It's Cooking Time For The Holidays

Cooking Roasts
Don't add salt to a roast until shortly before the meat is done.
Salt coaxes the juices out of meats, and unless you're making
soup or stock you'll want the juices to remain inside.  Remove
a roast from the oven when the meat thermometer registers
an internal temperature of 5 to 10 degrees below the specified
temperature.  The meat will continue to cook while it rests
before your slice it.

Cooking Lamb
Lamb won't smell as strong while it's cooking and it'll taste milder
if you trim off excess fat before broiling, saut?ing, or roasting it.
To help even more, sprinkle the lamb very lightly with cinnamon.

Roast pork tastes delicious and is juicer when cooked to an
internal temperature of 170F.  This is sufficiently high to
kill the trichinosis-causing parasites (which die at 137F, but
low enough to ensure that the roast doesn't dry out.  Before
a roast is served, brush it lightly with the gravy to give it an
attractive glaze.
 
Cooking Ham
If you're going to serve a boiled ham cold, it will be much juicer
if you let it cool in the liquid it has simmered in.  Cool and freeze
the liquid for cooking vegetables and for making split pea soup.

Tips for Gravies

Lumpy Gravy
Buzz in your blender or food processor, beat vigorously with
wire whisk, or push the gravy through a fine sieve.
 
Rich Brown Color
To obtain a rich brown color when preparing beef stock, brown
the bones under a broiler.  Then add the bones to the stock
and simmer.
