Editorial / The Appetizer

I hope that today was a good day for you.
Today was Labour day here in Jamaica and
as you can imagine everybody had some
project they worked on. We did some road
work in our area.

Being islanders, we regularly enjoy things from
the sea as part of our diet. This week, we'll be
preparing shrimp. Like fish, shrimp does not
take a long time to cook, so here goes!

"All You Need to Know About Shrimp"

You may be aware, based on an article previously covered
in this ezine, of the Indian influence in Jamaican food. Curry
is enjoyed by all cultural groups in Jamaica and is used not
only on meats, but also on vegetables. Meals containing
curry should be cooked with caution however, as it can
cause loose bowel if not properly prepared.

Shrimp is one of those dishes that can be prepared using
curry. Shrimp is a healthy alternative to meat proteins as it is
low in calories and saturated fats. It is also a good source
of Vitamin B12, Vitamin D, Selenium, Vitamin B3 (Niacin) and
Iron. This combination of Vitamins is shown to assist in the
stabilization of blood sugar.

A word of caution though, shrimp contains Purines and these
are natural substances produced by humans, animals and plants.
Excessive intake of these substances can cause health problems
for people who have problem with the build up of with Uric Acids
in their bodies . Purine can be broken down to form these acids,
and if there is an accumulation, this can result in Gout and Kidney
Stones.

Shrimp however, is the most popular sea food in America.
It is very expensive in Jamaica, much loved, but not consumed
as often as we would like. They come in a variety of colours
but once cooked they are cream coloured or pink. There are
over three hundred species of shrimp worldwide and quite a
variety is found among each species. The world's supply of
shrimp comes mainly from America, Japan, Central and
South America as well as Taiwan and Thailand. We, in
Jamaica, have our own home grown varieties.

As with fish, the smell of slightly off shrimp will be a dead
give-away. Ensure that they smell of the sea, or as close
as possible, have firm bodies still attached to the shells
and do not have black spots on the shells, indicative of
the onset of rot.

Thaw at room temperature in a bowl of cold water in
order to retain the nutrients. Once your shrimp has
thawed you are on your way!

This Week's Specialty / The Main Course
 "Shrimp Curry"

For this recipe, you will need:

2 lbs. shrimp (previously cleaned and deveined)
2 tablespoons butter and/or vegetable oil
1 teaspoons lemon juice
2 tablespoons curry powder
2 onions (sliced)
4 cloves garlic (minced)
1 small hot pepper / salt and black pepper (to taste)
2 stalks escallion
 

1.   Saute onions, garlic and escallion in oil. 

2.   Add curry, then shrimp, hot pepper, salt & pepper.

3.   Cook for no more than 5-7 minutes. (It is easy to overcook shrimp)

4.  Add lemon juice and butter and stir.

5.  Serve hot with a dish of your choice.

This dish will serve 4-6

Tip of the Week /Hot Side Dish

Shrimp can be cooked either shelled or unshelled,
depending how you will be using them in your recipe.
You may remove the shell by pinching off the 
head and the legs.  Holding the tail, the shell can the
be peeled from the body. If shelling frozen shrimp, do not
defrost them completely as they will be easier to
shell when they are still slightly frozen.
