Editorial / The Appetizer

Well, it's Easter Monday (not any more it isn't) and it's a holiday
here in Jamaica, which is really lucky for me, since I had to be on the
job over this past weekend.?  I must apologize for the lateness.?  Due to
a mistake I made, the e-zine was sitting around not sent out,
? and is really late.
Please accept my humble apology.

In keeping with the season, this week we will explore the Easter
Bun, which is what is eaten most in Jamaica over Easter time.

If you are part of a traditional religion, you will know that
Lent (the 40 days leading up to Easter) is a time during which a
personal sacrifice is made whether you pray more, eat less or
give up something that is near and dear to your heart. This time
around, I gave up meat, other than chicken and fish. Don't worry,
I haven't had too much bun, since I have to watch my weight.

unearth this time around.

Jamaican Easter Time Traditions

It is funny how many Easter traditions exist on my sunny isle.
However, with economic concerns being foremost in most people's
minds, and with good reason, traditions have become lost. Few
people can remember traditions with any level of accuracy, but
never mind, we will only be exploring the tip of the iceberg here.

My husband tells me that in the past, no fires were lit to
prepare meals on Good Friday, this being the holiest day of the
year in the Christian calendar. My recollections are somewhat
different as I was used to not having hot meals prepared until
after 12 noon.

Nowadays, it is hard to find this practice being observed in
any home. Ironically, "bun and cheese" is supposed to be the
cold meal substitute when hot meals are not being prepared.

I am also told that Holy Thursday was the day when all the
bammies (flat, unleavened cakes made from cassava) and
breadfruit were baked and roasted, respectively and the fried
fish prepared. Fish is still consumed today in good quantities,
so too the bun and cheese.

Special Easter buns are sold by most bakeries. They come in
several sizes and are attractively packaged in boxes. I am proud
to say that the "Yummy" brand won a Gold Medal in 1984 at a Food
Festival in Madrid, Spain.

Eggs also play a role in our Easter traditions. They are still
broken today in glasses of water and whatever shape the egg
white takes, it supposedly affects the future of the person who
broke the egg. If the egg white takes the shape of a ship or
plane, travel is in the offing. If, God forbid, what looks like
a coffin appears, then bye bye birdie. If the egg is shaped like
a house...you get the idea...

There is a particular tree, I have yet to find out its name, when
cut on Good Friday at 12 noon, emits a blood like liquid. This happens
at no other time. This is kind of like the story of the Poinsettia.

Two sources tell me (and they swear it's true) about "broom weed".
This weed grows quite high and was used in yesteryear as a make shift
broom for sweeping country yards. Incidentally, I have some in my yard.
Don't ask. If this weed is pulled up at exactly 12:00 noon on
Good Friday, they swear this is true, live coals can be seen in
the earth. I have my doubts having not seen this myself. I am
pretty sure that there are many more unexplored traditions that
we cannot look into right now since we have to get an Easter Bun
baked in short order.

This Week's Specialty / The Main Course
? "Jamaican Easter Bun"

There are two methods by which buns can be made. The Yeasted
method and the Stout/Baking Powder method. We'll go with the
quicker route. You will need:-

1 1/4 cup Sugar (Granulated or Brown)
1/4 cup butter
1/4 cup honey
1/4 cup marmalade (optional)
2 tablespoons vanilla
1 tablespoon browning (optional if granulated sugar is used)
1 bottle Dragon Stout
2 large eggs
3 cups flour
3 teaspoons baking powder
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon mixed spice
1 cup mixed fruit (combine raisins, cherries and mixed peel)

1. Combine first seven items in a saucepan on low heat.
? ? ?  Allow to cool

2. Sift all dry ingredients together.

3. Beat eggs.

4. Combine all ingredients and mix well.

5. Pour into greased and lined loaf pan. Decorate with cherries.

6. Bake at 350 degrees Fahrenheit for approx. 1 hour.

7. Cool Bun and serve sliced, with Cheese....Delicious!

Tip of the Week /Hot Side Dish
Make a glaze for the bun by boiling 1 cup sugar combined
with 1 cup water, until thick. Brush bun with glaze as
soon as it is removed from the oven.
