIRECTIONS: In a skillet, saute onion in butter until tender. Stir in milk, mustard, salt and pepper; bring to a boil. Remove from the heat; stir in potatoes and mix well. Stir in egg yolks until smooth. Cool at room temperature for 15 minutes. Stir in the cheese if desired. In a small mixing bowl, beat egg whites until soft peaks form. Fold into the potato mixture. Spoon into a greased 1-qt. baking dish. Bake at 350 degrees for 40-45 minutes or until puffed and lightly browned.
