I am! I had to put a sweatshirt on! I was so happy to walk outside this morning and feel the cool breeze! It was so incredibly nice. I am staying up super late to get this done. I will be out most of the day tomorrow and really didnt think I would have much time to get it done in the morning so here I sit at 2 am! I actually feel like I have accomplished so much more with the kids in bed not bugging me the entire time I do this. I am finishing up with the school list today! I feel so nervous about school this year. My oldest daughter is starting middle school and she will be attending a new school and this year Cortlynn starts 1st grade so she will be there all day! I am kinda sad about Brianna starting middle school it seems like just yesterday I was holding her hand walking her to her kindergarten class. Tonight I was going through all of her baby pictures and put myself in more of a funk. They just grow up so fast!! Oh newsflash~I am no longer putting the letter on the website. I have the yahoo group and the archives and if our publisher goes down again you can always go to the yahoo group and read it there. You dont have to join to read it only to have it delivered to your inbox. Enjoy the Recipe~Craft and Tip!!! ~^~^~^~^~^::~*~::^~^~^~^~^~ ~~~Laura's Recipe of the Day!!~~~ Thanks Nap! ;-) ~*^::Baked Apple Pancakes::^*~ 1 Granny Smith apple, seeded, peeled, cut into ?? -inch-thick slices 2 tsp. fresh lemon juice 4 large eggs ?? C whole milk ?? C all purpose flour ?? tsp. salt ?? C (packed) dark brown sugar 1 ?? tsp. ground cinnamon 4 Tbsps. (?? stick) unsalted butter 1 ?? tsps. ground cinnamon Preheat oven to 450 degrees 1. Toss apple slices with lemon juice in medium bowl. 2. Whisk eggs and milk in large bowl to blend. Add flour, 1Tbsp. Sugar and salt; whisk until batter is almost smooth (small lumps of flour will remain). 3. Mix brown sugar, cinnamon and remaining ?? C. sugar in small bowl. 4. Melt 1Tbsp. butter in each of two 6-inch ovenproof nonstick skillets over medium heat. Pour half of batter into each skillet. Arrange half of apple slices evenly over batter in each skillet. 5. Transfer skillets to oven and bake until pancakes are set around edges but still wet in center, about 8 minutes. Remove from oven; sprinkle half of brown sugar mixture over each pancake. Dot each with 1Tbsp. of butter. Using spatula, carefully turn pancakes over. Return to oven. Bake until pancakes rise, sugar mixture melts to sauce consistency and top of pancakes is golden, about 6 minutes. Invert onto plates. Serve warm. ~^~^~^~^~^::~*~::^~^~^~^~^~ ~~~Nap's Craft of the Day!!!~~~ If you would like to see Pictures of The Crafts please stop by our message board!! http://tinyurl.com/cf9wx AOL ~*^Soap Crayons^*~ 1 c Soap flakes -Food colouring 2 tb Hot water Have one large bowl and several small bowls, one for each color. You will also need an ice cube tray with different sections, or containers to act as small molds. Put soap flakes in a large bowl and drop the hot water into the soap flakes, stirring constantly. The mixture will be extremely thick and hard to stir. Spoon some of the soap into each of the small bowls and color each separately, adding the color by drops until the soap has the consistency of a very thick paste. Press spoonfuls of the soap into your molds and set the crayons in a dry place to harden. They should take a few days to a week to dry completely. When dry, remove from the molds and allow to dry for a few more days before using.
