Remove from oven and cool at least 10 minutes. Cut potatoes in half length-wise. Scoop out pulp, leaving 1/2-inch shell. Mash or mix potato pulp to remove all lumps. Place cottage cheese and milk in a blender or food processor. Process until smooth. Mix together cottage cheese mixture, onions, paprika, black pepper and Colby cheese. Stuff potato shells with mixture.
