Enjoy the Recipe~Craft and Tip!!! o*~o*~o*~o*~o*~o*~o*~o*~o*~o*~o ~~~Laura's Recipe of the Day!!~~~ ~*^:: Dr Pepper-Marinated Skirt Steak Tostadas ::^*~ Makes eight servings. 1 pound skirt steak or flank steak 1 16-ounce bottle Dr Pepper 3 tablespoons vegetable oil 8 corn tortillas Kosher salt to taste 2 tablespoons All-Around Beef Rub (recipe follows) 1 ?? cups grated Monterey Jack cheese ?? cup crumbled goat cheese 1 cup Jose Falcon's Slaw (recipe follows) In a large glass or ceramic casserole dish, combine the skirt steak and Dr Pepper for 4 to 12 hours in the refrigerator. When you're ready to cook, heat the oil in a large skillet over medium-high heat to 375 degrees. Fry each tortilla for 8 to 10 seconds on each side, remove from the skillet with tongs, season with salt, and let drain on a paper towel-lined plate. Prepare hot grill. Remove the marinated skirt steak from the Dr Pepper and coat in the beef rub. Grill the meat for 3 to 4 minutes on each side or until desired temperature is reached. Remove the skirt steak from the grill and let rest for at least 5 minutes before slicing. To assemble the tostadas, preheat the oven to 350 degrees. Place the tortillas on cookie sheets and sprinkle evenly with the cheeses. Slice the skirt steak against the grain into thin strips, about ?? inch wide, and evenly distribute among the tortillas. Bake for 5 to 6 minutes or until the cheeses have melted just to bubbling. Remove from the oven and top each tostada with a spoonful of Jose Falcon's Slaw. All-Around Beef Rub ?? cup kosher salt 1 cup brown sugar ?? cup coarsely ground black pepper In a bowl combine all the ingredients, blending well. Store at room temperature in airtight container. Make sure to remix before each use. Use on steaks, pork and chicken. Jose Falcon's Slaw 1 cup thinly shredded red cabbage ?? cup thinly shredded green cabbage 1 red bell pepper, cut into very thin strips 1 bunch cilantro stems removed, leaves chopped ?? cup mayonnaise 3 tablespoons malt vinegar 2 teaspoon sugar Toss cabbage, red bell pepper and cilantro in large bowl, mixing well. In a small bowl, whisk together mayonnaise, vinegar and sugar until sugar is dissolved. Pour mixture over the cabbage and cilantro and toss well to coat. Add 1-inch seam allowance to pattern; cut and hand press fabric to nightlight. Trim sides of fabric to within a ?? -inch. Apply glue to inside side edges of nightlight; fold fabric over. Trim excess fabric at top & bottom edge of shade. (No allowance necessary) Embellish with coordinating fabric self-fold trim on top and bottom of nightlight.
