The Healthy Christmas Nut!

If you have followed my writings you know that many health
conscious people and myself know that nuts are not the bad
guy so many have dubbed them.

Nuts can be an aid to losing weight, keeping your heart
healthy and just overall well being. That's not to say you
should eat them around the clock. I guess you could, if you
want to be the size of a baby elephant or maybe a mama
elephant!

Christmas and Hanukkah is the season that nuts seem to
be around in greater abundance than any other time of the
year. Walnuts, pecans, chestnuts and hazel nuts being
the most popular. Sadly, most people add them on top of
all their rich holiday sweets, which make for the extra-
added weight gain so prevalent each year.

Nuts are harvested in the fall and winter months therefore
helping to push the holiday nut habit. A good habit, by the
way when eaten properly.

Nuts in the shell, are easy to store and keep year round,
retaining their nutrients and making for a really tasty
health food that should be in your earthquake and disaster
supplies??¦

A nut that I see on the shelves year round and a very tasty
nut that could prove to be your best addition for the
holiday season and all year round, is Pistachios. "One-ounce
a day could keep the doctor away."

Just think what could happen if you add an apple a day!
Both taste great and even better when combined, and could
possibly make doctors obsolete in your life!

Better late than never, the FDA has done a good thing in
releasing a report saying that eating nuts, such as
pistachios, might help reduce the risk of heart disease.

Pistachios contain phytochemicals such as betasitosterol,
which is associated with lowering heart disease and cancer
risks.   And pistachios are relatively high in the amino
acid arginine, which helps keep arteries flexible and your
blood flowing unheeded. That little one-ounce serving
contains as much potassium as one-half of a banana, a
necessary and much needed heart mineral!

In the nut realm Pistachios are naturally low in saturated
fat and cholesterol free. A one-ounce serving is about 49
nuts, more nuts per serving than any other snack nut, making
for more filling. So, count out 49 of these tasty health
building nuts and keep them handy for eating.

Easy to carry, nutritious to eat, and you could drop a few
pounds when replacing other empty calorie snacks! A nut

This year has really flown by fast. I just can't believe
that Christmas is just around the corner. I don't know if
any of you have finished your Christmas shopping, but I am
almost done.

Christmas shopping brings me to think how I use to shop and
how I shop now. I am going to close my eyes and step back
into that time when I would shop till I dropped.

Ahhhh that would be starting the day after Thanksgiving. WOW
that meant getting up at 4:30 am to get the bargains, the 6
am sales, the crowds lined up waiting to get in. The best
part was the free hot coffee and donuts as you walked
through those doors.

What a mad house, the excitement, buying everything on sale
and going home with more excitement to look again at
everything I bought on sale. I would take things out of the
packages I bought and like some little kid, I would
play with them and see how they worked.

It was soooooo exciting for me to shop, wrap those presents
and wait Christmas Eve till the kids fell asleep and slip
them underneath the tree.

Of course my husband would remind me that when I use the
credit card, and didn't pay the balance that I was not
getting a sale price at all. In fact I was paying more for
those Christmas presents than I would have if I paid cash.

Some how that never sank in when I hit those holiday sales.
Now I can open my eyes and step into reality and wow, what
was I thinking?

Christmas shopping takes on a new perspective as I grow
older and wiser. I try not to use the credit cards, I use
cash as much as possible and I don't get up at 6 am the day
after Thanksgiving.

Dog Health Tip of the Month

Let's not forget about our pets and their health. An older
dog can developed arthritis in it's hip. One vet suggested
instead of a prescription to try aspirin and glucosamine
chondroitin first.

For a dog about 85 pounds he suggested one and one-half
tablets of aspirin twice a day. Grind up one glucosamine
chondroitin pill in your pet's food each day.

You many want to ask your veterinarian for the correct
dosage according to your dog's weight.

It seems to be a great inexpensive method of pain control
for your dog. It saves your time and money.

I have also has tried the glucosamine chondroitin for my own
hip pain and it has improvement as well.

Recipes of the Month

Since it's the holidays and so many good recipes I will be
having more than one recipe this month.

Start a new tradition and skip the same-old pumpkin pie plus
it serves more people.

Recipe 1:

Pumpkin Cobbler

1 stick (1/2 cup) butter
1 cup self-rising flour
1 cup granulated sugar
1 cup whole or low-fat milk
1 teaspoon vanilla extract
2 eggs, beaten
1 can (5 ounces) evaporated milk
1 can (30 ounces) pumpkin pie filling

Preheat the oven 350 degrees. Cut butter into 4 pieces, and
place in a 9-inch-by-11-inch glass baking dish. Place the
dish in the pre-heated oven to melt the butter.

Meanwhile, in a medium bowl, mix together the flour, sugar,
milk and vanilla. Remove the melted butter from the oven and  
pour the flour mixture into the dish. Do not stir. Set
mixture aside.

Break the eggs into a 2-quart measuring or mixing bowl, and
whisk them. Add the evaporated milk and pumpkin pie filling.
Stir to mix well. Slowly pour or spoon the filling mixture
on top of the reserved crust batter in the pan. Do not stir.
The crust batter will rise to cover the pumpkin as it bakes.

Bake until the crust is dark, golden brown on top, about 50
minutes to 1 hour. Let the cobbler rest 20 minutes or up to
1 hour before serving. Serve tipped with vanilla ice cream,
if desired. Makes 8 to 10 servings.

NOTES: For best results, be sure to buy the kind of pumpkin
pie mix or filling that calls for adding eggs.


Recipe 2:

Pineapple Casserole:

2 cans pineapple chunks - Drain
1 cup sugar
1/2 cup flour
1 stick melted butter

Mix all together and take 1 stack of Ritz Crackers and crush
all over the top. Bake at 350 degrees for 45 minutes.

You'll have to try this one to believe it. It is really
yummy!


Recipe 3:

Company Mashed Potatoes:

5 lb. potatoes
8 oz. cream cheese
1 cup half & half
1 cup butter
1 teaspoon onion salt
1 teaspoon seasoning salt
1 teaspoon salt
1/4 teaspoon pepper
8 oz. pkg. grated cheddar cheese

Boil potatoes and drain - Add all ingredients and beat - Top
with cheese.
Bake at 350 degrees 1/2 hour or bake longer if refrigerated
or frozen.
NOTE:** I have frozen this but it really doesn't come out
too well that way. It's great to fix a day ahead and
refrigerate though).


Recipe 4:

Wassail

6 Cups of Apple Juice
2 Cups of Cranberry Juice
16 Whole Cloves
4 Cinnamon Sticks
1 Cup Light Rum
1 Teaspoon Allspice
1 Orange Sliced

Simmer all in a large pan and enjoy!

Great holiday beverage!


Recipe 5:

Chocolate Chip Cheese Ball

1 Pkg. (8 oz) Cream Cheese Softened
1/4 Teaspoon Vanilla Extract
3/4 Cup Confectionery Sugar
2 Tablespoons Brown Sugar
3/4 Cup Miniature Chocolate Chips

Mix all together - Shape into a ball

Take 3/4 cup finely chopped pecans and roll ball in them
Chill Ball
Spread on Graham Crackers for a Sweet Treat!
