Hello everyone.. TGIF already... I cant believe its Friday.. the week
has just went by so quickly..Have you got a lot planned for the
weekend.. I sure do. Gotta build a chicken coop for my chickens.. they
are getting so big even the baby ones are getting HUGE... work on
mowing,Gardening and all that good stuff. LOL hope you all have a great
and safe weekend. We are suppose to storm all weekend.. but hopefully
not cause I got to much I have to get done.

Enchilada Casserole
Serves 6 to 8.
1 pound ground beef
1 medium onion, chopped
1 can jalape?o peppers, chopped and seeded, (optional) OR use a milder
green chili like Hatch mild green chilies, drained
1 can cream of mushroom soup
1 can cream of chicken soup
1 can enchilada sauce
1 package flour tortillas
2 cups grated cheese
In a skillet, cook ground beef until brown and saut? onion until clear.
Drain and add peppers, soups and sauce to mixture. Heat. Spray a 9 x 12
inch pan with vegetable spray. Tear tortillas into pieces and cover
bottom of pan. Alternate layers of the meat mixture, grated cheese and
tortillas, ending with cheese. Bake for 1 hour at 350F.
Serve with sour cream, avocado slices, and extra tortillas.
