Jamaican snack food.

Have you any idea how delicious Coconuts are?
Jamaicans use them in a wide variety of ways. We have them
as nature provided them, we have them cooked and we even
drink the water. Ever had Coconut Water with Red or
White Rum?
They are used a great deal in snack foods.
From "Totoes" to "Grater Cakes", where they form the total
snack with sugar and flavouring. Yummy! Jamaica's National
Dish is Ackee & Salt (Cod) Fish. You wouldn't know
it, however, since most of us have Rice & Peas, with
Chicken (or another meat) almost every Sunday. Coconut
features in this too. You wonder how, huh?
Well, some
of us cook our peas (kidney beans) in Coconut Milk and some
add the Milk once the peas are cooked. The one thing that
remains consistent is the Milk. And of course, there is no
need to take the long route these days (i.e. break the
Coconut shell, cut up Coconut and grate by hand or in
a blender as commercially produced Coconut Powder is
readily available in Supermarkets.
In the past
Jamaica produced Coconut for export, however, I am not sure
what amounts are produced today and indeed, if we are still
exporting this commodity.
A few years ago, Coconuts
suddenly got a bad rap because of their high fat
content. This, through Scientific Research. There has been
a turn around in recent times, however, and it is now
recognized that Coconuts are heart healthy and high
in potassium, which the body needs. Research done via the
internet lists beneficial properties including the fact
that the water is effective in the treatment of Kidney and
Urethral Stones and that it a good re-hydration medium for the
body.
The water is now sold commercially in Jamaica and
enjoys great popularity. Today, however, we will focus our
attention on the meat.

This Week's Specialty / The Main
Course "Grater Cake"
This is a traditional Jamaican snack and is quite
easy to make. You just have to get your mixture to the
right degree of stickiness before removing from the stove.
You will need:-
2 cups grated coconut (with all the
brown stuff removed) 3 cups granulated sugar (Brown sugar
can also be used, add Ginger though) 1/2 cup water White
Vanilla or Almond Flavouring (optional) A pinch of
salt
1. Combine all ingredients in an saucepan. Ensure
it's a thick one.
2. Boil until the Coconut is soft.
The liquid will be all gone by this time.
3. Ensure
that the mixture is sticky enough to hold together.
4.
Remove from heat and beat Mixture for 1-2 Minutes.
5.
Place on a greased sheet in heaps using a table
spoon. Make a small depression in the
middle of each cake.
6. Colour a small amount of
Coconut and place in small heaps atop the bigger
cake.
7. Alternately, you may place coconut in a square
dish and press with the back of a
spoon. Second batch will have to be made
in this instance and coloured.
Allow to cool and cut into sqares. |
