Sounds Yummy! *~^Two-Way Risotto Primavera^~* Ingredients 1/4 cup thinly sliced celery 1/4 cup thinly sliced shallots or green onions 2 cloves garlic, minced 1/8 teaspoon pepper 1 tablespoon margarine or butter 1 cup Arborio or long-grain rice* 1 14-ounce can reduced-sodium chicken broth 1 3/4 cups water 1/2 cup fresh or frozen peas, thawed 1/2 cup coarsely chopped yellow summer squash and/or zucchini 1/2 teaspoon finely shredded lemon peel Directions 1. In a 3-quart saucepan cook celery, shallots or green onions, garlic, and pepper in hot margarine or butter until tender but not brown. Add the uncooked rice. Cook for 2 minutes more. 2. Carefully stir in broth and water. Bring to boiling; reduce heat. Cover and simmer for 25 minutes (do not lift cover). Remove from heat. 3. Stir in peas, squash or zucchini, and lemon peel. Cover and let stand for 5 minutes. Serve immediately. Makes 6 side-dish servings. Traditional Method: Cook celery mixture as directed above; add uncooked rice. Cook and stir for 2 minutes more. In a 1-quart saucepan bring broth and water to boiling. Add 3/4 cup of the broth mixture to the rice mixture, stirring constantly over low heat, until rice has absorbed most of the broth. Continue adding the broth, 3/4 cup at a time, stirring constantly until rice is almost tender, but firm to the bite. (It should have a creamy consistency.) This should take about 20 minutes. During cooking, adjust the heat as necessary to keep broth at a gentle simmer. Stir in peas, squash or zucchini, and lemon peel. Cover and let stand for 5 minutes. Serve immediately. *Note: The secret to the creaminess of risotto lies in using Arborio rice and stirring constantly during cooking. However, our Test Kitchen found that using long-grain rice and covering during cooking makes a satisfactory shortcut. ****~~~~********~~~~********~~~~********~~~~******** ~~~Nap's Craft of the Day!!!~~~ If you would like to see Pictures of The Crafts please stop by our message board!! http://tinyurl.com/cf9wx AOL ~*^Patriotic Placemat^*~ Materials Needed: Tulip Dimensional Paint 65088 Gold 65089 Silver Foam Glue Craft foam: red, white and blue Craft foam stars: red, white and blue White chalk pencil Pinking shears Scissors Ruler For best results, please read all instructions before beginning project. Refer to photo for color and design placement. Instructions: 1. Placemat: Trim edges of large sheet of craft foam with pinking shears. 2. Using chalk pencil, lightly draw curved lines from lower left side of mat to simulate fireworks, referring to photo. Trace over lines with Glitter Gold and Silver. Repeat process with remaining sheets. Let dry. 3. Apply glue to stars. Let sit according to instructions on bottle. Attach stars randomly around shooting sparks. 4. Add Silver dots in center of stars and random dots in fireworks. Napkin Ring Holder: 1. Cut craft foam 2-?? x 8???. Trim edges with pinking shears. Find center and make firework lines using Gold Glitter. Let dry. Glue small stars in place. Add random dots of Silver Glitter. Let dry. 2. Wrap ends together to determine size of hole opening for napkin. Apply glue to one side of strip.
