Is Low-Carb Really The Way To Go? - Part I


The latest trend in the area of weight loss is low-carb
diets such as the Atkins Diet. With so much conflicting
information out there on nutrition and weight loss, it's
difficult for the average person to not only find out what
works, but also understand how to apply it.

In order to help clear the air, I'm going to dispel some of
the myths that are floating around and give you some facts
backed up with real science on how the human body actually
metabolizes food.

First, let's talk about why the low-carb approach is so
popular. There are a few reasons, but the most common is
that people are finally realizing that the low-fat/high carb
approach that has been promoted for decades now just doesn't
work! Not only is it making us fatter, it's also responsible
for dozens of diseases and illnesses.

It's true??¦..most Americans eat too many carbs and are
deficient in the healthy dietary fats. ? However, it seems
that it has to be one extreme or the other with people in
this country. So now many people are cutting carbs and
avoiding them like the plague, which is just as bad.

But wait??¦..you say that it works? ? Maybe you or someone you
know has tried the low-carb approach and noticed significant
weight loss. Yes, cutting carbs will cause you to lose
weight, but not much actual body fat, if any at all. So,why
do most people lose weight so quickly? It's because the
human body holds 2.4g of water for every 1 gram of
carbohydrate consumed. ? Cut the carbs and all you do is hold
less water! This artificial weight loss is the main reason
so many people are going low-carb.

So, not only does following a low-carb diet cause you to
lose water, it also depletes muscle glycogen which leaves
you feeling sluggish when trying to be active or workout. ? 
Remember, carbs are stored as glycogen in the muscles and
glycogen is what's used to fuel your muscles.

Another problem with severely limiting carbs is that the
brain uses carbs for energy and without enough carbs, you
won't be 100% mentally. While I agree that people are
different and that some people do better on lower amounts of
carbs, most people will feel like crap after a week or two
with no or low carbs.

But all the fitness and nutrition `gurus' say that carbs are
stored as fat, right? ? WRONG! ? Any excess energy (food or
beverage) can be stored as fat - it doesn't matter if it's
french fries or salad! Extra is extra is extra! To my
knowledge, there has not been but one study that actually
measured body fat of individuals following a low-carb both
before and after to see exactly how much body fat was lost.
Plus, this study was funded by a grant from Dr. Atkins!

Also, there is quite a bit more research that shows that
carbs are not only ok to eat, but that they also contain
vital nutrients that can't be found in other foods.

first issue I received of ANew Weight Loss was awesome!!
The article, "Does Excess Protein Turn to Fat? An Anatomy
Lesson" by Maia Appleby was very interesting, as I guess I
never thought about what happens to what we eat. ? The
Mississippi Mud Cake recipe is excellent; I've eaten it
before. ? Oh, and your freebies section with the tips was
terrific! ? I never knew Dawn dishwashing liquid would do
that! ? Live and learn:) Anyway, great issue!

Just a few quick tips today to help you out through the day
on being more healthy.

1. Sip Water Throughout The Day - Hydrate for health. Water
cools and detoxifies the body, improves circulation and
digestion, and fuels muscle. A healthy adult needs 3 liters
of fluid daily.

3. Add More Fiber To Your Diet - Fiber increases energy,
assists with digestion and may also help with weight loss and
improve skin clarity. Favorite fibers: oatmeal, brown rice,
lentils and whole wheat flour.

You can now find a good variety of the fibers that are high
in carbohydrates now being sold in low carbohydrates in your
local grocery stores.

I bought some of the low carb wheat bread and it tasted
great. It was good to eat bread again and still watch my
carbs. I tend to be a carbohydrate eater and guess what? My
body does not burn those carbs. Thumbs up for the low carbs.
However there is a twist to that. Still have to watch those
bad fats that are in the low carb products. Yep you can't
win for losing. But at least it's a start in being able to
make better choices when shopping.

The Good, the Bad & the Ugly

The bad news is that if you read the list of ingredients on
a snack or baked food item, you may find "partially
hydrogenated soybean oil" or "hydrogenated cottonseed oil"
or another variation of these terms, such as margarine. Do
you think that sounds good? Think again.

Hydrogenated oils are artificially hardened oils that
contain trans fats. They are used to increase shelf life and
enhance the texture of certain foods, including many snack
foods, candies, fried foods and baked goods. Trans fats also
occur naturally in animal products such as butter. In recent
years, research has indicated that there are health risks
associated with the consumption of trans fats, including a
direct link to heart disease. Food manufacturers were
recently given a deadline by the FDA to label the amount of
trans fats on their products by 2006.

The GOOD news is that there are delicious, healthier and
equally satisfying products made without hydrogenated oils.
Although you can find them at selected stores or health food
markets they do offer a huge selection.

One store I found that I really love is called the Wild
Oats. It's the first store that I found low carb & low fat
crackers. I even found low carb & no fat cheese. Can you
believe that, cheese! It tasted great to be able to eat
these occasionally and not feel guilty.

Recipes of the Month

I hope everyone enjoyed last month's recipes as much as I
did. Here is a delicious way to start off your Valentine's
Day with a Strawberry Special. Enjoy!

Strawberry Special


1 1/2 cups sifted Pillsbury's Best Regular Flour *see note
1 cup sugar
1 cup Nestle's Strawberry Quick
1 teaspoon baking powder
1/2 teaspoon salt
6 eggs, separated
1/2 teaspoon cream of tarter
1/2 cup water
1 teaspoon vanilla extract
1 teaspoon almond extract

Oven 350 degrees ?  ?  ?  ?  ?  ?  ?  ?  ?  ?  10 - inch tube cake

Sift flour with 1/2 cup sugar, Quik, baking powder and salt
into small mixing bowl. Combine egg whites and cream of
tarter in large mixing bowl. Beat with mixer at high speed
until soft mounds form. Gradually add 1/2 cup sugar,
continue beating until very stiff, straight peaks form. DO
NOT UNDERBEAT.

Add egg yolks, water, vanilla and almond extracts to dry
ingredients. Beat 1 minute at medium speed.

Fold egg yolk mixture, 1/3 at a time, into beaten egg
whites, GENTLY but thoroughly, using a wire whip or rubber
spatula.

Pour into ungreased 10 - inch tube pan. Bake at 350 degrees
for 50 to 60 minutes. Invert immediately. Cool completely
before removing from pan.

Cut cake horizontally to make 3 layers. Fill and top layers
with Strawberry Fluff. Chill

**NOTE: For use with Pillsbury's Best Self-Rising Flour,
omit baking powder and salt.

Strawberry Fluff

Beat 1 1/2 cups heavy cream with 1/3 cup Nestle's
Strawberry Quik and 1/4 teaspoon almond extract until thick.

Optional: Decorate around the cake with fresh strawberries.
This is an excellent cake for Valentines Day or for a spring
or summer desert.
