Sorry that I missed getting a Friday letter out to you but I was stuck at work for the last 3 days pretty much morning until night and with school starting and all the hustle and bustle it has been an exhausting week. My husband was not all that thrilled about my goodies. He thinks we have enough junk already but I love finding great deals and cant pass them up! Enjoy the Recipe~Craft and Tip!!! :*::*::*::*::*::*::*::*::*::*::*: ~~~Laura's Recipe of the Day!!~~~ Thanks Raven! ;-) ~*^:: Just The Two Of Us ::^*~ THE MENU Pot Roast for Two Tomato and Herb Potatoes Brickle-Crunch Peach Tarts THE RECIPES Pot Roast for Two Microwave Cooking* ?? of a 3-pound boneless beef chuck pot roast (cut 2-inch thick) ?? cup water 2 teaspoon Worcestershire sauce 1 teaspoon instant beef bouillon granules ?? teaspoon crushed dried basil or dried marjoram Dash black pepper 6 baby carrots cut into halves 1 medium potato, peeled and quartered 1 medium onion, cut into eighths 2 tablespoons water 1 tablespoon flour 1 small clove garlic, minced Trim the excess fat from the roast. In a 1-quart microwave safe casserole dish, stir together the water, Worcestershire sauce, bouillon granules, basil or marjoram, pepper and garlic. Add the roast. Cook covered on High, 3 minutes or until the liquid is boiling. Cook covered on medium for an additional 20 minutes. Turn the roast over. Add the carrots, potato and onion. Cook covered, on medium, for 10 to 20 minutes or until the meat is done and the vegetables are tender, spooning the liquid over the meat and vegetables once or twice during the cooking process. Remove the meat and vegetables from the casserole leaving just the juice. Keep the meat and vegetables warm. To prepare the Gravy: Pour the juice into a one cup measure; skim off the excess fat. Add water to make ??-cup total and return to the casserole. Stir in 2-tablespoons flour and water microwave on High for 1 to 2 minutes. Thinly slice meat. Spoon the gravy over meat and vegetables on a platter. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Tomato and Herb Potatoes Serves 2. 6 small new potatoes, scrubbed ?? teaspoon butter or margarine 6 cherry tomatoes, halved 2 tablespoons snipped chives 1 tablespoon fresh parsley, chopped 1 tablespoon fresh basil, chopped Freshly ground black pepper, to taste Cook the potatoes in boiling water until tender. Drain well. Set aside. Melt the butter in the same pan. Add the tomatoes, herbs and pepper. Saut?© for 1 minute. Return the potatoes to the pan. Toss gently until heated through. Serve at once. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Brickle-Crunch Peach Tarts Source: Better Homes and Gardens Makes 2 tarts. 1 tablespoon sugar 1 teaspoon all-purpose flour 1/8 teaspoon ground cinnamon 1 cup thinly sliced, peeled peaches or frozen unsweetened peach slices 1 tablespoon snipped dried tart red cherries or cranberries, or raisins ?? teaspoon lemon juice 2 portions Basic Pastry Dough (see Recipe below) 2 tablespoons almond brickle pieces 1 tablespoon chopped almonds or pecans Vanilla ice cream (optional) Preheat oven to 375 degrees F. 1. In a medium mixing bowl stir together the sugar, flour, and cinnamon. Add the peaches; cherries, cranberries, or raisins; and the lemon juice. Toss to coat peaches. If using frozen peach slices, let the peach mixture stand for 15 to 30 minutes or until the peaches are partially thawed but still icy. 2. Prepare Basic Pastry Dough as directed. On a lightly floured surface, roll each portion of dough into a 7- ?? -inch circle. Trim circles to 7 inches. Transfer the circles to an ungreased baking sheet. Stir the peach mixture. Spoon half of the peach mixture in the center of each circle, leaving about 1-??-inch border. Fold the border up around peach mixture, crimping pastry to form an edge. 3. Mix brickle pieces and almonds. Sprinkle over peach mixture. Bake in a 375 degree F oven about 25 minutes or until edges are golden and peaches are tender. Cool tarts slightly on baking sheet on a wire rack. Serve warm. If desired, top with ice cream. Basic Pastry Dough Makes 8 servings as a pie shell (or 4 dumplings). 1- ?? cups all-purpose flour ?? teaspoon salt 1/3 cup shortening 4 to 5 tablespoons water In a medium mixing bowl stir together the flour and salt. Using a pastry blender, cut in shortening until pieces are the size of small peas. Sprinkle 1 tablespoon of the water over part of the mixture, then gently toss with a fork. Push moistened dough to the side of the bowl. Repeat, using 1 tablespoon water at a time, until all dough is moistened. Use dough for single-crust pie or pie shell, or use to make dumplings. Make-ahead tip: Seal dough in moisture-and vapor-proof wrap, label, and freeze for up to 3 months. To use, let dough stand at room temperature about 1 hour or until thawed. Paint the stops of 20 coasters in assorted colors. Paint a second or third coat, as needed, to fully cover the cork. 2. Glue a plain coaster to the back of each painted coaster. (This adds thickness to the bulletin board, so you can push tacks into it.) Lay books on top of the glued coasters to prevent the cork from curling. Allow to dry overnight. 3. Paint the edges of the coasters; let dry. 4. Referring to the photo, adhere the coasters to the wall with removable wall-mounting stickers.
