It's Cooking Time For The
Holidays

Roasts
Don't add salt to a roast until shortly before
the meat is done.
Salt coaxes the juices out of meats, and unless
you're making
soup or stock you'll want the juices to remain
inside. Remove
a roast from the oven when the meat thermometer
registers
an internal temperature of 5 to 10 degrees below
the specified
temperature. The meat will continue to cook
while it rests
before your slice it.

Lamb won't smell as strong while it's cooking and
it'll taste milder
if you trim off excess fat before broiling,
saut?ing, or roasting it.

Tips for Gravies

Buzz in your blender or food processor, beat
vigorously with
wire whisk, or push the gravy through a fine
sieve.

Color
To obtain a rich brown color when preparing beef
stock, brown
the bones under a broiler. Then add the
bones to the stock
and simmer.
